BREAKFAST MESS
This is one of the easiest and tastiest breakfasts to make. It's hearty, full of protein and very filling. Actually, I like this for supper, too. Your kids will even love it!

Steps:
- 1. Melt Olive Oil And Butter In large skillet and pan fry potatoes, stirring often to crisp on each side. Sprinkle a little salt & pepper on potatoes while cooking. When done remove from heat and transfer potatoes to a large bowl.
- 2. In a same skillet, on medium heat, cook sausage until brown. Remove sausage to paper towel lined bowl to drain. Pour off the grease from the skillet.
- 3. In same skillet melt the bacon grease, butter or margarine over medium heat and add the diced onions & peppers. Stir to coat and saute for about 5 minutes.
- 4. Add the sausage and potatoes to the onion and pepper mixture and stir well.
- 5. Add the beaten eggs and green onions then stir well. Continue to stir occasionally until the eggs are nearly cooked. Don't over stir or you'll break up the potatoes.
- 6. Add salt & pepper to taste and sprinkle cheese over the top. Turn heat off and cover skillet until cheese melts.
- 7. Give it one more quick stir and serve. Enjoy!
- 8. Options: If you prefer not to scramble the eggs into the casserole, then once everything is cooked, crack the eggs, one at a time on top of the casserole. Cover and cook over low until whites are cooked and yellow is still runny. Instead of bulk breakfast sausage, use 1 pound of bacon cooked crisp and coarsely chopped, use fried ham steak cut into chunks, or use all three! The more cheese, the better - I like sharp cheddar and colby jack mixed together.

- Melt the butter over medium heat in a large skillet. Add the onion and bell pepper; cook and stir until the onion is transparent, 5 to 7 minutes. Stir in the mushrooms and bacon, and cook 2 minutes more. Remove skillet from heat, and place the vegetable-bacon mixture in a bowl.
- Pour the eggs into the same skillet. Cook and stir gently just until the eggs are soft. Stir the vegetable-bacon mixture into the eggs. Season with salt and pepper. Cook the eggs until firm. Remove skillet from heat and stir in the tomato and cheese. If desired, stir in the ketchup.

These easy breakfast biscuit sandwiches for a crowd are so simple to throw together for a brunch or if you have visitors, and they're hearty and delicious!

Steps:
- Cook the biscuits according to the recipe or can directions (we love this biscuit recipe). While biscuits are cooking, generously coat a muffin tin with cooking spray.
- Break one egg into each cup. Lightly salt and pepper each egg. Top the egg with the crumbled, cooked sausage, and fill the cups evenly until you don't have anymore sausage.
- Remove the biscuits when they are done, adjust the oven temperature to 350 degrees F., and put the muffin tin filled with eggs and sausage in the oven. Bake for 10 to 15 minutes, until the egg is cooked through. Cook it a little less if you like a runny yoke and a little more if you like the yolk firm.
- When the eggs are cooked to your liking, remove them from the oven, and allow them to cool for 2 or 3 minutes.
- To make the sandwich, split the biscuit in half, remove the egg and sausage by running a butter knife around the edge, and then stack them together. Add cheese if you'd like.
- Easy! Feed a crowd without breaking a sweat.

- In a large skillet, fry potatoes in oil for 10 minutes. Add green pepper, onion and garlic; continue to cook for 25 minutes or until potatoes are browned and vegetables are tender. Stir in luncheon meat; heat through. Cover and remove from the heat. In another greased skillet, combine eggs. salt and pepper. Cook and stir gently until eggs are set. Stir into potato mixture. Top with cheese; cover for 3-5 minutes or until cheese is melted.

- In a large frying pan cook sausage until brown.
- Drain fat; add the onion, pepper strips, potatoes and seasoning salt.
- Cook approximately 10 minutes, or until vegetables are tender.
- While vegetables are cooking, preheat broiler.
- Add eggs and cook until set.
- Sprinkle cheese on top and put under broiler until cheese is melted and slightly browned.
