I received this recipe from a friend of mine and have used this for years. My family requests this one often. It's a light meal that everyone will enjoy. Serve with steamed rice.

- Preheat oven to 475. Line a rimmed baking sheet with foil. In a small bowl (or glass measuring cup), whisk together honey, vinegar, thyme, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper.
- Place chicken pieces on prepared pan; brush with honey glaze to coat. Roast, brushing twice with glaze (do not baste during last 5 minutes of cooking), until chicken is deep brown on the outside and opaque throughout, 20 to 25 minutes.

- In a saucepan boil the sugar and sherry for 5-6 minutes. Carefully stir in the soy sauce, sugar and vinegar. Simmer over medium heat, stirring often, for 5-6 minutes until slightly thickened. Cool. Pour all into a gallon zip-lock bag and add chicken. Marinate 3-4 hours or overnight.
- Stir together the mayonnaise, mustard, honey and hot sauce and refrigerate.
- Grill chicken breast over a medium fire for 3-4 minutes per side, brushing with marinade often. After you have cooked each side 3-4 minutes, shake on the sesame seeds and cook each side an additional 3 minutes per side.
- Spread buns with honey mustard sauce and serve!

- Saute until translucent.
- Sprinkle chicken with paprika and salt and pepper to tast and add to skillet.

My grandfather is diabetic so I substituted dill relish for the sweet relish, pure fruit spread for the jam and Brown Sugar Twin for the sugar. *I only use skinless, boneless chicken breasts, but the original recipe calls for thighs.

- Pat the chicken dry and season all over with salt. Heat 1 tablespoon oil in a large skillet over medium. Add the shallots and cook, turning frequently, until lightly caramelized on all sides, about 5 minutes. Transfer the shallots to a medium bowl and set aside.

- In small bowl, mix olive oil, honey, mustard*, orange marmalade, paprika, pepper flakes, garlic and stock. If you want, use a hand blender to get all the ingredients combined well. Set aside.
- Heat olive oil in large skillet over medium-high heat. If breasts are big, cut in half horizontally. Season flour with salt and pepper, and dredge chicken in flour. Fry in pan about 2-3 minutes each side.
- Pour sauce around chicken and cover. Lower heat to medium and simmer for about 10-12 minutes.
- Remove chicken to plate and pour sauce over top and serve.
- *NOTE* I used a mustard called Bone Suckin' Sweet Hot Mustard which I bought at a local kitchenware store (Lakeland Ltd.) here in the UK. It contains ingredients such as molasses, brown sugar and jalapeno peppers. You can use a similar type of mustard if you can find one or just use dijon. However, I think that a bold flavored mustard like the one I used is what really brought this dish together. - Heat oven to 425 degrees. In a large heatproof bowl, whisk mustard powder with ¼ cup very hot water until well combined; let stand 5 minutes.
