GREEK-STYLE BLACK EYED PEAS RECIPE

- In a large pot or Dutch oven, heat extra virgin olive oil over medium heat till shimmering but not smoking. Add onions and garlic. Saute briefly until translucent and fragrant. Add bell peppers and carrots. Cook for 5 minutes, tossing regularly.
- Now add diced tomatoes (with their juices), water, bay leaf, spices, salt and pepper. Raise the heat and bring to a boil. Add in the black eyed peas. Boil for 5 minutes, then lower heat. Cover part-way and let simmer for 25 to 30 minutes (occasionally check to stir. If the black eyed pea stew looks too dry, add a tiny bit of water.)
- Finally, stir in lemon juice and parsley.
- To serve, transfer to bowls. Add a generous drizzle of extra virgin olive oil. Enjoy with a side of warm Greek pita or on top of orzo, rice, or your favorite grain.

- If you are starting with peas in pods: Wash pods. Shell peas. Wash peas again.
- Put peas in a large pot, and cover with water.
- Bring to a boil, then let boil 2 minutes.
- Drain, rinse in / under hot boiling water to get some starch off, then drain again.
- Pack hot peas loosely into heated half-litre (1 US pint) OR 1 litre (1 US quart) jars.
- Leave 3 cm (1 inch) headspace.
- Optional: a pinch of pickling salt or non-bitter, non-clouding salt sub per jar.
- Top jars up with either the blanching liquid, or fresh boiling water from a kettle, maintaining 3 cm (1 inch) headspace.
- Debubble; adjust headspace.
- Wipe jar rims.
- Put lids on.
- Processing pressure: 10 lbs (69 kPa) weighted gauge, 11 lbs (76 kpa) dial gauge (adjust pressure for your altitude when over 300 metres / 1000 feet.)
- Processing time: either size jar 40 minutes.

- Either (a) long-soak the dried black-eyed peas overnight covered with water, OR (b) quick-soak by covering them with water in a saucepan, bring to a boil, boil 2 minutes and let stand for an hour.
- However the beans were soaked, drain and discard the soaking water.
- Put in a pot, cover with fresh water, boil 30 minutes.
- Pack in jars: quarter-litre (1/2 US pint) or half-litre (1 US pint) or 1 litre (US quart)
- Leave 3 cm (1 inch) headspace.
- Top up each jar with clean boiling water (such as from a kettle, for instance) or with the water you just boiled them in, maintaining headspace.
- Debubble; adjust headspace.
- Wipe jar rims.
- Put lids on.
