SHRIMP STIR FRY RECIPE WITH GARLIC & GINGER
Other vegetables that you can easily add to this recipe: snow peas, canned straw mushrooms (halved), canned baby corn (cut small pieces), fresh bean sprouts, red bell pepper (julienned), julienned carrots. If you add more ingredients, increase the amount of seasoning and garlic/ginger/green onion.

- In a small bowl, combine oyster sauce, soy sauce and cilantro and set aside.
- Pat the shrimp very dry with paper towels. In a medium bowl, add shrimp and cornstarch and toss to coat.
- In a wok or large saute pan over high heat, add half the cooking oil and swirl to coat the bottom of the pan. When the wok is very hot, add the shrimp in a single layer and cook partially until one side is nicely seared, about 1 minute. Flip and sear the other side of each shrimp, about one more minute. They don't need to be cooked all the way through yet. Remove them to a plate and set aside.
- Turn the heat down to medium and let wok cool off a bit to prevent the aromatics from burning. Add the remaining cooking oil and add green onion, garlic and ginger and stir fry for a minute until fragrant. [If you are using other vegetables, like snow peas, add them to the wok now and stir fry for a minute or until the vegetables are bright in color and crisp-crunchy]
- Pour in the sauce mixture and add the shrimp back into the pan. Stir fry for another minute or so until shrimp is cooked through. Serve immediately.

Steps:
- Peel, devein and butterfly the shrimp, leaving tails intact.
- Wash asparagus and snap off tough ends. Cut each spear into 4 diagonal cuts.
- Heat 2 tbsp oil in a hot wok. Add half the shrimp and stir fry for 30 seconds.
- Remove shrimp from wok with a slotted spoon and set aside. Repeat with remaining shrimp.
- Add remaining oil to hot wok. Stir in asparagus, thinly sliced ginger and garlic. Stir fry for 30 seconds, stirring constantly so that garlic does not burn.
- Put shrimp back into the wok with the wine, the vinegar, soy sauce, sugar and sesame oil. Stir fry for 30 seconds.
- Pour in water and stir fry for another 30 seconds or until shrimp are just cooked through.
- Arrange shrimp and asparagus on a platter and serve with steamed rice, if desired.

CANTONESE STIR-FRIED LOVER'S SHRIMP

Steps:
- Peel and devein shrimps if necessary; rinse and drain.
- Combine ingredients for marinade; add shrimp, allowing to sit at least 15-20 minutes.
- Prepare seasoning sauce in a small bowl and set aside.
- Trim ends off snow peas; parboil and set aside.
- Heat 1 tbsp oil in wok; stir-fry the snow peas for a few moments, until crisp-tender.
- Season with salt, and place in the center of serving platter.
- Heat 8 tbsp oil in wok; add shrimp and stir-fry until shrimp change color and curl; remove shrimp with a strainer; drain shrimp and set aside.
- Drain all oil from wok except 1 tbsp ;stir-fry chopped scallions and minced ginger for a few seconds until fragrance is released; then stir in shrimp.
- Pour in seasoning sauce, stirring thoroughly.
- Remove half of shrimp and place them to one side of the platter.
- Add the 3 tbsp ketchup to the shrimp remaining in wok and stir briskly.
- Remove those shrimp, placing them on the other side of the platter.
- (optional: add 1 1/2 tsp. chile paste to the ketchup to go on one side for a spicy contrast) Serve hot with steamed rice.

- First, prepare the shrimp. Toss the shrimp with 1 teaspoon sugar, baking soda, and 1/4 cup water, gently mixing everything together for a couple minutes. Cover and refrigerate for 2 hours and then rinse under cold running water for 5 minutes to wash away any sugar and baking soda. Pat the shrimp dry thoroughly with a paper towel. Marinate the shrimp with 1/2 teaspoon sesame oil, 1 teaspoon cornstarch, 1/4 teaspoon salt and pinch of white pepper and set aside while you prepare the rest of the ingredients.
- Now, since the dish comes together very quickly, and you want to avoid overcooking the shrimp, it's time to blanch the celery and red bell pepper. Bring a pot of water to a boil and drop the celery and red bell pepper in. After 30 seconds, drain the vegetables and shock them in ice water. Drain completely and set aside.
- Heat 1 1/2 tablespoons oil in a wok over medium heat. Add the minced ginger and chopped scallion and cook for 1 minute. Then turn up the heat to high and add the shrimp. Once the shrimp have just begun to turn pink, add the blanched celery and red bell pepper, along with the last 1/4 teaspoon sugar, the oyster sauce, and the cashews. Mix everything well, and season to taste with salt and white pepper. Serve.
