LUCIANA'S BREAKFAST OATMEAL COOKIES
I was trying to find something nutritious but yummy, and then I came up with this oatmeal cookie recipe that you can have at breakfast, lunch, dinner, or for a snack.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease 2 cookie sheets with shortening.
- Stir oats, sugar, flour, baking soda, and salt in a medium bowl until combined.
- Place butter, eggs, milk, and vanilla in a large bowl; mix well. Add the oat mixture to the butter mixture; stir until incorporated. Roll the dough into walnut-sized balls and place 2 inches apart on the prepared baking sheets.
- Bake in the preheated oven until edges are golden, about 9 minutes.

I created this out of a desire to have a healthier cookie, but not have a huge batch of cookies sitting around staring at me or calling my name!

Steps:
- With a fork, whip together egg, butter, brown sugar, and vanilla. It will look lumpy. Don't worry about it! Just get the major lumps out. Stir in baking soda and flour. Stir in oats.
- Drop by scant tablespoonful onto lightly greased cookie sheet. Press to desired thickness. Bake at 350° for approximately 10 - 11 minutes. (Time depends on thickness).
- OPTIONAL ADD-IN IDEAS: 2 T mini chocolate chips; 2 T raisins; 2 T dried cranberries; 2 T finely chopped nuts.
HEALTHIER NO BAKE OATMEAL COOKIES
A healthier way to enjoy one of America's favorite cookies! To make this vegetarian, use a milk substitute (i.e. almond milk or coconut milk).

- Mix sugar, milk, and cocoa powder together in a saucepan; bring to a boil and cook at a boil for 1 minute. Remove saucepan from heat and stir peanut butter, applesauce, and vanilla extract into the hot mixture until smooth. Add oats and stir until evenly mixed.
- Drop oats mixture by spoonful onto waxed paper. Cool completely before removing from paper, at least 20 minutes.

CAN'T EAT JUST ONE OATMEAL COOKIES
I have made these chewy, mouth watering cookies since I was little girl, and when I got married, my husband always ate at least 6 at a time! My children would always ask me, "why do your oatmeal cookies taste so much better than anybody else's?! This was my Mother's recipe, and it really is the BEST! I dare you to eat "just one" !!

- Preheat oven to 350 degrees.
- Lightly grease baking sheets and set aside.
- Mix together the butter and sugar until creamy.
- Add eggs and molasses and beat well.
- Stir in the raisins and let them soak in this mixture while you sift the dry ingredients.
- Sift together the flour, baking soda, salt and cinnamon.
- Add to butter mixture.
- Stir in the oatmeal.
- Drop by rounded teaspoonfuls about 2" apart on greased baking sheet.
- Bake 10-12 minutes or until the center of the cookie is set.
- Makes about 8 - 10 dozen irresistible cookies ").
- Cookies can be cooled on foil spread on a counter or table.
