TARRAGON SCENTED CHANTERELLES AND SHALLOTS



Tarragon Scented Chanterelles and Shallots image

Number Of Ingredients 6

2 tablespoons canola oil
2 pounds fresh chanterelle mushrooms, torn apart into uniform pieces
1/2 cup sliced shallot rings (about 6 or 8 large shallots)
Salt and freshly ground black pepper
1 tablespoon chopped fresh tarragon leaves
1 tablespoon butter

Steps:

  • Heat 1 tablespoon of canola oil in a large pan over high heat. Add 1/2 of the mushrooms and shallots in 1 layer to sear or brown them evenly. After a few moments, stir and continue to cook for about 5 minutes. Season with salt, freshly ground pepper and add half of the tarragon and the butter and stir to incorporate. Repeat this process again to keep mushrooms from cooking in their own liquid and getting too wet. Serve warm or at room temperature.

A simple, safe, and tasty way to prepare delicious fresh chanterelle mushrooms, which are so abundant in Northwest forests during the fall season. They have a sweet, peach-like flavor that is enhanced by red wine and a wonderful complement to meat. This is a hearty side dish to accompany your favorite grilled meat like a flatiron steak or other favorite red meat.

3 tablespoons olive oil
2 cloves crushed garlic
1 pound fresh wild chanterelle mushrooms, cleaned and quartered
1 teaspoon butter
1 pinch kosher salt and freshly ground black pepper to taste
½ cup port

Steps:

  • Heat olive oil in a cast iron skillet over medium heat until sizzling but not smoking. Stir in garlic. Add chanterelles and butter. Reduce heat to medium-low and cook, stirring frequently, until most of the excess liquid evaporates, about 10 minutes. Season with salt and pepper.
  • Increase heat to high and carefully pour port into the skillet; stir until reduced, about 2 minutes. Serve steaming hot.
