BUTTERY JAM THUMBPRINT COOKIES

These Buttery Jam Thumbprint Cookies are so tender and melt-in-your-mouth delicious! They're also super easy and need only a handful of ingredients. These are always a hit with grownups and kids alike.

Provided by Chew Out Loud

Number Of Ingredients 6

1 cup 2 sticks/16 TB butter, softened (soft enough that it will give when you lightly press it, but not melted.)
1/2 cup confectioners' (powdered sugar, plus 1/4 cup more for dusting)
2 teaspoons pure vanilla extract
1/8 tsp table salt
2 cups all purpose flour
1/2 cup thick fruit preserves (i.e., raspberry, blackberry, peach)

Steps:

  • Preheat oven to 325°F with rack on middle position. Line a baking sheet with parchment paper.
  • In the bowl of a stand mixer fitted with paddle attachment on high speed, beat butter and sugar until creamy and light, 2-3 minutes (do not rush this part, as it will determine how your dough turns out.) Add vanilla and salt, scraping down bowl as needed. Switch to medium-low and gently mix in flour, just until combined. Dough should be somewhat sticky. Form into a ball shape, cover, and chill 30-60 minutes.
  • Roll tablespoonfuls of dough into 1-inch balls. Place dough balls on parchment-lined baking sheets or silicone baking mats. Press down the center of each ball with handle-end of a wooden spatula or finger, making a deep well in the middle - deep but not too wide (it helps to hold the dough ball in palm of hand while forming the well with your finger.)
  • Fill cookie centers generously with jam/preserves. I use either a very small spoon or a piping bag. Bake 20-25* minutes or until golden brown and puffy. Let cool 5 min. on baking sheet, then gently transfer to finish cooling on wire rack.
  • When cookies are completely cooled, dust with confectioners' sugar. Cookies can be kept in airtight container at room temp for a few days.

⅓ cup white sugar
2 egg yolks
1 teaspoon vanilla extract
½ teaspoon salt
1 ½ cups all-purpose flour
2 egg whites, lightly beaten
¾ cup finely chopped walnuts
⅓ cup strawberry preserves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets, or line with parchment paper.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg yolks, vanilla, and salt. Gradually mix in flour.
  • Shape dough into 3/4 inch balls. Dip in lightly beaten egg whites, then roll in finely chopped walnuts. Place 1 inch apart on prepared cookie sheets. Press down center of each with thumb.
  • Bake for 15 to 17 minutes, or until golden brown. Cool on baking sheet for 5 minutes, then remove to a wire rack to cool completely. Just before serving, fill centers of cookies with strawberry preserves.

Creamy and naughty and oh so good, these peanut butter cookies are rolled in sugar, baked with a dent in the middle, then cooled and filled with your favorite fruit jam. They keep amazingly well in an airtight container (about 1 week), and may keep even longer in the fridge. Adapted from Martha Stewart.

1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup smooth peanut butter
1/2 cup butter, softened
1/3 cup light-brown sugar
1/3 cup white sugar, plus extra for rolling
1 large egg
1 teaspoon pure vanilla extract
raspberry and strawberry jam (or your favorite flavor)

Steps:

  • Preheat oven to 350°F Lightly grease or line a baking sheet with parchment paper.
  • In a small bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, cream peanut butter and butter with an electric mixer until smooth. Add the sugars and beat until light and fluffy. Add the egg and vanilla and beat until well incorporated. Add the dry ingredients and mix until just combined.
  • Scoop tablespoonfuls of dough and form into balls.
  • Roll them in granulated sugar to coat.
  • Place them on the prepared baking sheet. Indent each ball with the back of a wooden spoon.
  • Bake in preheated oven until puffy, about 8 minutes.
  • Remove from the oven and quickly re-dent the centers of the cookies with the back of the wooden spoon.
  • Return to the oven to continue baking for 3-5 more minutes, until golden on the edges.
  • Remove from the oven to cool on a wire rack.
  • Once the cookies have cooled, fill the centers with a teaspoonful of jam.
  • Cookies will keep stored in a airtight container at room temperature for about a week.
  • Makes 24-36 cookies.

1/2 cup butter or margarine, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1/2 teaspoon almond extract
1 egg
1 1/2 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unblanched whole almonds, finely chopped
1/2 cup strawberry jam

Steps:

  • Heat oven to 350°F. Spray 2 cookie sheets with cooking spray. In large bowl, beat almond butter, butter, brown sugar and granulated sugar with electric mixer on medium speed 1 minute or until light and fluffy. Beat in almond extract and egg until blended. On low speed, beat in flour, baking powder, baking soda and salt until soft dough forms.
  • In small bowl, place almonds. Shape dough into 1-inch balls; roll in almonds. On cookie sheets, place balls 2 inches apart.
  • Bake 8 to 10 minutes or until edges are almost set. Using thumb or handle of wooden spoon, make indentation in center of each cookie. Bake 5 minutes longer or until edges are browned and set. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
  • Place strawberry jam in small resealable food-storage plastic bag; seal bag. Cut off tiny corner of bag. Squeeze bag gently to pipe jam into indentation in each cookie.

1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup smooth peanut butter
4 ounces (1 stick) unsalted butter, softened
1/3 cup packed light-brown sugar
1/3 cup granulated sugar, plus more for rolling
1 large egg
1 teaspoon pure vanilla extract
1/2 cup raspberry jam

Steps:

  • Preheat oven to 350 degrees. Whisk together flour, baking powder, baking soda, and salt. Beat peanut butter and butter with a mixer on medium speed until smooth. Add sugars, and beat until pale and fluffy. Add egg and vanilla, and beat until incorporated. Reduce speed to low. Add dry ingredients, and mix until combined.
  • Scoop level tablespoons of dough, and form into balls. Roll each ball in granulated sugar, and transfer to parchment-lined baking sheets, spacing about 2 inches apart.
  • Bake until cookies are puffy, about 10 minutes. Remove from oven, and make indentations in centers by pressing with the handle end of a wooden spoon. Return to oven, and bake until edges are golden, 6 to 7 minutes more. Transfer sheets to wire racks, and let cool completely.
  • Heat jam in a small saucepan, stirring, until loosened, about 30 seconds. Spoon about 1/2 teaspoon into each indentation. Cookies can be stored in a single layer for up to 1 week.
