This is my version of the Cilantro Lime rice that Cafe Rio uses for their Burritos!! You can also serve it as a side dish...Enjoy!!

Ingredients

1 cup white rice (not instant)
2 cups chicken broth
1 tablespoon lime juice
1 garlic clove
1 pinch salt
1/2 cup fresh shredded cilantro
0.5 (14 ounce) can green enchilada sauce

Steps:

Cook the rice as directed on the rice package -- except use broth instaed of water. When rice is done fluff with a fork then add cilantro, garlic, lime juice, salt and 1/2 can green enchilad sauce and mix well with a fork!
This rice is "FEN"tastic -- Enjoy it!

1 bone-in pork shoulder roast (5 to 7 pounds)
2 cans (12 ounces each) cola, divided
1 cup packed brown sugar, divided
1 tablespoon kosher salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon pepper
1-1/2 cups enchilada sauce
1 can (7 ounces) chopped green chiles
Hot cooked rice
Optional toppings: Black beans, chopped red onion, crumbled cotija cheese, salsa

Steps:

In a large bowl or shallow dish, combine 1 can cola and 1/2 cup brown sugar. Add pork; turn to coat. Refrigerate 8 hours or overnight., Drain pork, discarding marinade. Place pork in a 5- or 6-qt. slow cooker. Add salt, garlic powder, onion powder, pepper and remaining can of cola. Cook, covered, on low until meat is tender, 8-10 hours., Set meat aside until cool enough to handle. Remove meat from bones; discard bones. Shred meat with 2 forks. Discard cooking juices and return meat to slow cooker. Stir in enchilada sauce, green chiles and remaining 1 cup brown sugar. Cook, covered, on low until heated through, about 2 hours., Serve pork in bowls over rice. If desired, add toppings.

Healthy Meals Monday: Cafe Rio Slow Cooker Chicken and Cilantro Rice image

Ingredients

Chicken
8 oz (light or fat free) Italian dressing - about half a bottle
1 Tablespoon cumin
1 Tablespoon chili powder
3lbs frozen chicken breasts
Rice
2 cups uncooked brown rice
2 cups chopped cilantro
1 cup salsa verde (green salsa)
1 bunch green onions
4 cups of water
A pinch of salt

Steps:

Mix cumin, chili powder & dressing in bowl
Place frozen chicken breasts in crock pot
Pour mixture over chicken & cover
Cook on high for 5 hrs or on low for 7 to 8. Shred chicken in the crockpot and mix it well.
Wash and chop the cilantro. Mix the cilantro with 2 cups of water and pour in the pan for cooking the rice. Add two more cups of water, the salt, Salsa Verde, and onion. Bring to a boil. Stir in the rice in the boiling water. Cover and turn down heat to very low; steam for 30 minutes. Makes about 10 servings.
Put it all together with Toppings:
Cook whole wheat burrito tortillas on non-greased skillet 10-15 seconds on each side
Put Chicken, Cilantro Rice, black beans, avocado, lowfat cheese, cilantro, tomatoes, (I also added red pepper, green onions and spinach) inside of tortilla.
Add anything else you like (fat free sour cream, salsa, etc.)
Roll up your tortilla and eat your delicious and healthy Cafe Rio Burrito!
