Blueberry Feta & Mint Salad image

I've certainly been loving this Blueberry Feta and Mint salad, which combines sweet, salty and crunch.

4 cups mixed salad greens, washed
1 cup blueberries
1/3 cup feta cheese, cubed
3 Tbsp sunflower seeds, unsalted
2 Tbsp olive oil
1 Tbsp balsamic vinegar
Optional: Drizzle aged balsamic along top of salad

Steps:

  • 1. Clean salad greens and place into large bowl. 2. Add berries, cheese, and seeds on top of salad greens. 3. Drizzle greens and toppings with olive oil and balsamic vinegar. 4. Toss to combine.

  • Make the honey lime dressing: combine all honey lime dressing ingredients and mix vigorously until well combined. You can also add the ingredients to a mason jar and shake well to combine.
  • In a large serving bowl, combine cubed watermelon, blueberries, mint and basil to taste, and 3/4 cup crumbled feta. Toss with the honey lime dressing.
  • Top with the remaining 1/4 cup feta and garnish with more mint and basil leaves. Serve immediately. Enjoy!
