For a simple side dish, try Ina Garten's Sauteed Cabbage recipe from Barefoot Contessa on Food Network Ñ all you need is shredded cabbage and a little butter.

1 small head white cabbage, including outer green leaves (2 1/2 pounds)
2 tablespoons unsalted butter
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Cut the cabbage in half and, with the cut-side down, slice it as thinly as possible around the core, as though you were making coleslaw. Discard the core.
  • Melt the butter in a large saute pan or heavy-bottomed pot over medium-high heat. Add the cabbage, salt, and pepper and saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. Season, to taste, and serve warm.

This is an excellent side dish to serve with pork chops and beans. It has a wonderful old-fashioned flavor and is a refreshing change from plain potatoes and other vegetables.

1/2 medium onion, chopped
1/4 medium sweet red pepper, chopped
1/4 medium green pepper, chopped
2 garlic cloves, minced
2 tablespoons butter
5 to 6 cups frozen shredded hash brown potatoes
1/2 cup diced fully cooked ham
1/2 medium head cabbage, shredded (about 4 cups)
Salt and pepper to taste

Steps:

  • In a large nonstick skillet, saute onion, red and green pepper and garlic in butter until tender. Add hash browns; cook over high heat for 2-3 minutes. Stir in ham, cabbage, salt and pepper. Simmer for 8-10 minutes.

2 medium eggplants, cubed
2 large red peppers, sliced into small strips
1 large sweet onion, sliced
4 tablespoons extra virgin olive oil
garlic
salt
pepper (to taste)

Steps:

  • Heat the EVOO in a large deep skillet on medium heat.
  • Sautee onions and peppers until soft.
  • Add cubed eggpland and let cook for 5 minutes on medium.
  • Add the chopped cabbage bit by bit. As the cabbage cooks down there wil be room for more.
  • Season and stir until all cabbage is cooked down, and the mixture is soft. (approx 20-25 min).
