Best low carb bread image

This is the best low carb bread I have tried. With just 2.1 net carbs per slice and less than 5 net carbs per serving, you cannot go wrong with this.

Number Of Ingredients 8

1 1/2 cup almond flour
1 tbsp Baking powder
2 1/2 cup shredded Mozzarella cheese
2 Tb sp Cream cheese ((scoop it when soft))
2 large Egg ((beaten))
7 g active dry or instant dry yeast ((optional but highly recommended))
Sesame seeds ((optional))
1 Tbsp erythritol ((optional))

Steps:

  • Preheat oven to 400ºF
  • Mix dry ingredients ( almond flour, yeast, erythritol, and baking powder) together and set aside
  • Put the cream cheese, and shredded Mozzarella cheese in a microwave safe bowl and microwave in 30 seconds iintervals until cheese is evenly melted. Remember to stir in between ( helps to distribute the heat. ) it usually takes me about 1 min 30 secs in total sometimes 2 mins.
  • Pour dry ingredients into the microwaved cheese mix the and mix with your hands or with a spatula then add the cold eggs. Mix till a ball of dough forms
  • Transfer to a loaf pan lined with parchment
  • Sprinkle sesame seeds on top if using. Then bake in the oven for 12 to 15 mins or until the top is golden brown
  • Bring out of the oven, allow to cool and enjoy.

12 egg whites (separated from whole eggs)
¼ cup powdered Allulose
½ teaspoon Redmond Real Salt
½ teaspoon cream of tartar (to help stabilize the whites)
1 cup Jay Robb unflavored egg white protein
Primal Kitchen Avocado Oil Spray
Optional: Add back in 1-2 tablespoon egg yolk powder (or reserved egg yolks), improves texture and flavor, but adds fat.

Steps:

  • Preheat the oven to 325 degrees F.
  • Separate the eggs (save the yolks for another recipe like my keto ice cream, hollandaise, mayo or lemon curd), and place the whites into a large bowl or stand mixer. Add the allulose, salt and cream of tartar if using and whip the whites for a few minutes until VERY stiff.
  • Turn the mixer to low and gently mix the Jay Robb egg white protein powder into the whites.
  • Grease a bread pan with Primal Kitchen Avocado oil spray and fill with protein sparing Wonder Bread mixture.
  • Bake for 30 minutes or until golden brown. Turn oven off and leave bread in the oven for 15 minutes to avoid the bread from falling.
  • Let completely cool before cutting or the bread will fall. Cut into slices.
  • Store leftovers in the fridge for up to 4 days or in the freezer for up to a month.
  • OPTION: Make bread into 18 buns on a greased cookie sheet bake for 13-15 minutes.

  • Drain a can of chicken breast meat. In the US, a standard can is 5.5 oz, which will equate to 95g-100g after it has been drained. If possible, use low sodium chicken breast, otherwise fill the can with water and drain again once or twice (see video for example).
  • In a small food processor, combine chicken breast, mozzarella, and egg white. Process until it becomes a paste, scraping down the sides as necessary.
  • Sprinkle the gelatin, sodium caseinate and transglutaminase on top of the chicken paste and process for 20 to 30 seconds. Scrape down the sides and process for another 20 to 30 seconds to thoroughly combine.
  • Preheat a Dash Mini Bundt cake maker (see note below on making chaffles). While the Dash is preheating, the transglutaminase will start binding your chicken.
