CAMPFIRE TRAIL MIX PUDDING

Number Of Ingredients 10

5 eggs, beaten
1/2 cup heavy whipping cream
1/2 cup sugar
1 teaspoon ground cinnamon
Pinch salt
3 to 4 ounces bittersweet chocolate, chopped
1/2 cup trail mix
Half of a 10-ounce package mini marshmallows, plus for topping, optional
2 sleeves graham crackers, crushed to medium (not fine) crumbs, plus crumbs for topping, optional
4 tablespoons unsalted butter

Steps:

  • Heat a medium cast-iron skillet over medium heat.
  • Mix together the eggs, cream, sugar, cinnamon and salt in a bowl. Add the chopped chocolate, trail mix, marshmallows and graham crackers, and toss to coat.
  • Melt the butter in the hot skillet. Empty the bowl into the skillet and stir to keep from sticking. Cook for about 10 minutes, until set.
  • Serve warm or cold, topped with more graham crackers crumbs and mini marshmallows if you like. Enjoy.

  • First, make sure you prepare your pudding ahead of time and put it in a plastic air-tight container for transporting to camp. (See below for an AWESOME pudding dispenser hack.)
  • Next, once your campfire is going and you've sung "I Love the Mountains" enough times to work up an appetite and a sweet tooth, prepare your roasting stick. To do so, wrap the end in foil and spray with non stick spray (or rub with butter). The key is just to make sure that you'll be able to slide your roll off the stick once it's cooked.
  • Roast slowly over the fire, rotating as needed to make sure all sides are cooked and golden-brown. Remember, patience is the key to a perfectly roasted eclair.
