Categories     Brunch, Dinner, Lunch, Supper

Time 30m

Yield Serves 2, plus 2 lunchboxes

Number Of Ingredients 11

100g new potatoes
200g long-stem broccoli
200g green beans , trimmed and halved
400g can mixed beans , drained
3 tsp rapeseed oil
2 garlic cloves , crushed
pinch of chilli flakes , cumin seeds or fennel seeds
4 large eggs
50g ricotta
1 tsp sherry vinegar
½ small bunch of basil , roughly chopped (optional)

Steps:

  • Boil the potatoes for 10-15 mins until tender. Add the broccoli for the last 2 mins of cooking. Drain and thickly slice the potatoes.
  • Meanwhile, put the green beans and mixed beans in a pan and cover with water. Bring to a simmer and cook for 3-4 mins, or until the green beans are tender. Drain and leave to steam-dry in the pan.
  • Heat the grill to high. Heat 2 tsp of the oil in a medium non-stick frying pan and fry the garlic for 1 min, then add the chilli flakes or cumin or fennel seeds and cook for 1 min more. Add the potatoes, broccoli and seasoning, and toss to coat in the flavoured oil.
  • Beat the eggs in a jug, season and pour over the potato mix. Cook over a medium heat for 2 mins, or until the base is set. Dollop teaspoons of the ricotta on top, then grill for 4-5 mins until cooked through.
  • Meanwhile, drizzle another 1 tsp oil over the bean mixture with the vinegar. Stir in the basil, if using, and season. Slice the frittata into four wedges, and serve two with half the bean salad on the side. Chill the remaining wedges and bean salad to use in the lunchboxes below.

BROCCOLINI AND POTATO FRITTATA

Broccolini and Potato Frittata image

This broccolini and potato frittata is a clever and healthy way to clean out your fridge and make it taste delicious too.

Provided by Ryland Peters & Small

Categories     Lunch

Time 35m

Number Of Ingredients 8

8 small waxy potatoes (scrubbed and quartered)
1 cup vegetable broth
1/4 cup light olive oil
8 ounces broccolini (trimmed and halved lengthwise or chopped into 1-inch (25 mm) pieces)
1 small red or yellow onion (thinly sliced)
8 large eggs
1 cup grated Parmesan cheese
Salt and freshly ground black pepper (to taste)

Steps:

  • Place the potatoes in a large ovenproof frying pan, preferably a 12-inch skillet. Add the broth, bring to a boil, and cook for 10 minutes, turning the potatoes often, until almost all the stock has been absorbed and the potatoes are tender.
  • Add the olive oil, broccolini, and onion to the pan and cook for 1 minute, turning the vegetables to coat them in the oil. Cover, reduce the heat ever so slightly, and cook for 2 to 3 minutes, just until the broccolini is softened.
  • Meanwhile, preheat the broiler and beat the eggs with half the cheese and pour it over the vegetables in the pan. Cover and cook over medium-ish heat for 8 to 10 minutes, until the eggs are almost set.
  • Sprinkle the remaining cheese over the frittata then slide it under the broiler just until the top is golden and the eggs are set throughout, 5 to 6 minutes. Let cool slightly before slicing into wedges or squares.

BAKED BROCCOLI FRITTATA

Baked Broccoli Frittata image

This was my introduction to the concept of the frittata, from a Light Cuisine cookbook of my mother's. I have used every combination from the 6 eggs and 2 egg whites, to 4 eggs and a cup of egg substitute, to 2 cups of egg substitute, all with success (though it's a bit tastier with a real egg or two included).

Provided by OneEye

Categories     Breakfast

Time 45m

Yield 1 frittata, 6 serving(s)

Number Of Ingredients 12

1 tablespoon olive oil
1 tablespoon butter
1 medium onion, chopped
1 garlic clove, minced
1/4 cup chopped parsley
2 cups finely chopped broccoli
1/2 teaspoon dry basil
1/4 cup grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper
6 eggs
2 egg whites

Steps:

  • Heat oil and butter in a wide non-stick frying pan over medium heat. Add onion and cook, stirring often, until onion begins to soften (about 3 minutes).
  • Stir in garlic, parsley, broccoli, and basil. Continue cooking, stirring often, until broccoli is bright green (about 3 minutes).
  • Remove from heat and stir in salt, pepper, and 2 tablespoons of the cheese.
  • In a large bowl, beat eggs and egg whites until well blended. Stir in broccoli mixture.
  • Spray a shallow 2 quart baking dish with cooking spray. Pour the broccoli mixture into the dish. Sprinkle evenly with the remaining Parmesan cheese.
  • Bake, uncovered, in a 350 degree oven until frittata is firm in center when touched (25 to 30 minutes).

BROCCOLI-CHEDDAR FRITTATA

Broccoli-Cheddar Frittata image

A frittata is an excellent way to sneak veggies into your family's diet, and in this recipe, the veggie is broccoli. Also, thawed, diced hash brown potatoes speed up the cook time and the prep time, too. If you want more color on top of the frittata, shorten the baking time by a couple of minutes, and use the broiler to achieve the color you want. For breakfast or brunch, fresh fruit or baby tomatoes make a great side.

Time 40m

Yield 8

Number Of Ingredients 10

7 large eggs
¼ cup heavy cream
1 teaspoon smoked paprika
salt and freshly ground black pepper to taste
2 tablespoons unsalted butter
½ cup chopped onion
1 ½ cups chopped fresh broccoli
1 cup frozen diced hash brown potatoes, thawed
1 cup shredded Cheddar cheese
4 slices bacon, cooked and crumbled

Steps:

  • Position a rack in the center of the oven and preheat the oven to 400 degrees F (200 degrees C).
  • Whisk eggs, cream, smoked paprika, salt, and pepper together in a bowl. Set aside.
  • Melt butter in a 12-inch nonstick, oven-proof skillet over medium-high heat until bubbly. Add chopped onion and cook until softened, 1 to 2 minutes. Add chopped broccoli and cook, stirring occasionally, about 2 minutes. Add potatoes and cook, stirring occasionally, about 2 minutes. Lightly season vegetables with additional salt and pepper.
  • Gently pat the vegetables into an even layer with the back of a spatula or spoon and turn off the heat. Sprinkle cheese over the vegetables, followed by bacon.
  • Pour the egg mixture into the skillet and gently shake to eliminate any holes around the vegetables. Let the residual heat cook the eggs slightly, about 2 minutes.
  • Bake in the preheated oven for 8 to 10 minutes. Check for doneness by using a knife to cut the center slightly. Eggs should not be runny enough to fill the cut. Allow to cool in the skillet for 5 minutes before serving.

TOMATO BROCCOLI FRITTATA

Tomato Broccoli Frittata image

This simple frittata recipe combines tomatoes, broccoli and feta cheese. If you're not a fan of feta, you can easily replace the feta with Fontina, Parmesan or goat cheese.

Provided by EatingWell Test Kitchen

Categories     Healthy Frittata Recipes

Time 30m

Number Of Ingredients 9

6 egg whites
3 eggs
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ cup crumbled reduced-fat feta cheese or regular feta cheese
2 cups small broccoli florets
2 tablespoons finely chopped shallots
1 teaspoon olive oil
1 ¼ cups cherry tomatoes, quartered

Steps:

  • Preheat broiler. In a medium bowl, whisk together egg whites, eggs, salt, and pepper. Stir in cheese; set aside.
  • In a large broiler-proof skillet, cook broccoli and shallots in hot oil over medium heat for 8 to 10 minutes or just until tender, stirring occasionally. Pour egg mixture over the broccoli mixture in skillet. Cook over medium-low heat. As mixture sets, run a spatula around the edge of the skillet, lifting egg mixture so uncooked portion flows underneath. Continue cooking and lifting edges until egg mixture is almost set (surface will be moist). Arrange tomatoes on top of egg mixture.
  • Broil 4 to 5 inches from the heat about 5 minutes or until center is set. Let stand for 5 minutes before serving. Cut into four wedges.

POTATO, SAUSAGE AND BROCCOLI FRITTATA

Potato, Sausage and Broccoli Frittata image

Provided by Molly Yeh

Time 1h15m

Yield 8 to 10 servings

Number Of Ingredients 11

Nonstick cooking spray, for the pan
Olive oil, as needed
1 pound loose breakfast sausage
1 Spanish onion, finely diced
1 large russet potato, diced
1 head broccoli, stem removed, cut into small florets
Kosher salt and freshly ground black pepper
3/4 cup whole milk
1/2 cup heavy cream
10 large eggs
1/2 bunch fresh dill, roughly chopped

Steps:

  • Preheat the oven to 400 degrees F. Grease a 9-by-13-inch casserole pan with cooking spray.
  • Set a medium pan over medium heat and add 1 tablespoon olive oil. Add the sausage and cook, breaking it up with the back of a wooden spoon or spatula, until cooked through and beginning to brown, about 5 minutes. Remove to a bowl and set aside. Add the onion to the pan and saute until translucent and the browned bits of sausage in the pan have been picked up by the onion, about 5 minutes -- this will add lots of flavor! Once the onions are cooked, add the potatoes. Cook until they are tender and just beginning to brown, about 7 minutes. If necessary, add more olive oil so the potatoes don't burn or stick to the bottom of the pan. Remove the potatoes and onions to the bowl of sausage. Coat the pan with a bit of olive oil and add the broccoli. Saute until just tender, about 5 minutes. Season with salt and pepper. Transfer to the sausage bowl.
  • Add the milk, cream, eggs and some salt and pepper to a separate medium bowl and whisk to combine.
  • Transfer the sausage and vegetable mixture to the prepared casserole pan. Toss and distribute evenly on the bottom of the pan. Gently pour the egg mixture over the top. Bake until the frittata is puffed and beginning to brown and the egg is set in the middle, about 30 minutes. Allow to set for 5 minutes before slicing. Garnish with the dill and serve. The frittata is delicious hot out of the oven, room temperature or even cold!

  • In a medium sauce pan, add the potatoes and cover with water. Bring to a boil, add 1 teaspoon of kosher salt and cook until the potatoes are fork tender, about 6-8 minutes. Drain the water and set the potatoes aside.
  • While the potatoes are cooking, add the bacon to a large skillet over medium-high heat and cook until the bacon is crisped, stirring often, about 6-8 minutes. Use a slotted spoon to transfer the cooked bacon to a plate lined with a paper towel, leaving the bacon renderings in the pan. Add the chopped broccoli and the onion to the bacon renderings and cook over medium heat until softened, 3-4 minutes, then add the potatoes and bacon to the skillet, stir, and cook for 2-3 more minutes.
  • Whisk the eggs and milk in a 4-cup measuring cup, and season with kosher salt and freshly ground black pepper. Top the potatoes and broccoli mixture with the shredded cheese and then pour the egg mixture evenly over the cheese. Place the skillet in the oven and cook for 5 minutes or until the egg is puffy and completely set. Slice and serve warm or at room temperature.

  • Preheat the oven to 425 °F. In a large bowl, whisk together the eggs, milk, garlic, ¼ teaspoon of the salt and about 5 twists of freshly ground black pepper until well blended. Then whisk in about half of the cheese, reserving the other half for later.
  • In a 10-inch, well-seasoned cast iron skillet or oven-safe sauté pan, warm the olive oil over medium heat until shimmering. Add the onion and the remaining ¼ teaspoon salt. Cook, stirring frequently, until the onion is tender and translucent, about 3 to 5 minutes.
  • Add the broccoli and water to the pan, then cover it with a lid (or a baking sheet) and steam the mixture until the broccoli is brighter green and easily pierced by a fork, about 2 to 3 minutes. Uncover, and add the spinach and green onions. Cook, stirring constantly, until the spinach has wilted, about 30 to 60 seconds.
  • Arrange the mixture in an even layer across the skillet. Whisk the egg mixture one last time and pour it into the pan. Sprinkle the frittata with the remaining cheese. Put the pan in the oven and bake until you can shimmy the pan by the handle (careful, it’s hot!) and see that the middle is just barely set, about 12 to 15 minutes.
