Grilled Buffalo Chicken Thighs with Blue Cheese Slaw image

We deconstructed -- and then reconstructed! -- all the great flavors of Buffalo chicken wings into this meal that's much healthier but tastes just as satisfyingly decadent.

1/3 cup low-fat buttermilk
1/3 cup crumbled blue cheese
2 teaspoons red wine vinegar
1 teaspoon Worcestershire sauce
1 1/2 cups pre shredded carrots
1 1/2 cups celery matchsticks (from about 3 stalks)
1/3 cup hot sauce, such as Frank's Red Hot
2 tablespoons unsalted butter
8 bone-in chicken thighs (about 2 pounds), skin removed

Steps:

  • Preheat a grill for indirect cooking over medium-high-heat (350 to 400 degrees F).
  • Combine the buttermilk, blue cheese, vinegar and Worcestershire in a medium bowl; add the carrots and celery and toss thoroughly. Allow to sit at room temperature while you cook the chicken.
  • Combine the hot sauce and butter in a small saucepan and bring to a boil; cook until slightly thickened, 1 to 2 minutes.
  • Meanwhile, grill the chicken, meaty-side up, and cook until the underside is well-marked and readily releases from the surface, about 15 minutes. Turn and cook until a thermometer inserted in the thickest part of the meat (not touching bone) registers 165 degrees F, about 15 more minutes. Brush liberally with the sauce, then turn the chicken and brush the tops with more sauce. Grill 1 more minute. Serve with the slaw.

2 rotisserie chicken breasts
1/2 cup buffalo, chicken sauce
1/4 cup sliced scallion
8 sliced Texas toast thick bread
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
2 celery ribs, thinly sliced
1 large carrot, thinly sliced
1/4 cup crumbled blue cheese
6 tablespoons unsalted butter, softened
1 cup blue cheese dressing

Steps:

  • Remove the skin and bones from the chicken and shred into a large bowl. Toss together with the buffalo sauce and scallions.
  • To assemble the sandwiches, lay out 4 bread slices in a single layer. Brush the bread with 3 tablespoons of the softened butter, then turn the bread over. Top each bread slice with 1/4 cup shredded cheddar cheese, 1/4 cup shredded Monterey Jack cheese, buffalo chicken, sliced celery, carrots, and a tablespoon of blue cheese. Top each with a slice of bread and brush with remaining butter.
  • Heat a skillet or griddle over moderate heat. Working in batches, cook sandwiches until bread is golden and crisp and cheese has melted, about 3 minutes per side. Transfer to a cutting board and cook the remaining sandwiches. Cut each in half and serve with blue cheese dressing for dipping.

3 stalks celery, cut into matchstick-size pieces
2 large carrots, shredded
⅓ cup buttermilk
⅓ cup crumbled blue cheese
2 teaspoons red wine vinegar
1 teaspoon Worcestershire sauce
½ teaspoon celery seed
½ teaspoon salt
3 pounds boneless skinless chicken thighs
1 cup buffalo wing sauce, divided

Steps:

  • Combine celery, carrots, buttermilk, blue cheese, vinegar, Worcestershire, celery seed, and salt in a bowl. Set aside.
  • Place chicken thighs into a bowl and coat with 3/4 cup wing sauce.
  • Preheat an outdoor grill to medium-high heat and lightly oil the grate.
  • Grill chicken on the preheated grill for 6 minutes. Flip, and grill for 6 more minutes. Brush thighs with remaining 1/4 cup wing sauce and grill until chicken is no longer pink at the bone and the juices run clear, about 2 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Transfer chicken to a plate and serve with blue cheese slaw.

6 slices bacon
½ cup mayonnaise
¼ cup sour cream
2 tablespoons hot buffalo wing sauce
1 loaf Italian bread, cut in half lengthwise
3 cups shredded meat from a rotisserie chicken
8 slices pepperjack cheese
¼ cup roasted red bell peppers, drained and sliced

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Place the bacon in a large, deep skillet; cook over medium-high heat, turning occasionally, until evenly browned. Drain the bacon slices on a paper towel-lined plate.
  • Combine the mayonnaise, sour cream, and hot sauce in a small bowl. Spread both halves of the bread with the mayonnaise mixture. Place chicken on bottom half of bread; layer bacon and cheese on top of chicken. Fold the top half of the bread over the bottom, and wrap with foil.
  • Bake for 20 to 25 minutes. Add a layer of red pepper slices on top of the bacon and cheese, if desired. Cut into slices, and serve.

  • In a small bowl combine softened cream cheese, crumbled blue cheese, paprika, ground black pepper and cayenne pepper then mash/stir to combine. Set aside.
  • In a separate bowl, combine cooked shredded chicken, hot sauce, ranch dressing and minced garlic then stir until the chicken is well coated.
  • Take your slices of bread and spread a layer of butter on one side of each slice of bread. Turn the bread over and spread the cheese mixture on four of the bread slices (one for each sandwich) then top with the chicken mixture. Try to distribute an even amount between all four sandwiches. It should be about 1/2 a cup for each one. On the other slice of bread place a slice or two of your favorite sliced cheese and close the sandwich.
  • Spray a large skillet with cooking spray and cook the sandwiches on low heat for 5 minutes or until the bread is golden and crispy. Flip and repeat on the opposite side. Depending on the size of your fan you may need to grill the sandwiches in separate batches. Once finished remove from the pan and enjoy with additional buffalo sauce, ranch or blue cheese dressing.
