5 cups pitted canned tart red cherries
1/3 cup sugar
1/3 cup packed brown sugar
2 tablespoons plus 1-1/2 teaspoons cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons plus 1-1/2 teaspoons lemon juice
TOPPING:
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cold butter
1/3 to 1/2 cup milk

Steps:

  • Drain cherries, reserving 1-1/4 cups juice; set aside. Discard remaining juice. In a large saucepan, combine the sugars, cornstarch, cinnamon and nutmeg; stir in lemon juice and reserved cherry juice until smooth. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly., Add cherries; pour into an ungreased 9-in. square baking pan. For topping, combine the flour, sugar, baking powder and salt; cut in butter until crumbly. Stir in enough milk to moisten. Drop by tablespoonfuls over cherries. Bake at 450° for 10-13 minutes or until golden brown.

1 cup rolled oats
¾ cup blanched super-fine almond flour
¼ cup flax meal
½ cup sliced almonds
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
¼ teaspoon ground nutmeg
¼ cup unsalted butter, melted and cooled
¼ cup plain whole-milk Greek yogurt
¼ cup pure maple syrup
1 egg
1 teaspoon vanilla extract
¼ teaspoon almond extract
3 cups frozen tart cherries
⅓ cup pure maple syrup
1 ½ tablespoons lemon juice
1 tablespoon cornstarch

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x9-inch glass baking pan.
  • Mix oats, almond flour, flax meal, sliced almonds, cinnamon, baking soda, baking powder, salt, and nutmeg together in a large bowl until well combined.
  • Whisk melted butter, Greek yogurt, maple syrup, egg, vanilla, and almond extract in a small bowl or measuring cup until thoroughly combined and no lumps of yogurt remain. Add wet ingredients to dry, and stir until mixture is well combined. Set aside.
  • Place frozen cherries into the prepared baking pan. Add 1/3 cup maple syrup, lemon juice, and cornstarch. Toss to combine until there are no dry clumps of cornstarch remaining. Spread cherry mixture evenly into the pan.
  • Use a small measuring cup or ice cream scoop to place 9 even dollops of the oat mixture on top of the cherries.
  • Bake in the preheated oven until topping in browned and cherries are bubbling, 35 to 40 minutes. Tent the pan with aluminum foil if the topping begins to brown too quickly. Cool for 10 to 15 minutes before serving; the filling will thicken as it cools.

3/4 cup sugar
3/4 cup evaporated milk (from 12-oz can)
1 teaspoon almond extract
1/2 cup butter or margarine
1/2 cup sugar
1 can (21 oz) more fruit cherry pie filling
1 cup frozen dark sweet cherries, thawed
Whipped cream or vanilla ice cream, if desired

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish or shallow 2-quart casserole with cooking spray. In large bowl, stir topping ingredients until smooth; set aside.
  • In 2-quart saucepan, melt butter over medium heat. Stir in remaining fruit mixture ingredients. Cook about 2 minutes, stirring frequently, until mixture is hot. Spoon fruit mixture into dish. Pour topping evenly over fruit.
  • Bake 45 to 50 minutes or until golden brown and toothpick inserted in center comes out clean. Cool about 20 minutes before serving. Serve warm with whipped topping or ice cream.

3 3/4 cups all-purpose flour, plus more for rolling
4 teaspoons baking powder
1 1/2 teaspoons coarse salt
1 cup sugar
3/4 cup (1 1/2 sticks) very cold unsalted butter
2 cups cold heavy cream, plus more for brushing
3 pounds fresh cherries, pitted, or 2 1/4 pounds frozen cherries
4 teaspoons cornstarch
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 400 degrees. In a bowl, combine flour, baking powder, salt, and 1/2 cup sugar. Using large holes on a box grater, grate butter into flour mixture. With a fork, stir in cream until dough just comes together. On a floured work surface, roll out dough to a 3/4-inch thickness with a floured rolling pin. With a knife or biscuit cutter, cut out 8 to 12 rounds or squares of dough.
  • In a bowl, combine cherries, remaining 1/2 cup sugar, the cornstarch, and vanilla. Divide mixture among four 1- to 1 1/2-cup ramekins; top each with 2 to 3 dough pieces. Brush tops with cream. Bake cobblers on a rimmed baking sheet until biscuits are golden and juices are bubbling, 40 to 45 minutes, rotating sheet halfway through. Let cool 15 minutes. Serve warm or at room temperature.

I found this recipe in the Betty Crocker "Good and Easy" cookbook and it's become a family favorite. The almond and cherry combination is wonderful. It's such a fast recipe, using ingredients that are easily kept on hand. UPDATE 2/16/09: Thanks to several reviews pointing out that the recipe needs to be served a la mode, I am modifying the original recipe to the way I've been making it myself for years now. I've always had ice cream in step 8 as a serving option (have now added it to the ingredient list) & I've always used a full teaspoon of almond extract in the mix because we prefer the stronger flavor. 1 cup Bisquick baking mix
1 tablespoon sugar
1/4 cup milk

vanilla ice cream, optional for serving (or whipped cream)

Steps:

  • Mix pie filling & almond extract in ungreased 8x8x2" square baking dish.
  • Place in COLD oven.
  • Heat oven to 400 degrees.
  • Mix Bisquick, 1 Tbl sugar, milk & butter with fork until a soft dough forms.
  • Drop SIX spoonfuls onto warm filling. It's not meant to be a top crust, just 6 individual biscuits with filling showing inbetween.
  • Sprinkle with additional sugar.
  • Bake 18-20 minutes or until topping is lightly browned.
  • Serve with vanilla ice cream.

2 (20 ounce) cans cherry pie filling
1 (15 ounce) can pitted dark cherries in heavy syrup, drained
1/4 cup all-purpose flour, divided
1/2 teaspoon almond extract
5 slices white bread
1 1/4 cups sugar
1/2 cup butter or 1/2 cup margarine, melted
1 large egg
1 1/2 teaspoons grated fresh lemon rind

Steps:

  • Stir together pie filling, cherries, and 2 TBS flour.
  • Stir in almond extract.
  • Place in a lightly greased 8-inch square baking dish.
  • Trim crusts from bread slices; cut each slice into 5 strips.
  • Arrange bread strips over fruit mixture.
  • Stir together remaining 2 TBS flour, sugar, and next 3 ingredients; drizzle over bread strips.
  • Bake at 350 degree oven for 35-45 minutes or until golden and bubbly.
  • Serve warm with a dollop whipped cream or vanilla ice cream for an added treat!
  • VARIATIONS: Peach Cobbler: Substitute 2 (16-ounce_ packages) frozen peaches, thawed and drained, for cherry pie filling and canned cherries.
  • Omit almond extract and grated lemon rind.
  • Proceed as directed.
  • Berry Cobbler: Substitute 1 (21-ounce) can blueberry pie filling and 2 (10-ounce) packages frozen whole strawberries, unthawed, for cherry pie filling and canned cherries.
  • Omit almond extract; add 1 tsp vanilla extract and 1 tsp lemon juice.
  • Proceed as directed.

1/2 cup chopped walnuts or pecan
6 ounces cherry cider or apple cider
1/2 teaspoon vanilla extract

Steps:

  • In an 8 x 10 inch glass baking dish, sprayed with non stick, spread cherries on bottom (evenly). Sprinkle each dry ingredient evenly over cherries to form a topping. Combine cherry cider and vanilla together and pour evenly over top. Bake at 350 degrees for 20 to 30 minutes. Delicious.
