1 1/2 cups Gold Medal™ all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups old-fashioned oats
1/2 cup plus 2 tablespoons unsalted butter, softened
1 cup plus 2 tablespoons packed brown sugar
1 egg
2 tablespoons milk
3/4 teaspoon vanilla
2 baking apples, peeled, chopped
20 caramels, unwrapped
2 tablespoons water

Steps:

  • Heat oven to 325°F. Line cookie sheets with cooking parchment paper.
  • In medium bowl, mix flour, baking soda and salt with whisk; stir in oats. In large bowl, beat butter and brown sugar with electric mixer on medium speed until creamy. Add egg, milk and vanilla; beat 2 minutes or until light and fluffy. On low speed, beat in flour mixture until blended. Stir in apples.
  • Onto cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 14 minutes or until golden. Remove from cookie sheets to cooling racks; cool completely.
  • In 1-quart saucepan, cook caramels and water over low heat 7 minutes, stirring until smooth. Drizzle warm glaze over cookies. Let stand 15 minutes or until set. Store tightly covered up to 5 days.

So, they're just the treat you'll want to nibble while standing along the sidelines rooting on the school team. And since a batch makes 40 cookies, you'll have enough to share with your fellow fans. All you need to get started is 20 minutes, Betty's sugar cookie mix and a package of apple cider mix.

1 package (0.74 oz) apple cider instant drink mix (do not prepare)
1 1/2 teaspoons ground cinnamon
1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
1 egg
3/4 cup finely chopped peeled apple (1 medium)

Steps:

  • Heat oven to 375°F. In small bowl, mix sugar, 1 teaspoon of the apple cider drink mix and 1/2 teaspoon of the cinnamon; set aside.
  • In large bowl, stir cookie mix, softened butter, egg, remaining apple cider drink mix and cinnamon with spoon until soft dough forms. Stir in apple pieces until combined. Shape dough into 40 (1 1/4-inch) balls. Roll balls in sugar-spice mixture. Place 2 inches apart on ungreased cookie sheets. Discard sugar-spice mixture after rolling balls.
  • Bake 7 to 9 minutes or until edges are set and light golden brown. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes. Store covered in airtight container.

1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon baking powder
1 cup softened butter
1 (7.4 ounce) box apple cider drink mix (such as Alpine® Spiced Apple Cider)
1 cup white sugar
½ teaspoon salt
2 eggs
1 teaspoon vanilla extract
1 (14 ounce) package caramel bits (such as Kraft®)

Steps:

  • Whisk flour, baking soda, cinnamon, and baking powder together in a bowl.
  • Combine butter, apple cider drink mix, sugar, and salt together in another bowl. Beat using an electric mixer until light and fluffy. Beat in eggs 1 at a time. Add vanilla extract and mix well. Add the flour mixture gradually; mix until just combined. Refrigerate dough for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Microwave caramels in a microwave-safe bowl until softened, about 20 seconds. Flatten caramels using the bottom of a glass.
  • Scoop cookie dough into balls about 1 tablespoon each. Flatten each ball slightly in your palm. Sandwich a caramel between 2 pieces of dough; pinch closed. Repeat with the remaining cookie dough and caramels. Place cookies 2 inches apart on the prepared sheets.
  • Bake in the preheated oven until very lightly browned around the edges, 12 to 14 minutes. Slide parchment off of the baking sheet, onto your counter. Let cookies cool on the parchment.

I ended up cutting the caramels into 6-7 chunks and mixing them in to the rest of the batter. Ah well, the important thing is that I cooked something! Tried these today and the flavor was really good, but we had a problem with the caramel leaking out the bottom while it was baking and the cookies were a tad too soft and crumbly. Would adding a little more flour make the cookies chewier and denser? Oh no. You could try adding more flour. Did you let them sit on the pan after baking to cool for a while? That's key.

1 cup brown sugar, packed
1/2 cup white sugar
1 egg
1/4 cup water
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon ground cinnamon
3 cups rolled oats
1 (4 1/2 ounce) package dried apples, chopped into small pieces
1 (11 ounce) bag caramels, chopped (Kraft Premium Caramel Bits were used)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
  • In a medium bowl, cream together the shortening, brown sugar and white sugar. Stir in the egg, water and vanilla. Combine the flour, salt, baking soda and cinnamon, stir into the creamed mixture. Stir in the rolled oats. Finally, stir in dried apple and caramel bits.
  • Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Cool on baking sheets for a couple of minutes before removing to cool on wire racks.

  • Bake 12-14 minutes, or until very lightly browned around the edges. Once the cookies are done, carefully slide the parchment or silpat off of the baking sheet right out onto the counter. Allow cookies to partially cool on the parchment/silpat. When cookies are cool enough to be firm but still slightly warm, carefully twist off of parchment and allow to finish cooling upside down (either on the parchment/silpat or on a rack).
