ULTIMATE GRILLED CHEESE
A classic grilled cheese taken to another level with the simplest ingredients and a little time. I recommend serving with a bowl of tomato soup.

- Assemble the sandwich by placing Cheddar and mozzarella cheese on the bread. Season with oregano, salt, and pepper.
- Heat butter in a pan over medium-low heat. Add sandwich and cook until cheeses melt, 3 to 5 minutes, increasing heat if needed. Flip and cook until golden brown, 3 to 5 minutes more.
- Cut in half and top with parsley and chives.

- Heat the butter in the skillet over medium heat. Add 2 bread slices. Top each with one-quarter of the cheese and 2 strips bacon. Spread 2 bread slices with some of the dressing and press them on top of the sandwiches, dressing-side down. Cook until the cheese melts and the bread is golden, 3 to 4 minutes per side. Repeat to make 2 more sandwiches, adding more butter as needed.

Buttery Hawaiian rolls with melted provolone and cheddar cheese.

Steps:
- Preheat oven to 350 degrees F.
- Spray a 9x13-inch baking pan with nonstick cooking spray; set aside.
- Without pulling the rolls apart, cut them in half and lay them on a clean work surface.
- Spread 2 Tablespoons of mayonnaise on the inside of each half of the rolls.
- Place the bottom half of rolls in the the prepared baking dish.
- Top with sliced cheddar cheese and sliced provolone cheese.
- Place top half of rolls on top.
- Brush on melted butter.
- Cover baking dish with foil and bake for 10 minutes.
- Remove foil and bake for an additional 10 minutes, or until cheese is melted and rolls are golden brown.
- Cut rolls apart and serve.

- Butter one side of each slice of bread, using all of the butter. Place 4 of the slices, buttered side down, on a parchment-lined counter or a cutting board.
- Spread 1/4 of the fromage blanc on the plain side of each of those 4 slices, then top each with 1/4 of the Gruyère, 1/4 of the Cheddar, and 1/4 of the Havarti. You may need to use your hand to squash the cheese a little to keep it from falling off the bread. Top each teetering tower of cheese with one of the remaining bread slices, buttered side up.
- Heat a large skillet over medium heat for 2 minutes. Place 1 or 2 sandwiches in the pan, cover, and cook for 3 to 5 minutes, until the undersides are golden brown. Turn the sandwiches and press each one firmly with a spatula to flatten it slightly. Cover and cook for 3 to 4 minutes, until the undersides are well browned. Remove the lid, turn the sandwiches once more, and press firmly with the spatula once again. Cook for 1 minute, or until the cheese has melted completely into a quagmire of gooeyness.
