For the Marinade:
1/2 cup soy sauce
3 garlic cloves (peeled and crushed)
1/4 cup seasoned rice wine vinegar
2 tablespoons honey
1 tablespoon fresh ginger root (peeled and grated)
4 medium green onions (chopped)
2 tablespoons toasted sesame oil
1 teaspoon toasted sesame seeds
Garnish: 2 tablespoons whole fresh cilantro leaves

Steps:

  • Gather the ingredients.
  • To make the marinade, in a large plastic zip top bag, combine the soy sauce , garlic, vinegar, honey, ginger, onions, sesame oil, and sesame seeds.
  • Add the chicken breasts, squeeze any excess air out of the bag and seal tightly. Transfer the bag to the refrigerator for 30 to 60 minutes.
  • Remove chicken from the fridge 20 minutes before you're going to start cooking. Prepare a grill or grill pan by coating it with a bit of cooking oil; heat to high.
  • Remove chicken from the marinade. Grill 6 minutes per side, until tender and fully cooked. Garnish with cilantro leaves and serve.​

2 tablespoons lemon juice
1 tablespoon canola oil
1 garlic clove, minced
1 jalapeno pepper, seeded and minced
2 teaspoons fresh ginger, minced
1/2 teaspoon ground cumin
6 boneless skinless chicken breasts
1 teaspoon canola oil
1/2 cup fresh ginger, minced
2 teaspoons sugar
1/3 cup water
1/4 cup soy sauce
1/4 cup rice vinegar
1 tablespoon sesame oil

Steps:

  • To make marinade: Combine soy sauce, lemon juice, oil, garlic, jalapeno, ginger and cumin in a plastic zipper bag.
  • Add chicken and seal bag.
  • Refrigerate a minimum of 2 hours or overnight.
  • To make Sesame Ginger Sauce: Heat oil in a small saucepan over medium heat.
  • Add ginger and sugar and a small amount of the water.
  • Cook until softened.
  • Remove from heat, add remaining ingredients.
  • Cover and refrigerate for a minimum of 2 hours or overnight.
  • Prior to serving, strain sauce (to remove minced ginger) and reheat.
  • Remove chicken from marinade and grill until no longer pink in center, about 5 min per side.
  • Thinly slice chicken and top with 1 tablespoon Sesame Ginger Sauce.

8 bone-in skinless chicken thighs (you can also use 6 skinless legs or breasts)
3 tsp sesame oil
2 tbsp lime juice
2 tbsp honey
4 tbsp reduced-sodium soy sauce (use gluten-free soy sauce if you prefer)
2 tbsp fresh ginger (grated)
4 garlic cloves (finely minced or pressed)
1 pinch salt and pepper
chopped green onions garnish (optional)

Steps:

  • Start by combining the sesame oil, lime juice, honey, soy sauce, grated ginger, minced garlic, and salt and pepper in a shallow baking dish. Whisk these ingredients together with a fork and set everything aside while you prepare the chicken.
  • Add the bone-in, skinless chicken pieces to the baking dish with the marinade, making sure the chicken pieces are well-coated in the marinade. Cover the dish with a lid or some plastic wrap. Refrigerate for 1-2 hours
  • This is a dish that you can prepare earlier in the day and leave it to marinate for several hours until it's time to grill.
  • When it's time to grill, remove the chicken from the fridge and let it rest at room temperature while you preheat the grill.
  • When your grill is ready, turn the heat down to medium-low (if your grill is notoriously hot like mine is, then grill on low to be safe) and place the chicken pieces on the grill.
  • Leave them for about 8 minutes, making sure you allow the bottom side to caramelize before turning. Flip them when they've achieved a nice brown colour on the bottom side and let them grill on the other side on medium-low (or low) for another 8 minutes, or until they reach an internal temperature of 165 degrees Fahrenheit (use an instant read meat thermometer).
  • Remove them from the grill and let them rest for 2-3 minutes. Garnish with some chopped green onions and serve!

2 skinless chicken breasts
1 tbsp vegetable oil
1 ½ tbsp sriracha chilli sauce (see tip below)
2 tsp grated ginger
2 tbsp clear honey
2 tbsp rice vinegar
240g pack Tenderstem broccoli
1 tbsp sesame seeds , toasted

Steps:

  • Slice each chicken breast lengthways into 2 thin pieces. Rub with the oil and season on both sides. Heat a grill pan and cook the pieces for 2-3 mins each side.
  • While the chicken is cooking, mix the chilli sauce, ginger, honey and vinegar with a little seasoning in a small bowl. Brush over the chicken as it cooks - wait until it is grilled on one side first before brushing, or it will burn.
  • Blanch the broccoli, divide between the plates and pour over the remaining sauce. Top with the chicken and sesame seeds.

1 3 1/2 to 4-pound chicken, cut up
1 clove garlic, minced
1 tablespoon fresh ginger, minced
1 tablespoon soy sauce
2 tablespoons sesame oil
1/4 cup fresh cilantro, chopped

Steps:

  • Toast the peppercorns in a small pan over medium heat for five minutes, or until they begin to smoke. Cool and crush finely with a mortar and pestle.
  • Wipe the chicken pieces dry with paper towels. Combine the peppercorn powder, garlic, ginger, soy sauce and sesame oil. Mix well and coat the chicken pieces with the marinade. Leave overnight or for two hours.
  • Preheat grill or broiler. Grill the chicken pieces, basting with the marinade, until they are cooked. Place them on a platter, sprinkle with the coriander and allow to rest for 10 to 15 minutes before serving, so that the juices develop.

2 cups white distilled vinegar
2 cups water
2 sticks butter
4 tablespoons Worcestershire sauce
4 tablespoons garlic salt
2 tablespoons ground black pepper
1 tablespoon white sugar
2 teaspoons minced garlic
2 (8 ounce) bone-in chicken breasts
4 chicken leg quarters

Steps:

  • Combine vinegar, water, butter, Worcestershire sauce, garlic salt, pepper, sugar, and minced garlic in a pot. Bring to a boil. Remove from heat and let marinade cool to room temperature, at least 30 minutes.
  • Place chicken in a resealable zip-top bag. Pour marinade over chicken, seal, and marinate, 8 hours to overnight.
