This super salmon recipe comes from my dear mother-in-law. She's one of the best cooks I know and one of the best mothers-a real gem. -Cathy Clugston, Cloverdale, Indiana

- Cook pasta according to package directions. Meanwhile, in a large bowl, combine the soup, mayonnaise, milk and cheese until blended. Stir in peas, salmon and onion. , Drain pasta; add to salmon mixture. Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.

CRANBERRY CATCH OF THE DAY
Most folks may not think of serving fish for Christmas. But a colorful cranberry sauce and pleasant pecan dressing make this entree elegant.

- Preheat oven to 350°. In a large skillet over medium heat, cook and stir celery and onion in 6 tablespoons butter until tender. Stir in bread cubes, pecans, orange juice, orange zest and 1/2 teaspoon salt. Transfer to a greased 13x9-in. baking dish. Arrange fillets over stuffing. , Melt remaining butter; drizzle over fillets. Sprinkle with remaining salt. Bake, uncovered, 25-28 minutes or until fish flakes easily with a fork. , In a small saucepan, combine sugar and cornstarch; whisk in water and orange juice until smooth. Bring to a boil, stirring constantly. Add cranberries; cook 5 minutes or until berries pop. Stir in orange zest. Serve with fish and stuffing.

Here's a match made in heaven-two tasty fish fillets in a Valentine's Day shape! Moist and tender, this succulent orange roughy from our kitchen staff will win hearts with its memorable blend of garlic, dill and lemon.

- Cut each piece of parchment into a 12-in. heart. Brush paper with 1 tablespoon butter. Place a fillet on one side of each heart. Sprinkle with dill, lemon-pepper and garlic powder. Drizzle with remaining butter. Arrange lemon slices over fish. , Fold parchment hearts in half. Beginning at the tip of the heart, fold edges together, 2 in. at a time. Place on a large baking sheet. , Bake at 375° for 20-25 minutes. With a scissors, cut an X through top of parchment; fish should flake easily with a fork. Transfer each parchment heart to a dinner plate. Garnish with dill sprigs.

CATCH OF THE DAY LASAGNA
A light and delicious lasagna that has hot peppers to spice up a tangy tomato sauce with sockeye salmon and green beans to make a healthy alternative to the regular lasagna with ground beef.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Cook pasta according to package directions and set aside.
- Chop peppers and add tomato sauce in a saute pan with drained mushrooms until heated through evenly adding canned salmon to the mixture at the end stirring to blend salmon with tomato sauce
- In medium sized bowl combine cottage cheese, eggs and green beans together until thoroughly mixed.
- In a 13" by 9" by 2" pan spread sauce to cover the bottom of the pan.
- Place 3 noodles over top of sauce and then spread cottage cheese mixture over the noodles.
- repeat the layers once more ending with tomato sauce on top and grated cheese covering everything on the surface of lasagna.
- Place in oven for approximately one hour or until cheese and noodles are nicely melded together.
