2 -3 garlic cloves, minced
2 (10 ounce) bags spinach
1 (15 ounce) can cannellini beans, drained and rinsed
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • In a large nonstick skillet, heat 1 tablespoon of the oil, over medium heat.
  • Add the garlic and cook until fragrant, about 1 minute.
  • Add one bag of spinach and cook for 2 minutes until wilted. Repeat with the remaining bag of spinach. Let the mixture cool for a few minutes.
  • Place the remaining olive oil, spinach mixture, cannellini beans, lemon juice, balsamic vinegar, salt, and pepper in the bowl of a food processor.
  • Blend until the mixture is smooth.

1 pound bulk hot Italian sausage
1 medium onion, finely chopped
4 garlic cloves, minced
1/2 cup dry white wine or chicken broth
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon dried thyme
1 package (8 ounces) cream cheese, softened
1 package (6 ounces) fresh baby spinach, coarsely chopped
1 can (15 ounces) cannellini beans, rinsed and drained
1 cup chopped seeded tomatoes
1 cup shredded part-skim mozzarella cheese
1/2 cup shredded Parmesan cheese
Assorted crackers or toasted French bread baguette slices

Steps:

  • Preheat oven to 375°. In a large skillet, cook sausage, onion and garlic over medium heat until sausage is no longer pink, breaking up sausage into crumbles; drain. Stir in wine, oregano, salt and thyme. Bring to a boil; cook until liquid is almost evaporated., Add cream cheese; stir until melted. Stir in spinach, beans and tomatoes; cook and stir until spinach is wilted. Transfer to a greased 8-in. square baking dish; if using an ovenproof skillet, leave in skillet. Sprinkle with cheeses., Bake until bubbly, 20-25 minutes. Serve with crackers.

  • Place water, garlic and spinach in a large skillet. Cook, covered, over medium heat just until tender, 2-3 minutes, stirring occasionally. Stir in remaining ingredients; heat through.

This dish is very soothing, healthy, and yummy. You can use any white bean in place of the cannellini beans, and canned beans would work just as well as dried (no need for soaking and cooking).

1 1/4 cups cannellini beans, soaked in water over night
4 tablespoons olive oil
1 slice white bread
1 onion, chopped
3 -4 tomatoes, peeled and chopped
1 teaspoon paprika
1 lb spinach, cleaned
1 clove garlic, halved
salt
fresh ground black pepper
2/3 cup cold water

Steps:

  • Simmer the beans in water until tender, about an hour, and drain.
  • Fry the bread in 2 T of oil until golden brown, set aside.
  • Saute the onion in 2 T of oil until soft, add tomatoes and continue cooking over low heat.
  • Add the paprika and spinach and cook until the spinach has wilted.
  • Stir in the cannellini beans and season with salt and pepper.
  • Using a food processor (or a regular old knife and cutting board), mince up the garlic and fried bread.
  • Add to the spinach mixture, along with the water.
  • Cover and simmer gently for 20-30 minutes (adding more water if needed).
  • Serve with chunks of crusty bread.

Unlike traditional spinach dips, which are built around sour cream, this version gets its luscious texture from pureed part-skim ricotta cheese and fiber-rich cannellini beans.

5 ounces baby spinach (3 cups)
1 cup part-skim ricotta cheese
1 can (15 ounces) cannellini beans, drained and rinsed
1 tablespoon finely chopped fresh chives
1 1/2 teaspoons lemon zest
1 1/4 teaspoons coarse salt
Freshly ground pepper
1 fennel bulb, halved and thinly sliced
1 bunch radishes (about 6), halved, greens trimmed but left intact
12 small carrots, greens trimmed but left intact
1/2 large head cauliflower (about 1 pound), cut into florets and thinly sliced
3 stalks celery, halved lengthwise and then crosswise

Steps:

  • Preheat oven to 350 degrees. Make the dip: Wash spinach, leaving some water clinging to the leaves. Transfer to a large saucepan. Cover, and steam spinach over medium heat, stirring once, until wilted, 4 to 6 minutes. Remove spinach using a slotted spoon, and let cool. Squeeze out excess liquid using a kitchen towel; coarsely chop.
  • Pulse ricotta and cannellini beans in a food processor until smooth. Transfer mixture to a medium bowl. Add chives, lemon zest, and salt. Season with pepper. Stir in spinach. Transfer to a 1-quart baking dish.
  • Bake until bubbling, about 30 minutes. Season with pepper. Serve warm with crudites.
