CANNELLINI BEAN, RED ONION, AND ARUGULA SALAD

Cannellini Bean, Red Onion, and Arugula Salad image

As one of my friends likes to say, this salad is "cute as hell." I won't lie, it is. But more importantly, I love cannellini beans, and there's no easier way to enjoy them than in this good-looking, great-tasting salad. Even though the beans are from a can they should still be firm and whole, not all mushy and falling apart. If you open a can and the beans look like that, then you need to be using another brand of beans. The thinly sliced red onion adds a nice bite as does the spicy arugula. Make sure that the arugula you get looks really perky and green.

Provided by Dave Lieberman

Categories     side-dish

Time 15m

Yield 8 to 10 servings

Number Of Ingredients 8

4 (15-ounce) cans cannellini beans
1 medium red onion, thinly sliced (about 1 1/2 cups)
1 bunch arugula, thick stems removed, washed and dried
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
Handful washed basil leaves, roughly chopped
1 teaspoon salt
20 grinds black pepper

Steps:

  • Empty the cans of beans into a colander and rinse them briefly under cold water. Drain thoroughly and empty the colander into a large serving bowl. Toss the beans together with the red onion and arugula. Shake the olive oil, vinegar, chopped basil, salt and pepper in a sealable container until the salt is dissolved. Pour the dressing over the salad and toss well. It's best to make and dress the salad about an hour before you serve it. Let it stand at room temperature, tossing every time you think about it. Just before serving, adjust the seasoning with salt and pepper, to taste. ;

CANNELLINI BEAN SALAD WITH SHAVED SPRING VEGETABLES

Cannellini Bean Salad With Shaved Spring Vegetables image

Like pasta, cannellini beans are a good staple to have on hand in a city kitchen pantry, and an hour of gentle simmering is usually all it takes. Obviously, they take a little advance planning. You can't hurry a pot of beans, but you can cook them the day or even the morning before you need them. This a good habit to get into, as a small batch of freshly cooked beans is well worth the little effort it takes to get them cooked. (And by all means, use a real stovetop if you have one.) Don't cave and go the canned-bean route - save those for emergencies or camping trips.

Provided by David Tanis

Categories     dinner, easy, quick, salads and dressings

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 17

3 tablespoons lemon juice, or as needed
Finely grated zest of half a lemon
1 teaspoon Dijon mustard
1/2 teaspoon ground fennel seed
4 to 6 anchovy fillets, rinsed and chopped
Salt
pepper
1/2 cup extra virgin olive oil
2 cups cooked cannellini beans, drained
Salt
pepper
Pinch red pepper flakes
6 to 8 large, fat asparagus spears, snapped and peeled
6 radishes
1 small fennel bulb, trimmed
1 small sweet spring onion, or a few scallions, finely chopped
Chopped parsley, basil or dill, for garnish

Steps:

  • To make the vinaigrette, whisk together the vinaigrette ingredients. Adjust lemon juice, salt and pepper to taste.
  • To assemble the salad, place the beans in a large bowl. Pour half the vinaigrette over the beans and toss lightly. Season with salt, pepper and red pepper flakes.
  • Using a sharp mandolin - and a hand guard - carefully slice the asparagus spears lengthwise to about the thickness of a penny. Slice the radishes and fennel to the same thickness. Lay the shaved vegetables and chopped onion or scallions in a shallow bowl. Season with salt and pepper, and dress them very lightly with a few spoonfuls of vinaigrette, turning gently to coat.
  • Spoon the beans onto a serving platter or individual plates, then cover the beans with the shaved vegetables. Add a little more vinaigrette over the top. Sprinkle with chopped parsley, basil or dill.

CANNELLINI BEAN SALAD WITH ROASTED PEPPERS

Cannellini Bean Salad with Roasted Peppers image

"I've had this recipe quite a long time, although I have changed it somewhat from the original," comments Alden Thornton from Warrenton, Oregon. "It's always been popular, particularly when served at picnics and potlucks." Tip: If you are crunched for time, instead of roasting the pepper yourself, use roasted red peppers sold in jar, often near the pickles and condiments.

CANNELLINI-BEAN NIçOISE SALAD

Cannellini-Bean Niçoise Salad image

This vegetarian version of the classic dish omits the anchovies and replaces the tuna with cannellini beans; navy beans or chickpeas are other options.

Yield serves 4

Number Of Ingredients 18

1/4 cup plus 2 tablespoons fresh lemon juice (from 2 to 3 lemons)
1 teaspoon Dijon mustard
1 large shallot, minced
3/4 cup extra-virgin olive oil
1/4 cup finely chopped fresh flat-leaf parsley
1/4 cup torn fresh basil
Coarse salt and freshly ground pepper
1 pound small red potatoes, scrubbed
1 pound haricots verts or green beans, trimmed and cut into 1-inch pieces
5 ounces baby spinach
1 1/2 cans (15 ounces each) cannellini beans, rinsed and drained
1 celery stalk, diced
3 tablespoons capers, rinsed and drained
2 teaspoons finely grated lemon zest
Coarse salt and freshly ground pepper
2 ripe tomatoes, cored and cut into wedges
2 hard-cooked eggs (page 61), peeled and halved lengthwise
1/2 cup Niçoise olives

Steps:

  • Make the dressing: In a small bowl, whisk together lemon juice, mustard, shallot, oil, parsley, basil, and 1/2 teaspoon salt; season with pepper.
  • Prepare the salad: Place potatoes in a medium saucepan and add enough cool water to cover by 1 inch. Bring to a boil; reduce to a simmer. Cook until tender when pierced with the tip of a sharp knife, about 15 minutes. Drain and set aside to cool.
  • Bring a pot of water to a boil and prepare an ice-water bath. Blanch haricots verts until crisp-tender and color brightens, 45 to 60 seconds. With a slotted spoon, immediately transfer beans to ice-water bath to stop the cooking; once cool, drain and pat dry with paper towels.
  • In a large bowl, toss spinach with 2 tablespoons dressing. Transfer spinach to platter. Place cannellini beans in empty bowl and mash about half of them slightly. Add celery, capers, lemon zest, 3 to 4 tablespoons dressing, and 1/4 teaspoon salt (or to taste); season with pepper. Stir to combine; then spoon mixture onto spinach. Arrange potatoes on one side of the bean mixture and tomato wedges on the other.
  • Arrange haricots verts, eggs, and olives on the plate. Drizzle with remaining dressing, and serve immediately.

CANNELLINI BEAN SALAD

Cannellini Bean Salad image

This came from my South Beach Diet newsletter, Daily Dish. It is perfect for Phase 1 dieters but of course good for anyone. This quick, easy bean salad is great cold or at room temperature, making it a good take-along dish for work or a potluck. Serve it as a side with grilled chicken or fish. You can substitute 2 or 3 tablespoons chopped fresh herbs for dried oregano or try dried basil instead if you wish.I used garbanzo beans since I didn't have cannellini and it is awesome. Enjoy!
