GRANDMA'S TAFFY

A quick and easy recipe for any flavor of taffy you can think of!

2 cups sugar
2 tablespoons cornstarch
4 tablespoons butter
1 teaspoon salt
½ cup corn syrup
1 ½ cups water
2 teaspoons vanilla extract
1 tablespoon orange, or other flavored extract
8 drops any color food coloring

Steps:

  • In a large saucepan, stir together the sugar and cornstarch. Add the butter, salt, corn syrup and water; mix well. Bring to a boil over medium heat, stirring to mix in butter. Heat to 275 degrees F (134 degrees C), or until a small amount of syrup dropped from a spoon forms hard but pliable threads.
  • Remove from heat, and stir in the vanilla, flavored extract and food coloring. Pour into a greased 8x8 inch baking dish. When cooled enough to handle, remove candy from the pan, and pull until it loses its shine and becomes stiff. Pull into ropes, and use scissors to cut into 1 inch pieces. Wrap each piece in waxed paper.

Here's what you need: sugar, cornstarch, unsalted butter, light corn syrup, salt, water, vanilla extract, flavored extract, food coloring

1 cup sugar
1 tablespoon cornstarch
1 tablespoon unsalted butter
⅔ cup light corn syrup
1 teaspoon salt
½ cup water
1 teaspoon vanilla extract
½ teaspoon flavored extract, of your choice
2 drops food coloring, coloring of your choice

Steps:

  • Add the sugar to a large pot fitted with a candy thermometer. Sift in the cornstarch and whisk into the sugar until well-combined. Add the butter, corn syrup, salt, water, vanilla, and flavor extract of choice to the pot. Whisk to combine, then turn the heat to medium and cook until the mixture reaches 250°F (120°C).
  • Add the food coloring and stir to combine.
  • Pour the candy into a greased heatproof dish and cool until you are able to handle it, 5-10 minutes.
  • Stretch the mixture out 12 inches (30 cm) (or further) and fold it over itself again and again for 10-15 minutes. The taffy will turn from translucent to opaque.
  • When the taffy becomes harder to pull, roll it to about a 30-inch (76-cm) long and 1-inch (2-cm) thick log on a greased surface. Cut the log in half. Then slice the taffy into bite-size chunks.
  • Wrap each piece of taffy in a square of parchment paper and twist the ends to seal.
  • Enjoy!

2 1/4 cups firmly packed brown sugar
1 1/2 cups light corn syrup
4 teaspoons white vinegar
1/4 teaspoon salt
1/2 cup evaporated milk

Steps:

  • Combine brown sugar, syrup, vinegar and salt in a large, heavy saucepan over low heat. Stir until the sugar dissolves, cover with a lid briefly to get any sugar crystals off the sides of the pan. Bring to a boil, stirring constantly.
  • Add milk in a thin stream, stirring constantly. Cook to firm ball stage (248°F / 120°C), or until a small amount of mixture is dropped into cold water and forms a ball that holds until pressed. Remove from heat.
  • Pour mixture onto a buttered marble slab or similar surface. As soon as outside edges cool enough to touch, take a small portion of the candy and start stretching or pulling. Use only the tips of your (greased) fingers. Pull until taffy becomes light in color and is no longer sticky.
  • Twist each pulled strip slightly and place on waxed paper. When all the candy is pulled, cut each piece into about 1-inch pieces. Wrap each piece in waxed paper and twist ends. Store in covered container at room temperature.
  • Makes about 100 pieces.

2 cups sugar
2/3 cup Dutch process cocoa powder
1/2 teaspoon salt
1 cup light corn syrup
1/4 cup plus 1 tablespoon water
1 teaspoon white vinegar
1 1/2 tablespoons butter, plus additional for greasing pan and hands

Steps:

  • In heavy medium saucepan, combine sugar, cocoa powder, and salt. Stir until thoroughly combined. Add corn syrup, water, and vinegar to pan and place over medium heat. Stir until sugar and cocoa dissolve, raise heat to high and bring to a boil. Turn heat down to low, clip candy thermometer to side of pan and cook until mixture reaches 260 degrees F. Remove pan from heat, add the butter and stir. Butter edges of sheet pan, line with silicone baking sheet and pour on taffy. Allow to cool until you are able to handle it.
  • Once you are able to handle the taffy, don vinyl gloves, butter them, and begin to fold taffy in thirds using the silicone mat. Pick up taffy and begin to pull folding the taffy back on itself repeatedly twisting as you go. Taffy is done when it lightens in color, takes on a sheen, and becomes too hard to pull. Roll into log, cut into fourths, roll each fourth into a 1-inch wide log, and cut into 1-inch pieces. Making sure to keep pieces separated or they will stick to each other. Wrap individual pieces of candy in waxed paper. Store in airtight container 3 to 5 days.

5 teaspoons butter, softened, divided
1/4 cup water
1-1/4 cups packed brown sugar
2 tablespoons cider vinegar
1/4 teaspoon salt
1/3 cup molasses

Steps:

  • Butter a 15x10x1-in. pan with 3 teaspoons butter; set aside. In a heavy saucepan, combine the water, brown sugar, vinegar and salt. Bring to a boil over medium heat. Cook and stir until a candy thermometer reads 245° (firm-ball stage), stirring occasionally. Add molasses and remaining butter. Cook, uncovered until a candy thermometer reads 260° (hard-ball stage), stirring occasionally. Remove from the heat; pour into prepared pan. Cool for 5 minutes or until cool enough to handle., With buttered fingers, quickly pull half of the candy until firm but pliable. Pull and shape into a 1/2-in. rope. Cut into 1-1/4-in. pieces. Repeat with remaining taffy. Wrap pieces individually in foil or waxed paper; twist ends. Store in airtight containers in the refrigerator. Remove from the refrigerator 30 minutes before serving.

2 ½ cups white sugar
3 tablespoons cornstarch
1 cup corn syrup
1 ⅓ cups water
2 tablespoons butter
½ teaspoon salt
1 (0.13 ounce) package unsweetened, fruit-flavored soft drink mix

Steps:

  • Butter 2 large baking sheets, and set them aside.
  • In a medium saucepan, stir together the sugar and cornstarch. Add corn syrup, water, butter and salt, and stir to blend. Bring to a boil over medium heat, and cook until the mixture reads 250 degrees F (120 degrees C) on a candy thermometer. Remove from heat, and immediately stir in the drink mix powder. Quickly pour out onto the prepared baking sheets, and let stand until cool enough to handle.
  • Grab a few helpers, and butter everyone's hands. Stretch (pull) the taffy until it lightens in color, and becomes firm. Roll into bite size pieces, and wrap in small squares of waxed paper.

2 cups white sugar
½ cup vinegar
2 tablespoons butter
⅛ teaspoon cream of tartar
1 pinch salt

Steps:

  • Butter a baking dish and set aside.
  • In a large saucepan over medium heat, combine sugar, vinegar, butter, cream of tartar, and salt. Heat, stirring occasionally, until sugar is melted. Do not stir once mixture comes to a boil.
  • Cook candy until mixture reaches 250 to 265 degrees F (121 to 129 degrees C) on a candy thermometer, or until a small amount of syrup dropped into cold water forms a rigid ball. Remove from heat and pour into prepared dish.
  • Pull taffy by stretching out into a rope with buttered hands, folding the candy over and repeating, until taffy is white and porous and becomes too stiff to pull. Cut into 1-inch pieces with buttered kitchen shears. Wrap taffy pieces in waxed paper and store in an airtight container.

THE PERFECT LOW-SUGAR KOOL-AID SALT WATER TAFFY

I've worked at it and worked at it and 5 batches later, I think I've got it. It's the perfect salt water taffy flavored with kool-aid. It takes alot of work to get it to the right consistency so don't give up! And if it seems to hard when it cools down, as long as it's still pliable, it will work. If it cracks into pieces, you cooked it too long. Even 5 degrees can ruin the batch so keep an eye on it. Try again, or tell people you were going for painted glass candy all along. Also, most taffy recipes will tell you that you don't need to keep stirring after the mixture starts boiling. I ruined 3 batches before I found out it's safer just to keep stirring. Even a little bit of burnt taffy in the mix ruins the batch, and if you don't stir, it will burn to the bottom of the pan. **SIDE NOTE** I sited strawberry kool-aid in my recipe, but you can use any kind as long as it's unsweetened.

1 cup light corn syrup
1 cup water

  • Butter the sides of a large, heavy-bottomed saucepan or spray down with Pam.
  • Add to the pan the first four ingredients.
  • Cook over medium heat, stirring constantly.
  • Cook to 245 degrees (firm ball stage) while constantly stirring.
  • Remove from heat and continue to stir until mixture stops boiling.
  • Add margarine and koolaid mixture.
  • Return to heat and continue to stir until mixture reaches 245 degrees again.
  • Remove from heat but continue to stir until mixture stops boiling.
  • Pour mixture into a greased 15 x 10 pan.
  • Let cool.
  • When completely cooled, cut into 1 inch strips.
  • Butter fingers.
  • Grab a strip and start pulling. Keep pulling. Strip will SLOWLY turn whiter. Use your own judgement as to what consistency you want your taffy.
  • Wrap in waxed paper or foils.
