SOUTHERN SCALLOPED POTATOES
This delicious casserole hasn't been compromised by garlic and some other seasonings to detract from the traditional southern flavor, or gunked up with cheese to turn it into a gratin or doria. We enjoy this authentic southern dish year-round, so good in its creamy simplicity and subtle flavors. My family always expects it for Christmas dinner alongside the ham and cranberry chutney. Be your own judge regarding measurements. I learned from my grandmother and she never measured, so I've learned to guestimate on many of my recipes. NOTE: This dish can easily be frozen after baking, then thawed out and reheated. I do not recommend freezing without baking first, since potatoes will sometimes get mushy if frozen uncooked. I personally do not like a tin baking pan for this particular recipe, especially for freezing, since it can sometimes impart a "tinny" taste. Also, if this recipe is baked in a glass baking dish and then frozen, the glass will shatter if not at room temperature. So, if freezing in a glass baking dish, I recommend baking and freezing in Corning Ware since it will not break.

Steps:
- Boil the potatoes until they're halfway done, then cut into slices about 1/4 inch thick.
- Set aside.
- Slice three onions and sauté in butter until transparent.
- Sprinkle flour into this mixture and continue to sauté until flour begins to darken a little.
- Add milk and continue stirring until the sauce is at the consistency you like.
- It should be medium-thick.
- Add sliced potatoes to the pan and mix very well.
- Add salt and pepper to taste.
- Pour into a greased baking dish and bake casserole at 350 degrees until it turns a bit brown.
SMOKY SCALLOPED POTATOES

- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch casserole dish with 1 tablespoon butter. Melt the remaining 2 tablespoons butter in a large saucepan. Once the butter foams, add the shallot and garlic and saute until softened, 3 to 4 minutes. Add the flour and cook, stirring frequently, until golden, about 2 minutes. Season with salt and pepper and add the half-and-half, smoked paprika and potatoes. Bring to a low simmer and cook for 5 minutes.
- Pour half of the potato mixture into the buttered casserole dish. Shake the pan to arrange the potatoes in a single layer. Sprinkle half of each of the cheeses on top of the bottom potato layer. Add the remaining potatoes and shake again to arrange in a layer. Sprinkle on the remaining cheese, cover with foil and bake 45 minutes, or until bubbling. Remove the foil and place back in the oven for another 15 minutes, or until the potatoes and cheese are golden and browned. Let stand 15 minutes before serving.
MAMA'S SCALLOPED POTATOES

- Preheat the oven to 375 degrees F. Spray a 3-quart baking dish with cooking spray.
- In a large bowl, combine the evaporated milk, flour, paprika, seasoning salt, nutmeg, cayenne, 3/4 teaspoon kosher salt and 1/2 teaspoon black pepper. Add the potatoes, onions and zucchini and toss to coat, making sure to separate the vegetable slices.
- Pour the mixture into the prepared baking dish, distribute the vegetables evenly, and then flatten the top with a rubber spatula. Sprinkle with the Parmesan and bake until crispy on top and the potatoes are tender, 45 minutes to 1 hour.
- Let sit for 10 minutes to set. Garnish with green onions before serving.

- In a saucepan over medium heat, melt 3 teaspoons of butter. Stir in flour, salt and pepper until smooth. Gradually add milk. - Heat oven to 350°F. Grease 2-quart casserole with shortening or cooking spray.
- In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. - Combine 1/2 cup mayonnaise and next 3 ingredients in a saucepan.
- Gradually add milk, and cook, stirring constantly, over medium-low heat 8019 minutes or until thicken. Remove from heat.

OLD-FASHIONED SCALLOPED POTATOES

- Preheat oven to 400°. In a skillet, cook the onion and 2 tablespoons of the butter over moderately low heat, stirring, until it is very soft. In a heavy saucepan, melt 6 tablespoons of the remaining butter over moderately low heat, whisk in the flour, and cook the roux, whisking, for 3 minutes. Add the milk, scalded, in a stream, whisking, and bring the sauce to a boil. Simmer the sauce, whisking, for 1 minute and add salt and pepper to taste.
- Peel the potatoes and slice them ⅛-inch thick. Spread about one third of the sauce in the bottom of a well-buttered 3-quart gratin dish at least 2 ½-inches deep, cover it with a layer of potato slices, overlapping the slices slightly, and cover the potatoes with one third of the onions. Sprinkle the onions with one third of the Cheddar and continue to layer the remaining sauce, potatoes, onions, and Cheddar in the same manner. Sprinkle the top with bread crumbs, and dot it with the remaining 1 tablespoon butter, cut into bits.
- Bake the mixture, covered with foil, in the middle of preheated oven for 20 minutes. Remove the foil and bake the potato mixture for 35 minutes more, or until the top is golden and the potatoes are tender.

- In a small pot, melt the butter and fry the garlic until it's just starting to brown. Add the flour, salt and pepper. whisk until there are no lumps.

- Preheat oven to 325 degrees with a rack set in the lower third of oven. Combine sliced potatoes and milk in a large saucepan over high heat. Bring to a boil, and immediately reduce heat to low; cover and simmer until potatoes are just tender, about 3 minutes.
- Place a colander over a large bowl and drain potatoes, reserving milk. You should have 2 cups of thick, starchy milk. If potatoes have absorbed more than 1 cup of milk, add enough milk to bring the reserved milk volume to 2 cups.
- Rub a 3 1/2-quart oval baking dish with garlic and butter. Arrange sliced potatoes in the baking dish; season with salt and pepper. Dot with remaining butter and pour over reserved cooking milk and cream. Sprinkle cheese over top.

- Sauce. In a medium sauce pan over medium low heat, melt butter. Add minced garlic and lightly brown. Whisk in flour. It will soak up the butter and garlic and form a paste. Whisk in chicken broth. Continue to whisk until all lumps are gone. Mixture will become very thick again. Whisk in cream. When well incorporated, add cream cheese. Whisk until smooth. Cook on medium low for 2-3 minutes, whisking to prevent scorching, until sauce thickens up.
- Layers. In the bottom of the 9x13 pan, layer in 1/2 of the sliced potatoes. Cover with ALL of the slivered onions. Salt & pepper the potatoes and onions and pour 1/2 of the cream sauce over them. Top with 1/2 of the shredded cheddar cheese. Repeat layers of potatoes, cream and cheese to finish dish.
- Bake. Cover with foil and bake in preheated oven for 40 minutes. Uncover and continue to bake for another 20-25 minutes until cheese begins to brown and there is bubbling around the edges. Remove from oven. Let sit 5-10 minutes. Garnish with clipped chives or chopped parsley. Serve!
