BRANDIED APPLE RINGS



Brandied Apple Rings image

This is a great way to preserve apples, with a sweet, subtle brandy flavor to it. They make an excellent pie filling! It should be enough to make three pies.

Number Of Ingredients 7

4 ½ pounds apples, cored and sliced into 1/4-inch thick rings
water to cover
1 tablespoon lemon juice
4 cups white sugar
3 cups water
1 cup brandy
3 1-pint canning jars with lids and rings

Steps:

  • Place apple rings in a bowl and pour in enough water to cover. Add lemon juice to water.
  • Bring sugar and 3 cups water to a boil in a large saucepan; cook and stir until sugar dissolves, about 5 minutes. Add apples to sugar-water mixture and return to a boil. Reduce heat to medium-low and simmer until apples are tender, about 30 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apple rings into hot, sterilized jars, filling to within 1/4 inch of the top. Keep syrup in the saucepan.
  • Bring the syrup back to a boil and add brandy; cook and stir until heated through, 2 to 3 minutes. Ladle the syrup over apple rings, filling the jars to within 1/4 inch of the top.
  • Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

This is a slight adaptation of a wonderful recipe from the chef Simon Rimmer. Baked apples are a lovely desert in the chilly weather, but the addition of exotic fruit and brandy lends them a bit of summer! Quantities are for 2 and prep time does not include soaking the fruit.

2 large cooking apples
3 ounces dried tropical fruit (mango, papaya etc)
1/4 cup brandy or 1/4 cup rum
1 ounce soft brown sugar
1/2 teaspoon allspice
3 1/2 ounces butter

Steps:

  • Soak the dried fruit in the brandy (or rum if you're using that) overnight.
  • Preheat oven to 300°F and core the cooking apples, leaving them whole and unpeeled.
  • Mix the sugar, butter and allspice in to the fruit and brandy mixture then stuff the cavity of the apples with it.
  • Put the apples in a dish, cover with foil and bake for 40 minutes, then remove the foil and bake for a further 10 minutes or until apples are soft.
  • Serve with heavy cream or ice cream.

Number Of Ingredients 7

4 cups sugar
2 cups water
4 pounds apples, sliced
1 liter brandy
3 whole cloves
1 cinnamon stick (3 inches)
Additional whole cloves and cinnamon sticks

Steps:

  • Combine sugar and water in a large saucepan. Bring to a boil; cook and stir until sugar is dissolved. Remove from the heat., Place apples in a large glass or plastic container; add the sugar mixture, brandy, cloves and cinnamon stick. Cover and let stand at room temperature for at least two weeks, stirring once a week., Strain brandy mixture; discard apples and spices. Pour into glass bottles. Place an additional three cloves and one cinnamon stick in each bottle.

BAKED APPLES IN BUTTER BRANDY SAUCE

6 large granny smith apples peeled & cored
2 1/4 c brown sugar
1 Tbsp ground cinnamon
1 1/2 tsp ground ginger
3/4 tsp ground cloves
3/4 tsp allspice
3/4 tsp ground nutmeg
6 Tbsp butter
1 1/2 c brandy

Steps:

  • 1. Preheat the oven to 400 degrees F
  • 2. Place apples in a shallow baking dish. Mix together all spices & brown sugar. Pack the mixture into the cores of the apples, piling left over mixture on top of apples. Place 1 Tbl. of butter on top of each apple. Pour the brandy into the dish, drizzling a little over the tops of the apples. Cover the dish with aluminum foil.
  • 3. Bake for 1 hour or until apples can be sliced with a spoon. Serve in a bowl with ice cream and some of the sauce spooned over it.

1/4 cup raisins or 1/4 cup other dried fruit
1/4 cup chopped walnuts
1 tablespoon brown sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 -2 tablespoon butter

Steps:

  • Preheat oven to 350.
  • Peel, core, and slice apples into 1/2-inch slices.
  • Toss apples in a bowl with raisins, walnuts, sugar, cinnamon, and nutmeg.
  • Pour into 9x9 inch glass pan and pour about 1/4 inch of water into the pan. Top with pats of butter.
  • Bake 20-30 minutes or until apples are tender.

3 tablespoons fresh lemon juice
6 tablespoons honey, 1 for each apples
6 tablespoons whiskey, 1 for each apples

Steps:

  • Core six apples and place in oven proof glass container. Try to find one that is slightly bigger than the apples. Mix together remaining stuff then spoon it down each apple hole. Cover with foil .Put in a pre-heated 350 degree oven and bake for 45 minutes to an hour , Make sure they are done .Put in a serving dish and if there are any juices pour over the apples that have been cut open and enjoy. It can be served with Ice cream or anything else you think looks good.
