- Heat oil in a saute pan over medium heat.
- Add onions, carrots, and celery, and a pinch of salt and pepper.
- Cook for 5-6 minutes, or until onions are becoming translucent and vegetables are softening.
- Add the ground chicken, and cook until the chicken is browned and coked through with no pink remaining, breaking up the meat as it cooks.
- Stir in the tomato sauce, hot sauce, and Worcestershire, and simmer for several minutes, until heated through.
- Spoon onto rolls or any of the other ideas for serving and top with blue cheese dressing or Ranch dressing or crumbled blue cheese for serving.

- Press the saute button on your Instant Pot. Spray the liner with olive or coconut oil cooking spray and saute the carrots and celery for 2 or 3 minutes - they'll finish cooking under pressure, so need to fully soften.
- Add the ground chicken, lightly season with salt and pepper and brown, breaking up the meat with your spatula as it cooks. No need to fully cook, once the meat is crumbled, you can add the tomato sauce, hot sauce and water. Stir. Turn off the saute function and cook on manual (or pressure cook) for 2 minutes, with a quick-release when finished.
- In a small bowl, whisk together the Greek yogurt, 2 Tbs hot sauce and cornstarch. Once pressure has fully released, remove lid and put the pot back on saute. Next, stir in the yogurt mixture and let cook, stirring occasionally for a few minutes until thickened.
- Serve on whatever you like (some great options are listed in the ingredients list!) with some blue cheese (if you're into that)!
- Spray a large saute pan with olive or coconut oil cooking spray. Add the carrots and celery and cook until softened.
- Add the ground chicken, seasoning lightly with salt and pepper. Brown the meat, breaking up and crumbling as you go with your spatula.
- Once the meat is fully cooked (or just about), stir in the tomato sauce and hot sauce and simmer for around 10 minutes or so (I like to continue to break up the meat even further at this point while it's simmering, but it's not necessary, you can just stir it every now and then). Most of the liquid will evaporate in the cooking process.
- Stir in the Greek yogurt and you're ready to go! Serve on whatever you like (some great options are listed in the ingredients list!) with some blue cheese (if you're into that)!

- Heat olive oil in a large skillet over medium heat. Once heated, add the onion, carrots, and celery to the pan and sprinkle with salt. Sauté for a few minutes until softened. Add in the garlic and cook for another minute.
- Add in the ground chicken and break it up into pieces. Cook until the meat is browned.
- Stir in the tomato sauce and hot sauce. Turn the heat to low. Cover the pan, and let it simmer for 5 minutes.
- Uncover the pan and give everything a good stir. Continue to cook, uncovered, for another couple minutes until the sauce reduces and thickens a bit. If the mixture seems dry, stir in 1/4 cup water or chicken broth. If the mixture has too much liquid, keep simmering until the sauce thickens.
- Add the sloppy joe mixture to the buns, and serve with blue cheese, ranch dressing, and chives if desired.

- Heat the olive oil in a large skillet over medium-high heat and stir in the ground chicken. Cook and stir until the chicken is crumbly, evenly browned, and no longer pink. Stir in the onion, garlic, salt and black pepper; cook until the onion has softened, about 7 to 8 minutes.

- Heat a large skillet with extra-virgin olive oil over medium-high heat. Add meat and break it up with wooden spoon, cook 5 to 6 minutes. Add in carrots, celery, onions and garlic, season with salt and freshly ground black pepper, cook 7 to 8 minutes more. - Add vegetable oil to a saucepan, and then add (in this order) garlic, yellow onion, brown sugar, kosher salt, black pepper, cayenne, chicken thighs, ketchup, Dijon mustard, Worcestershire sauce, and hot sauce.
- Place over high heat and wait until you can hear the garlic sizzling in the bottom of the pan, about 30 seconds. Let garlic sizzle for about 30 seconds before adding the water. Stir everything together and wait for the mixture to boil.

- Press the SAUTE button. Add in the butter and let it melt.
- Add in the ground beef, red pepper, and red onion and cook, using a spatula to break up the meat.
- Press CANCEL.
- In a bowl, mix together brown sugar, red wine vinegar, steak seasoning, Worcestershire sauce, and tomato sauce.
- Pour sauce on meat in Instant Pot and stir to combine. If you are worried about getting the "burn notice" on your Instant Pot, use a wooden spoon to scrape the bottom of the Instant Pot and loosen up any burned or brown bits on the bottom of the pot (aka deglazing the pot).
- Place the lid on the Instant Pot and secure in place. Turn the vent to SEALING. Press the MANUAL button and set the timer for 8 minutes.
- When cooking is finished, let the pressure NATURALLY RELEASE for 10 minutes and then move the vent to VENTING and release the remaining pressure.
- Remove the lid and stir to make sure everything is mixed together, then serve meat on hamburger buns.
