This simple bake is lovely with a cuppa. Or have it for dessert instead, with custard or ice cream

500g white or wholemeal bread
500g/1lb 2oz mixed dried fruit
85g mixed peel
1½ tbsp mixed spice
600ml milk
2 large eggs, beaten
140g light muscovado sugar
zest 1 lemon (optional)
100g butter, melted
2 tbsp demerara sugar

Steps:

  • Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
  • Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
  • Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
  • Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
  • Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
  • Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

1 (18.25 ounce) package lemon cake mix
1 (3 ounce) package lemon flavored Jell-O® mix
1 teaspoon lemon extract
¾ cup apricot nectar
4 eggs
½ cup vegetable oil
¼ cup lemon juice
1 ½ cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan.
  • In a large bowl, combine cake mix, gelatin, lemon extract, apricot nectar, eggs and oil. Mix to combine, then beat on high speed for 3 minutes. Pour batter into a 10 inch tube pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean.
  • While cake is baking, make the glaze: In a small bowl, combine lemon juice and confectioners sugar; stir until smooth. Remove cake from oven, and with cake still in pan, pour glaze over top of hot cake, tipping pan to allow excess glaze to run down sides of pan. Allow cake to cool in pan 10 minutes. Remove from pan and cool completely on wire rack.

I used to teach in a cooking school, and this was one of the most popular recipes. We often made bread pudding to serve as the final touch to a meal. I've added a few variations over the years, and my family loves it.

1/2 cup raisins
1/2 cup hot water
4 large eggs, room temperature
2 cups whole milk
3/4 cup sugar, divided
1 teaspoon vanilla extract
8 slices French bread (1/2 inch thick)
butter, softened
1 teaspoon ground cinnamon
BUTTER SAUCE:
1/2 cup butter, cubed
1 cup sugar
1/2 cup plus 2 tablespoons heavy whipping cream

Steps:

  • Preheat oven to 350°. Place raisins in a small bowl; pour water over. Let stand for about 10 minutes to soften; drain. In a bowl, beat eggs. Add milk, 2/3 cup sugar, vanilla and raisins. Pour half into a greased 13-in. x 9-in. baking dish. Butter both sides of bread; arrange in a single layer over egg mixture. Cover with remaining egg mixture. Combine cinnamon with remaining sugar; sprinkle on top. Bake for 30 minutes or until a knife inserted in center comes out clean. , Meanwhile, for sauce, melt butter in a saucepan. Add sugar; cook and stir over medium heat for 10 minutes. Remove from the heat and gradually stir in cream. Return to the heat; cook and stir 8-10 minutes longer or until thickened and golden-colored. Serve warm over a slice of bread pudding.

4 cups cubed white sandwich bread
¼ cup raisins
⅛ teaspoon ground cinnamon, or to taste
⅛ teaspoon freshly ground nutmeg, or to taste
2 tablespoons melted butter
2 cups half-and-half
1 cup white sugar
4 each eggs
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Butter a 9-inch square baking dish.
  • Spread half of the bread in the bottom of the prepared baking dish. Top with raisins, cinnamon, nutmeg, and remaining bread. Sprinkle with more cinnamon and nutmeg and drizzle with melted butter.
  • Combine half-and-half, sugar, eggs, vanilla extract, and salt in a large bowl until well mixed and pour over bread. Press down on the bread with a fork to make sure it is saturated with the custard.

4 eggs
1/2 cup sugar
dash salt
1 quart half and half
1 1/2 teaspoons vanilla extract

Steps:

  • Butter bread slices with the crusts trimmed off. Place bread butter side down in a 2 1/2 -quart casserole or soufflé dish. Sprinkle the drained raisins over the bread. Beat together the eggs, sugar, salt, half and half, and vanilla. Pour over the bread and let stand for 30 minutes. Sprinkle with cinnamon or nutmeg. Cover with foil and bake at 350° for 30 minutes. Remove foil and bake another 35 minutes. Serve with cream or topped with ice cream.

A neighbor that my mom had a long time ago gave her this recipe, and she has been making it for Thanksgiving ever since! It is a little time consuming, which is why we only have it once a year, but it is just delicious! (Note, instead of chilling each part individually, I usually make the three parts the night before and chill them all in separate containers and then put them together the next day.)

1/2 cup margarine, melted
1 (20 ounce) package Oreo cookies
15 ounces cream cheese
1 1/4 cups powdered sugar
1 (16 ounce) container Cool Whip
2 cups milk
1 (3 3/4 ounce) package instant chocolate pudding mix
1 teaspoon vanilla

Steps:

  • Crush cookies. Mix together (reserving a few tablespoons to decorate the top) with melted margarine and press into the bottom of a 9x13 pan.
  • Mix cream cheese, 1 cup powdered sugar, and most of the Cool Whip until creamy. Spread over the oreo layer. Chill 2 hours.
  • Mix pudding mix and milk. Then spread over the cream cheese layer. Let chill 30 minutes.
  • Mix 1/4 cup powdered sugar, vanilla, and the rest of the cool whip together and put on top of the pudding layer. Sprinkle the top with remaining oreo crumbs. Keep chilled until serving.
