3 cups dried penne or 3 cups fusilli (about 1/2 package)
1 broccoli
4 sun-dried tomatoes packed in oil (optional)
2 cloves garlic
2 cups grated cheddar cheese
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Bring a large saucepan of water to a boil.
  • Add pasta and cook according to package directions, about 8 minutes.
  • Meanwhile, cut stems from broccoli.
  • Peel, then slice into thin rounds.
  • Slice sun-dried tomatoes into thin strips.
  • Mince garlic.
  • Place cheese in a large bowl.
  • Stir in sun-dried tomatoes and garlic.
  • When pasta has cooked 8 minutes, add broccoli stems and florets.
  • Cook until bright green and tender, about 2 minutes.
  • Ladle out about 1/2 cup pasta water and save.
  • Drain pasta and broccoli, then return to saucepan.
  • Place saucepan over medium-high heat.
  • Stir cheese mixture and pasta water until cheese melts and noodles are evenly coated, about 1 minute.
  • Taste, then add salt and pepper if you like.

1 cup cheese tortellini (tricolor or plain, the dried kind)
3 cups broccoli florets
8 ounces Polish sausage, halved lengthwise and thinly bias-sliced (make sure it's the fully-cooked kind)
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon all-purpose flour
1 teaspoon caraway seed
1 cup milk
1 cup processed swiss cheese, shredded (4 ounces)
1 tablespoon coarse grain mustard

Steps:

  • In a Dutch oven or large saucepan, cook tortellini in a large amount of boiling salted water for 5 minutes less than the time given on the package, stirring occasionally.
  • Add broccoli and sausage. Return to boiling and cook about 5 minutes more or until pasta is tender but slightly firm and broccoli is crisp-tender, stirring occasionally. Drain; keep warm.
  • Meanwhile, in a medium saucepan, melt butter. Stir in flour and caraway seeds. Add milk all at once.
  • Cook and stir until thickened and bubbly. Add cheese and mustard, stirring until cheese melts. Pour over tortellini mixture; toss to coat.

300ml milk
1 tbsp wholegrain mustard
140g mature cheddar, grated

Steps:

  • Cook the pasta, adding the broccoli for the final 4-5 mins and cooking until tender. Drain well, then heat the grill.
  • Heat the butter in a saucepan and stir in the flour. Cook for 1 min, then gradually add the milk, stirring well between each addition. Bring to the boil, stirring, then simmer for 2 mins, before stirring in the mustard, half the cheese and seasoning.
