CALVADOS SOAKING SYRUP
Use this syrup when making our Gingerbread Semifreddo.

Steps:
- In saucepan over medium-high heat, combine sugar and 1 cup water. Cook, stirring occasionally, until sugar is dissolved, 4 to 5 minutes. Remove from heat; cool. Stir in Calvados.

- In a cocktail shaker, combine the calvados, maple syrup, lemon juice and ice and shake for 10 seconds. Strain into glass filled with ice and add the green apple slices as a garnish.

WARM SPICED CALVADOS COCKTAIL RECIPE BY TASTY
Calvados is a pear or apple brandy made in Calvados, a department of Normandy in northern France. This easy to make cocktail brings you a complex earthy and fruitful flavor. Only bring the cocktail to a simmer to keep the alcohol from evaporating, and serve this perfect fall cocktail warm.

Steps:
- Using a vegetable peeler, peel the skins from the clementines, making sure not to include any of the white pith. Set the peels aside. Cut each clementine in half crosswise and juice.
- In a medium pot over medium-low heat, combine the clementine peels and juice, calvados, apple juice, brown sugar, cardamom pods, cinnamon sticks, star anise pods, and cloves. Simmer for 20-25 minutes, without letting the mixture come to a boil. Remove the pot from the heat.
- Ladle the cocktail into mugs and serve warm.
- Enjoy!

Steps:
- Boil apple juice in a 4- to 5-quart wide heavy pot over high heat until syrupy and reduced to about 1 1/2 cups, about 50 minutes.
- Combine apple syrup, tea, and Calvados in a 1 1/2- to 2-quart saucepan and heat over moderate heat until hot (do not boil). Divide toddy among 8 small cups and serve with a cinnamon stick in each.

PUERTO RICO SOAKING SYRUP
The secret to a super moist cake is soaking the cake in a syrup before decorating it- this is done while the cake is still in the pan after the cake has been out of the oven for at least 5 minutes.

Steps:
- My favorite method is to poke each layer with a toothpick all over the top, then pour the syrup on top.
- In a saucepan dissolve the sugar with the water, bring to a boil, cover and remove from heat, let the syrup cool to room temperature.
- Add the 2-tablespoons of rum and stir.
- Allow it to set up well before finishing the cake- this will take about 2 hours.

GINGERBREAD SEMIFREDDO
To make this half-frozen holiday cake, you'll need full recipes of the following: Gingerbread Genoise, Semifreddo Mixture, Cranberry Coulis, Sugared Cranberries and Rosemary, as well as 3/4 cup Calvados Soaking Syrup.

- Unroll gingerbread genoise; brush generously with Calvados soaking syrup. Quickly spread semifreddo mixture over surface to within one inch of side edges. Roll cake into jelly-roll shape; wrap with towel to cover. Freeze until hard, about 5 hours or overnight.
- To serve, temper slightly in refrigerator, about 15 minutes, and slice. Top with cranberry coulis; use 2 or 3 sugared cranberries and a sprig of sugared rosemary for garnish.
