CREAMY BROCCOLI-AND-SPINACH SOUP



Creamy Broccoli-and-Spinach Soup image

Thanks to mild-mannered baby spinach and silky sautéed leeks, this weeknight-friendly broccoli soup not only gets an extra boost of nutrients like iron and vitamins B and C-it also takes on a most vibrant color of green and boasts a velvety texture without any heavy cream in sight! A drizzle of tangy crème fraîche and a few crunchy pretzel nuggets serve as the finishing touches to this wholesome and warming bowl.

Number Of Ingredients 11

3 tablespoons unsalted butter
2 leeks (about 1 pound), white and light-green parts only, halved lengthwise and thinly sliced crosswise, well washed, and drained (2 cups)
3 cloves garlic, smashed and peeled
2 teaspoons Dijon mustard
3 tablespoons unbleached all-purpose flour
4 cups low-sodium chicken or vegetable broth
1 small head broccoli (about 12 ounces), stems peeled and cut into 1/4-inch coins, head cut into bite-size florets
Kosher salt and freshly ground pepper
5 ounces baby spinach, stems removed (6 packed cups)
1/3 cup crème fraîche
Store bought pretzel nuggets, for serving (optional)

Steps:

  • Melt butter in a medium saucepan over medium-high heat. Add leeks and garlic and cook, stirring occasionally, until translucent, about 2 minutes. Stir in mustard, then flour; cook until mixture has a slightly nutty aroma, about 1 minute.
  • Gradually whisk in broth until combined. Add broccoli stems and season with salt and pepper; increase heat to high and bring to a boil, whisking constantly. Add broccoli florets; reduce heat to low and simmer partially covered until broccoli is tender, about 8 minutes. Stir in spinach and cook 1 minute more; remove from heat.
  • Working in batches, purée soup in a blender. Return to pot and reheat over medium-low. Whisk crème fraîche with 1 tablespoon water in a small bowl. Serve soup, drizzled with crème-fraîche mixture and garnished with pretzels.

2 TBPS extra virgin olive oil
2 stalks celery (chopped)
1 shallot (chopped )
2 cloves garlic (chopped)
1/4 teaspoon dry ground mustard
1/2 flat leaf parsely (I used Gourmet Garden lightly dried - can find in the produce section)
1/2 basil (I used Gourmet Garden lightly dried - can find in the produce section)
1 bay leaf
1 package fresh broccoli florets
1 packed cup spinach leaves
1/2 cups 2% milk
2 TBSP light sour cream
1 TBSP lemon juice
2 TBSP Parmesan cheese
3 cups organic vegetable broth
salt and pepper
2 slices Multigrain bread (cu into cubes)
1 & 1/2 TBSP extra virgin olive oil (more if you need it )
1 TBSP Parmesan cheese (more if need I just eye ball it )
salt and pepper

Steps:

  • In a pan add in the olive oil and the chopped shallot, celery and a pinch of salt and cook for about 7 minutes and then add in the garlic and cook another minute.
  • Next, add in the broccoli and dry mustard and some more salt and pepper and stir to combine.
  • Next, add in the bay leaf, parsley and basil and the vegetable broth and stir again to combine and simmer for about 15 minutes.
  • Then add in the milk, sour cream and spinach leaves with a pinch more salt and pepper and cook about 3 minutes. Also, remove the bay leaf and discard.
  • Last, transfer the soup to a blender and add the lemon juice and parmesan cheese and blend until smooth and enjoy!
  • For the croutons - simply cut multigrain bread into cubes and place on a baking sheet with olive oil, salt, pepper and toss to combine. Then sprinkle the parmesan cheese on top and bake at 350 for about 10 minutes until golden brown.

Pureed Potato and Broccoli Soup With Parmesan Croutons image

The broccoli is added to this classic potato soup towards the end of the cooking time, so that it maintains its bright color and sweet flavor. The soup will have a silkier texture if you take the time to strain it after pureeing.

Number Of Ingredients 12

2 tablespoons extra virgin olive oil
1 large onion, chopped
2 leeks, white and light green parts only, sliced and cleaned (optional)
3 garlic cloves, chopped, plus 1 small clove, cut in half
Salt, preferably kosher salt, to taste
2 pounds starchy potatoes (russets or Yukon golds), peeled and cut in large dice
A bouquet garni made with a bay leaf and 2 sprigs each parsley and thyme
2 quarts water, chicken stock, or vegetable stock
1 pound broccoli crowns, coarsely chopped
Freshly ground pepper to taste
12 thin slices baguette or country bread
1/4 cup freshly grated Parmesan

Steps:

  • Heat the olive oil in a large, heavy soup pot over medium heat and add the onion and optional leeks. Cook, stirring, until tender, about 5 minutes. Add 1/2 teaspoon salt and the chopped garlic and cook, stirring, for another minute, until fragrant. Add the potatoes, bouquet garni, water, and salt to taste. Bring to a boil, reduce the heat, cover and simmer 30 minutes. Add the broccoli, turn the heat up slightly to bring back to a boil, then reduce the heat again and simmer, uncovered, for 10 minutes, until the broccoli is thoroughly tender but still bright. Remove the bouquet garni.
  • Blend the soup either with a hand blender, in batches in a blender (cover the top with a towel and hold it down to avoid hot splashes), or through a food mill fitted with the fine blade. For a silky texture, strain through a medium strainer set over a bowl, using a pestle or the bottom of a ladle to push the soup through. Return to the pot, taste and adjust salt, add a generous amount of freshly ground pepper, and heat through.
  • Lightly toast the bread and rub with a cut clove of garlic. Top each slice with a spoonful of Parmesan and heat through in a toaster oven or under a broiler, being careful to watch closely, until the cheese melts. Serve the soup, topping each bowl with 2 croutons.

Cook over moderate heat, stirring occasionally, until softened and just starting to brown, 6 to 8 minutes. Add 2 cups of water and the stock, potato, broccoli stems and two-thirds of the florets. Bring to a boil over high heat, then simmer over moderate heat, stirring occasionally, until the potato and broccoli are very soft, about 30 minutes. Stir in the spinach until wilted.
  • Meanwhile, on one side of a large rimmed baking sheet, toss the remaining broccoli florets with 1 tablespoon of the oil and season with salt and pepper. In a medium bowl, toss the bread with the remaining 1 tablespoon of oil and season with salt and pepper. Bake the broccoli florets for 10 minutes. Spread the bread on the other half of the baking sheet and bake for about 10 minutes, until the florets and croutons are browned and crisp.
  • Working in batches, puree the soup in a blender until very smooth, 1 to 2 minutes. Stir in the vinegar and season with salt and pepper. Ladle the soup into bowls and top with the crispy broccoli and croutons. Garnish with snipped chives and serve.
