CINNAMON AND BROWN SUGAR COFFEE CAKE
A light, sweet cake that goes perfectly with your morning coffee

Steps:
- Preheat your oven to 375°.
- Beat the egg in a bowl.
- Add sugar, milk, vanilla and oil, and stir until smooth.
- Add flour, salt and baking powder to the mixture, and stir only until smooth. Do not over-beat, or it will be tough.
- Spread in a 9x9 inch pan.
- In a separate bowl, make your topping: mix brown sugar, cinnamon, flour, melted butter and optional nuts.
- Sprinkle mixture over the top of the cake.
- Bake for 25 minutes.
- Let cool for 5 minutes and then serve.
BANANA COFFEE CAKE
A great banana cake to share with your company over coffee. This is a recipe my mom gave to me and it is so simple. It makes a lot but don't worry, it freezes great.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Sift flour, baking powder, and baking soda together in a large bowl. Mix brown sugar and cinnamon together in a small bowl until well combined.
- Combine sugar and butter in a large mixing bowl; beat with an electric mixer until creamy. Add banana and vanilla extract; mix until smooth. Mix in beaten eggs. Add flour mixture alternately with sour cream.
- Pour 1/2 of the batter into the prepared baking pan, sprinkle with 1/2 of the brown sugar mixture, and 1/2 of the chocolate chips; repeat layers once more.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 50 minutes.

- Preheat oven to 350°F Grease two 8 or 9-inch cake pans.
- CAKE:
- Beat brown sugar blend and oil in an electric mixer. Add eggs, one at a time, beating well after each addition. Add next 6 ingedients. Beat to combine. Fold in chocolate chips. Pour batter into prepared pans.
- Bake in preheated oven for 30 minutes or until a toothpick inserted in center of cake comes out clean. Cool in pans for 10 minutes. Remove from pans and cool on a wire rack.
- ASSEMBLY:.
- Place 1 layer of cake on serving platter. Place sliced banana on top. Place remaining cake on top. Sprinkle with icing sugar if desired.
- TIPS: for a more decadent version, place 3/4 cup Chipits Semi-sweet chocolate chips in a heat proof bowl. Heat 1/4 cup Carnation fat-free evaporated milk in the microwave for 1 minute and pour over chocolate chips. Let sit 5 minutes, stir until mixture is combined. Drizzle half the mixture over the sliced bananas and bottom half of cake. Place remaining layer on top. Drizzle with remaining chocolate.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a 10-inch square baking pan with cooking spray.
- Combine milk and vinegar in a glass to make sour milk; stir gently. Mash bananas in a small bowl to make 1 cup.
- Combine all-purpose flour, whole wheat flour, oats, baking powder, baking soda, and salt in a bowl.
- Cream butter and brown sugar in a large mixing bowl with an electric mixer until fluffy. Beat in eggs and vanilla extract. Mix in bananas. Add dry ingredients in 2 batches, alternating with sour milk; mix thoroughly. Pour batter into the prepared pan.
- Mix brown sugar, flour, and butter for topping together in a bowl. Sprinkle topping over batter, then sprinkle on pecans.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool on a wire rack before cutting into squares.

- Preheat oven to 300 degrees. In a large bowl, combine the flour, baking powder, baking soda, salt, and sugar. Blend in the melted butter, mixing together until moist. Add 1/4 cup of the buttermilk and combine.
- In a separate bowl, combine the other 1/4 cup of buttermilk with the eggs and blend into the flour mixture. Add the vanilla and mashed bananas. Beat for 1 minute. Place the batter in a greased 9-by-13-by-2-inch pan.
- To make the topping, squeeze the flour, brown sugar, and butter together with your hands. Crumble the topping evenly over the batter. Bake for 35 to 40 minutes. When the cake is done, an inserted toothpick or fork should come out clean from the center.
BROWN SUGAR BANANA BREAD
This is a delicious recipe from the cookbook "Eating For IBS" by Heather Van Vorous. Not only is it the best banana bread I've ever tasted, it's low fat and very safe for people with IBS! If eggs aren't a problem for you feel free to substitute 3 eggs for the 6 egg whites. Please note that the bananas have to be super-ripe for this recipe. IF THEY'RE NOT BLACK, THEY'RE NOT READY! This recipe doubles or triples easily, and extra loaves freeze well.

- Preheat oven to 350 degrees F.
- Sift flour, baking powder, baking soda, and salt into a large bowl and whisk with a metal whisk until well blended.
- In a large bowl blend the egg whites, oil, brown sugar, vanilla, and mashed bananas with an electric mixer until creamy.
- Add dry ingredients to wet and with a few swift strokes blend by hand until smooth.
- Pour into non-stick loaf pans sprayed with cooking oil and bake for 50-60 minutes or until a toothpick or cake tester inserted into the center of the loaf comes out clean.
- Cool on rack.

- Preheat oven to 350℉. Spray the inside of a large bread pan with cooking spray and line the bottom of a bread pan with parchment paper.
- Start by making the crumble topping. Chop the cold stick of butter into small pieces and add to a small bowl. Then add 1/2 cup of flour, 1 cup brown sugar, 1/2 tsp nutmeg, 1 tsp of cinnamon, and a 1/2 tsp of salt. Mix together using a pastry cutter or fork, blending in until it looks like a crumble. Add in the walnut pieces and coconut, cover and refrigerate until ready to use.
- Next, add the softened stick of butter and granulated sugar to a stand mixer and beat on a low to medium speed for 2 to 3 minutes, until it looks like a light colored frosting.
- While the butter and sugar are mixing, sift the remaining 2 cups of flour, 1 teaspoon baking powder, and remaining 1/2 teaspoon of salt together in a separate bowl and set aside.
