BRATWURST WRAPS

Steps:
- Heat grill to medium heat.
- Heat oil in large skillet on medium heat. Add onions; cook and stir 5 min. or until golden brown, stirring frequently. Cover; simmer on medium-low heat 10 min., stirring occasionally.
- Meanwhile, grill the bratwursts 4 to 5 min. or until lightly browned and heated through, turning occasionally.
- Add A.1. to onions; mix well.
- Top tortillas with Singles pieces, bratwursts and onions; roll up.

Steps:
- Place bratwurst and beer in medium saucepan and bring to a boil.
- Reduce heat to low; cover and simmer 10 minutes.
- Remove from heat and let bratwurst cool in beer.
- Place bratwurst in center of grill and grill 5- 6 minutes or until browned.
- Split each in half lengthwise.
- Place sauerkraut down the center of each tortilla.
- Place 2 bratwurst halves on top of filling.
- Spread 1 tbsp mustard on bratwurst and top with a slice of cheese.
- Fold two sides of tortilla over cheese and remaining bottom and top halves of tortilla to close.
- Place tortilla wraps flap side down on grill.
- Grill 3- 4 minutes or until browned and heated through, turning once halfway through grilling time.

- Heat grill to medium heat. Cook and stir onlions in hot oil in large nonstick skillet on medium high heat for 5 minutes or until onions are golden brown; cover. Simmer on low heat 10 minute.
- Meanwhile, bring beer to boil in medium saucepan. Add bratwurst; cook 5 minute Drain bratwurst. Grill 4 to 5 minutes or until heated through and browned, turning occasionally.
- Stir steak sauce into onions. Top tortillas with cheese, onions, and bratwurst; roll up.
TORTILLA WRAPPED BRATWURST WITH MUSTARD SAUCE

- Combine the milk, onion, bay leaf, cloves and nutmeg in a heavy-gauge, non-corrosive saucepan over medium heat. In a separate pan create a roux by cooking the butter and flour for a few minutes, stirring continuously, without browning, until it emits a nutty aroma. Remove from the heat. When the milk is fairly hot, pour a small amount of it into the cooled down roux, stirring until the milk is thoroughly blended. Return this to the remaining milk, and simmer for 15 minutes, stirring frequently. Remove from heat and season, to taste, with salt and white pepper. Whisk in mustard and cover with a piece of plastic wrap to prevent a skin from forming.
- Heat the grill to medium heat. Prepare the tortillas by laying 1 or 2 slices of cheese on top of each and set aside briefly. Slowly cook the bratwurst over medium heat, turning as needed to prevent them from getting charred. (They tend to split when the heat is too high.) When they are browned and cooked through, which takes 10 to 15 minutes, transfer them to the cheese lined tortillas, and roll up the bratwursts so that the cheese will melt and hold everything together. Place the rolled bratwursts in a skillet over medium heat, allowing the tortillas to toast slightly. Serve with mustard sauce.

- Place the bratwurst and beer in a medium saucepan and bring to a boil. Reduce heat to low, cover and simmer for 25 minutes. Remove from the heat and allow the bratwurst to cool in the beer.TO MAKE THE SAUERKRAUT: In a large sauté pan over medium heat, cook the onion in the vegetable oil, stirring occasionally, until browned, 8 to 10 minutes. Add the sauerkraut, sugar, salt, and red pepper flakes and mix well. Cook for 5 minutes more to blend the flavors. Set aside.Remove the bratwurst from the beer and grill them over Direct Medium heat until browned, 6 to 8 minutes, turning once halfway through grilling time.TO ASSEMBLE THE WRAPS: Halve each bratwurst lengthwise. Place about a quarter of the sauerkraut down the center of each tortilla and lay two brat halves on top. Spread 1 tablespoon of the mustard on each bratwurst and add a slice of the cheese. Fold two sides of the tortilla over the cheese, then fold the top and bottom to close. - Poke bratwurst several times with a small fork, and place into a saucepan with the beer. Bring to a boil over high heat, then reduce heat to medium, and simmer for 15 minutes. Remove the bratwurst from the beer, and allow to cool to room temperature.
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and place a wire rack on top.
- Toss the brown sugar and cayenne pepper together in a large bowl and set aside. Cut each bratwurst into three pieces, wrap each piece with half strip of bacon, and secure with a toothpick. Toss the bratwurst with the cayenne mixture to coat, then place onto the prepared baking sheet.
- Bake in preheated oven until the bacon is brown and crisp, 25 to 35 minutes.

- In a large saute pan, sauté onions in oil over medium heat until softened and translucent, approx. 15-20 minutes; stir in the drained sauerkraut, sugar, salt, and red pepper flakes and combine. Cook the sauerkraut mixture until all the moisture has cooked out of the ingredients in the saute pan.
- Divide the warm prepared sauerkraut mixture into fourths, placing each fourth down the center of each flour tortilla. Place two grilled brat halves on top of sauerkraut; drizzle a bit of mustard over the brats, then top with shredded Swiss. Fold up brat wraps as best you can and dig in.
