1 1/2 cups basmati rice
1/3 cup currants
1/4 cup pine nuts
1 small green bell pepper, diced
3 1/3 cups cold water
1 tablespoon sesame oil
5 scallions, diced
2 garlic cloves, minced
1 green chili pepper, minced
2 lbs ground lamb
1 teaspoon cumin
1 teaspoon turmeric
1 tablespoon coriander
2 1/2 cups buttermilk

Steps:

  • mix rice, currants, pine nuts, and diced bell pepper. add water. heat to a rolling boil. cover and turn heat down to medium low. allow to simmer for twenty minutes.
  • remove rice from heat and let sit for five minutes.
  • meanwhile, heat oil in a large skillet and add scallions, garlic, and chili. saute until soft. add lamb. cook until there is no pink left in the meat.
  • drain the water and oils from the meat. turn stove down to low and add cumin, turmeric, and coriander. mix well.
  • slowly add buttermilk while stirring. heat, but be sure the milk does not boil.
  • serve over rice.
  • this recipe will taste good with lamb, goat, or chicken. or leave out the meat altogether for a good vegetarian dish.

3 tablespoons safflower oil
2 onions, finely chopped (about 2 1/4 cups)
3 tablespoons grated peeled fresh ginger (from a 3-ounce piece)
6 cloves garlic, minced (about 3 tablespoons)
Coarse salt
1 3-inch cinnamon stick
2 1/4 teaspoons cumin seeds
1 1/2 teaspoons coriander seeds, crushed
3/4 teaspoon ground turmeric
2 cardamom pods, crushed
2 teaspoons tomato paste
2 1/2 pounds lamb shoulder, cut into 1-inch pieces
12 ounces baby fingerlings (or Yukon Gold potatoes, cut into 1-inch pieces)
2 cups low-sodium chicken broth
1 bunch spinach, trimmed, washed well, and shaken to remove excess liquid (about 4 cups packed leaves)
Cilantro, yogurt, Indian pickle or chutney, and flatbread, for serving

Steps:

  • Heat oil in a 6-quart pressure cooker over medium-high heat. Add onions, ginger, garlic, and 1 teaspoon salt. Cook, stirring occasionally, until onions are translucent, about 3 minutes. Add cinnamon stick, cumin, coriander, turmeric, and cardamom. Cook, stirring, until spices are fragrant, about 30 seconds. Add tomato paste and cook, stirring, 15 seconds more.
  • Add lamb, potatoes, and broth. Season with salt. Secure pressure-cooker lid and bring to high pressure over high heat. Reduce heat to medium to maintain high pressure. Cook 24 minutes; remove from heat. Vent pressure, then remove lid. Stir in spinach. Season with salt and serve with accompaniments.

4 tablespoons vegetable oil
2 large onions (thinly sliced)
2 large tomatoes (diced)
2 tablespoons garlic paste
1 tablespoon ginger paste
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon red chili powder
2 teaspoons garam masala
2 pounds boneless lamb shoulder or stew meat (cut into 1 1/2-inch chunks)
1/2 cup hot water
Salt (to taste)
Garnish: cilantro (chopped, fresh)
For Serving: Naan or steamed basmati rice

Steps:

  • Gather the ingredients.
  • Heat the cooking oil in a heavy-bottomed pan over medium heat.
  • When hot, add the onions. Sauté until the onions begin to turn pale golden brown, about 8 minutes. Remove from the oil with a slotted spoon and drain on paper towels. Reserve the oil in the pan and turn off the heat.
  • In a food processor , pulse the onions into a smooth paste, adding a teaspoon of water if necessary to blend. Transfer to a separate container and reserve.
  • Blend the tomatoes, garlic paste, and ginger paste together in the food processor until you have a smooth paste. Transfer to a separate container and reserve for later use.
  • Reheat the oil left over from frying the onions over medium heat and add the reserved onion paste. Sauté for 2 to 3 minutes.
  • Add the tomato mixture, coriander, cumin, turmeric, red chili powder, and garam masala, and mix well.
  • Sauté until the oil begins to separate. This can take up to 10 minutes.
  • Add the lamb pieces to the mixture and stir to fully coat. Sauté until the lamb is well browned, about 8 minutes.
  • Add 1/2 cup of hot water to the pan and stir to mix well. Bring to a boil, reduce the heat to a simmer, and cover the pan. Cook until the lamb is tender. You will need to keep checking on the lamb as it cooks and adding more water if all the water dries up. Stir often to prevent burning. The dish should have a fairly thick gravy when done. Season with salt to taste. This should take roughly 45 minutes.
  • When the lamb is cooked, garnish with chopped cilantro and serve with naan or hot steamed rice.

1 tablespoon cumin seeds
1 tablespoon fennel seeds
1 tablespoon fenugreek
One 8-ounce piece boneless lamb leg, cut into 1-inch chunks

1 onion, thinly sliced
5 cloves garlic, minced
2 stalks celery, cut into a medium dice
1 bulb fennel, thinly sliced plus fennel fronds picked from 1 stem
One 14.5-ounce can chickpeas
3 tablespoons tomato paste
2 bay leaves
1 bunch fresh thyme, tied together with butcher's twine
A pinch crushed red pepper flakes
2 cups chicken stock
1/2 bunch fresh cilantro, roughly chopped
Olive oil
1/2 onion

Steps:

  • For the lamb curry: Heat a medium skillet over medium-high heat. Add the coriander seeds, cumin seeds, fennel seeds and fenugreek. Moving the skillet constantly, toast the spices until warm and fragrant, about 2 minutes. Remove from heat and transfer to a spice grinder. Grind into a powder and transfer to a small bowl and set aside.
  • Toss the lamb, 2 tablespoons of flour, the toasted and ground spice blend and some salt together in a large bowl.
  • Lightly coat a large Dutch oven with olive oil and heat over medium-high. When the oil is shimmering, add the lamb (work in batches if necessary to not over crowd the pot) and sear, turning as needed, until crispy and golden brown on all sides. Transfer the lamb to a bowl and set aside.
  • Add the turmeric, asafetida and onion to the pot. Saute the onion, scraping up the brown bits from the bottom of the pot, until they are translucent, about 5 minutes. Add the garlic and saute until tender, about 1 minute. Add the celery and fennel and saute until just tender, about 3 minutes. Add the chickpeas, tomato paste, bay leaves, thyme, crushed red pepper and stir to combine. Add the chicken stock and the seared lamb with any collected juices and bring to a boil. Turn heat to medium-low and allow to simmer until meat is tender and almost shreddable but holds its shape, about 1 hour. Remove from heat and plate with rice on the side. Garnish with cilantro and fennel fronds.
  • Meanwhile, for the rice: Coat a medium saucepan with olive oil and heat over medium. Add the onion and a sprinkle of salt and cook, stirring, until the onions are translucent, about 3 minutes. Add the chicken stock, rice and bay leaves and some salt. Bring to a boil. Reduce the heat to medium-low and cover with a lid. Cook until the rice is tender, and the liquid has been absorbed, about 15 minutes. Uncover and fluff the rice with a fork.
  • For the chutney: Coat a medium skillet with olive oil and heat over medium. Add the fennel and onion and cook, stirring, until tender and translucent, about 5 minutes. Add the chicken stock, crushed red pepper and a sprinkle of salt. Bring to a boil, then reduce to a simmer and cook until the mixture has reduced by half. Remove from the heat.
  • Serve curry with rice and chutney.

4 pounds boneless, trimmed lamb shoulder
Salt and freshly ground black pepper
1 cup vegetable oil
3 onions, diced
2 tablespoons pureed garlic
2 tablespoons black mustard seeds
2 tablespoons garam masala
2 teaspoons turmeric
2 teaspoons ground cardamom
2 teaspoons ground cumin
1 teaspoons dried red pepper flakes
2 quarts brown lamb stock or canned chicken broth
Plain yogurt and Fried Onions, for garnish

Steps:

  • Cut meat, as uniformly as possible, into 2 by 3 inch cubes. Generously sprinkle with salt and pepper.
  • Heat oil in a large Dutch oven over high heat. Cook meat until golden brown on all sides, then reserve on a platter. In same pot, cook onions, stirring occasionally, until golden. Reduce heat to medium, add garlic and all dry spices, and cook about 3 minutes, stirring occasionally. Return meat to pan and pour in lamb stock. Bring to a boil, reduce to a simmer, and cook, uncovered, 1 hour 15 minutes. Occasionally skim and discard fat that rises to the top.
  • Ladle warm stew over a bed of basmati rice and serve with Orange Dal with Ginger and Garlic. Garnish with yogurt and Fried Onions. Serve immediately.

Storecupboard spices along with puréed onions, garlic and ginger create an authentic flavour in this tender lamb curry, that's rich in iron and two of your 5-a-day

thumb-sized piece ginger, ½ cut into matchsticks, the rest left whole
2 onions, quartered
4 garlic cloves
2 tbsp rapeseed oil
1 cinnamon stick
1 tbsp ground coriander
1 tsp ground cumin
1 tsp ground turmeric
½ tsp fennel seeds
750g leg of lamb, diced
400g can chopped tomatoes
1 red chilli or green chilli, deseeded and sliced
small bunch coriander, stalks finely chopped, leaves roughly chopped
basmati rice and mango chutney or raita, to serve

Steps:

  • Put ½ the thumb-sized piece of ginger, 2 quartered onions and 4 garlic cloves in a food processor with 300ml water. Blitz to a smooth purée.
  • Scrape down the sides with a spoon and blitz again to make it as smooth as you can. Tip into a deep sauté pan, cover with a lid and simmer for 15 mins.
  • Remove the lid and cook for 5 mins more, stirring occasionally. By now the liquid should be all gone. If not, cook a little longer.
  • Add 2 tbsp rapeseed oil to the pan with the remaining piece of ginger, cut into matchsticks. Turn up the heat and fry, stirring, for 3-5 mins until it starts to colour.
  • Stir in 1 cinnamon stick, 1 tbsp ground coriander, 1 tsp ground cumin, 1 tsp ground turmeric and ½ tsp fennel seeds, then add 750g leg of lamb. Stir-fry until the lamb changes colour.
  • Tip in 400g can chopped tomatoes with a can of water and 1 deseeded and sliced red or green chilli, season well, cover and leave to simmer for 1 hr.
  • Stir in the finely chopped stalks from a small bunch coriander, re-cover and cook for a final 30 mins until the lamb is tender. Add a splash of water if necessary to loosen the consistency as it cooks.
  • Stir in the roughly chopped coriander leaves and serve with basmati rice and mango chutney or raita.

1 tablespoon cumin seeds
10 peppercorns
2 tablespoons peanut or olive oil
1 large Spanish onion, chopped
4 cloves garlic, chopped
1 1/2 tablespoons minced ginger
1 1/2 pounds lamb (from the leg or shoulder), cut into 1/2-inch cubes
3/4 teaspoon turmeric
1 1-inch piece cinnamon stick
1 1/2 teaspoons sea salt
1 cup plain whole milk yogurt
1/2 cup milk
1/2 cup coconut milk
1/4 cup sliced scallions
1/2 cup chopped cilantro
1 lemon, juiced

Steps:

  • Lightly toast coriander in a small pan, shaking over medium heat about 2 minutes. Repeat with cumin, cooking about 1 minute. Pour coriander, cumin and peppercorns into a sturdy bag and crush with a rolling pin, or use a mortar and pestle.
  • Place oil in a large pan over medium high heat. Add onion and sauté until soft on edges, about 5 minutes, stirring often. Add garlic and ginger, and cook another minute or two. Stir in meat and cook, turning, for 8 to 10 minutes. Sprinkle with coriander, cumin, peppercorns, turmeric, cinnamon stick and 1 teaspoon salt. Stir. Add yogurt, milk and coconut milk, and gently bring just to a boil; cover and simmer gently until lamb is cooked through, 20 minutes. Fold in scallions, cilantro and a little lemon juice. Serve over Basmati rice.

LAMB IN BUTTERMILK CURRY RECIPE

4 cups buttermilk plus 1 cup water
3 lbs leg of lamb or stewing beef, fat trimmed, in 2 inch cubes
2 tbsp coriander seeds
1/2 cup canola oil
1 1/2 tbsp cumin seeds
3 tbsp chopped garlic
10-15 2 inch pieces dried red chilies
15 cloves
Seeds from 10 black cardamom pods
1 tbsp salt
10 oz potato (1 large), mashed

Steps:

  • Pour buttermilk into large bowl. Add lamb/beef and mix well. Cover the bowl and refrigerate for at least 6 hours. Lightly pound coriander seeds in a mortar or a bowl with a heavy spoon. Set aside. Heat oil in a pot on medium heat for 1 minute. Add cumin seeds and cook until they sizzle for 30 to 45 seconds. Add garlic and sauté for 5 minutes. Add coriander, chilies, cloves, cardamom and salt. Stir well and cook 3 to 4 minutes. Add marinated meat with all the buttermilk plus 1 cup water. Stir continuously as you bring to a boil. Reduce heat to medium low, cover and cook for 1 hour. Remove lid and stir in mashed potato. Cover the pot again and cook for another hour, or until meat is cooked and tender. Add more water to keep meat covered if needed. Remove cloves before serving.
