CARIBBEAN SWEET CORNBREAD RECIPE
Caribbean Cornbread is extremely moist with bits of corn, crushed pineapple and the perfect amount of sweetness.

- Preheat oven to 325
- In a large bowl, combine the flour, corn meal, baking powder, and salt. Set aside.
- In a mixer, cream the butter and sugar. While the mixer is running, add the eggs one at a time beating well after each egg.
- Continue running the mixer and slowly one at a time, add the creamed corn, pineapple, cheese and the 1/4 cup canola oil. Mix until well blended. Slowly add the bowl of dry ingredients, and mix until well blended.
- Grease a 9x2-inch round metal pan (or 9x9 square baking dish) with the remaining 2 tablespoons of canola oil and set in the oven for 5 minutes. Remove pan from oven and immediately pour the batter into the pan and bake until a toothpick stuck in the center comes out clean, 45-50 minutes. The cornbread should be golden brown when done. (You can also separate the mixture into into two round greased pans if preferred.)

Pineapple is the surprise ingredient in this Caribbean-style cornbread! Originally from a food section newspaper article about a restaurant in Anguilla. It's delicious with ham and will go well with summer barbeques!

Steps:
- Preheat oven to 325°.
- Butter and flour a 9-inch square glass cake pan (you can use a metal pan but the recipe states that glass works better).
- In a medium bowl, whisk together flour, cornmeal, baking powder and salt; set aside.
- Using an electric mixer, cream butter and sugar.
- While mixer is running, add eggs, one at a time, beating well after each addition.
- Add corn, pineapple and cheese; mix to blend.
- At low speed, add flour mixture and mix until well blended.
- Pour batter into pan and bake until golden brown around edges and a tester inserted in the center comes out clean, about 1 hour.

CARIBBEAN-INSPIRED CORNBREAD
This recipe is a sweet cornbread that includes West Indian mixed essence. Mixed essence has a deliciously unique flavour and can be found in many West Indian drinks and baked goods. - Preheat oven to 400 degrees F (200 degrees C).
- In a medium-sized bowl combine the wet ingredients - egg, milk, vanilla, mixed essence and melted butter.
- Follow by combining the dry ingredients (flour, cornmeal, sugar, salt and baking powder) in a large bowl.
- Slowly add the wet ingredients to the large bowl and stir until all ingredients are moistened and well combined. Try not to over mix your batter
- Pour the batter into a 12" greased loaf pan.
- Bake in the oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Let your cornbread stand for at least 15 minutes before serving.

According to Helen Willinsky, author of "Jerk From Jamaica: Barbecue Caribbean Style" (Ten Speed Press, 2007), festival is a relatively new entry into the Jamaican culinary canon, "but it is already a must." A cousin of cornbread and hush puppies, festival is a fluffy yet crisp cornmeal-based fritter that is often seasoned with nutmeg or vanilla, then shaped into "fingers" or long buns and fried. (To make them vegan, substitute an equal quantity of full-fat coconut milk or the whole milk.) A touch of nutmeg adds warmth, and salt balances and enhances the sweetness of the corn. Serve festival with jerk chicken, ribs or fish.

- Heat oven to 200 degrees. Line a sheet tray with paper towels and set aside.
- In a large bowl, whisk together flour, cornmeal, sugar, salt, baking soda and nutmeg. With a wooden spoon or your hands, mix in just enough milk to create a soft dough, about the same texture of Play-Doh. (The amount you need will depend on the humidity of your kitchen, and the amount of moisture in your flour and cornmeal.)
- In a Dutch oven or large pot, heat oil to 365 degrees. While oil heats, using a bench scraper or butter knife, divide dough into 10 pieces. Roll each between your hands or on your counter into cylinders about 3 to 4 inches long and 1 inch thick. (Avoid overworking the dough or the festival may be tough.)
- Fry 4 or 5 festival at a time, flipping them after 1 minute, until golden brown on the outside, about 2 minutes total. (Oil temperature will lower once you add festival; they fry best around 330 to 340 degrees. If festival appear to be browning too quickly, lower your burner.) Using a wire spider or slotted spoon, remove festival from oil and transfer to paper towel-lined baking sheet. Cut into one to ensure the inside is cooked all the way through; it should not look wet. If it is not fully cooked, cook each fritter 30 seconds to 1 minute longer. Transfer to oven to keep warm. Fry remaining festival. Serve hot.

this is another level of cornbread...its moist, tasty and very sophisticated with a taste that leaves u wanting more and more. u never make 1 and become satisfied with it. i am from the west indies so i decided 2 caribbean-ise the cornbread and i am sure that u will love it just as much as i did. happy eating! :)

- Spray baking dish with cooking spray and pre-heat oven to 400 degrees.
- whisk together all the dried ingredients and set aside. in another bowl, whisk together the eggs, milk and melted butter (i used i cant believe its not butter in order to lessen the amount of fat and it worked perfectly well) and add to the dried ingredients, whisking all the way until all the ingredients are well incorporated. then add in peppers, creamed corn, celery and onions. mix well and set aside for 15 minutes in order for the cornmeal to soak up all the liquids. this ensures a much more moist cornbread.
- place in oven for 20-25 minutes or until the knife comes out clean.
