EASY SOURDOUGH BREAD



Easy sourdough bread image

Don't be daunted by making a sourdough bread starter at home - this easy cheat's version makes a lovely loaf without the stress

Number Of Ingredients 5

100g strong white bread flour
100g organic dark rye flour
0.5 x 7g sachet fast-action dried yeast
400g strong white bread flour
0.5 x 7g sachet fast-action dried yeast

Steps:

  • To make your starter, place all the ingredients in a bowl and add 250ml cold water. Mix together thoroughly with a spoon until you have a spongy mixture, then cover with cling film and leave at room temperature at least overnight, but up to 24 hrs if you have time.
  • To make the bread dough, tip the ingredients into a clean bowl and add 1 tbsp fine salt, 200ml cold water and your starter. Bring all the ingredients together to a dough, adding a splash more water if too stiff, then tip out onto a lightly floured surface and knead for at least 10 mins until smooth, elastic and springy (this will take 5-7 mins in a mixer with a dough hook). Place the dough in a clean, lightly oiled bowl, cover with cling film and leave until doubled in size - about 1 hr at room temperature, 3 hrs in the fridge (see tips, below).
  • Tip the dough onto a floured surface and gently shape into a round - you don't want to knock too much air out of the dough. Dust a piece of baking parchment heavily with flour and sit the dough on top. Cover with a tea towel and leave to prove for 1 hr until doubled in size.
  • Heat oven to 220C/200C fan/gas 7. Place a sturdy flat baking tray on the middle shelf of the oven and a smaller tray with sides underneath. Dust the dough with flour and slash with a utility knife. Slide the bread onto the hot tray on top and throw a few ice cubes (or pour some cold water) onto the tray below - this creates a burst of steam, which helps the bread form a nice crust. Bake for 25-30 mins until the loaf sounds hollow when tapped on the bottom. Leave the bread to cool completely.

This crusty, chewy, tangy bread can't be beat. You'll be shocked at how simple it is to create such a professional loaf at home. Glossy, crunchy crust. Resilient, airy crumb. Baking inside a Dutch oven (set in your kitchen oven) does an excellent job simulating the effects of a professional bread oven.

3 cups room-temperature water
2 ½ teaspoons salt
1 cup sourdough starter
6 cups bread flour
1 tablespoon cornmeal, or more as needed

Steps:

  • Mix water and salt together in a very large bowl. Add sourdough starter and whisk vigorously to mix and aerate; stir in 3 cups bread flour until smooth. Stir in remaining 3 cups bread flour until dough is completely mixed.
  • Cover bowl and set aside until dough is bubbly and increased in volume, 12 to 15 hours.
  • Turn dough on to a well floured work surface using floured hands. Turn dough several times to cover with flour. Return dough to an oiled bowl and let rest until dough is doubled in size but not risen enough to collapse, 2 to 3 hours.
  • Preheat an oven-safe, lidded Dutch oven (at least 8 quarts) in a 450 degrees F (230 degrees C) oven for 30 minutes.
  • Carefully remove Dutch oven using oven mitts and sprinkle cornmeal into the bottom to prevent dough from sticking.
  • Gently roll dough out of oiled bowl and into the Dutch oven; replace lid.
  • Bake in the oven for 30 minutes. Remove lid and continue baking until crust is lightly browned, about 15 minutes more. Carefully tip loaf out onto a cooking rack to cool completely.

SPEEDY "SOURDOUGH" FRENCH BREAD

This is my version of a cheater sourdough. I've never had much luck keeping a starter alive, so for me this is the answer. The bread has a nice tanginess very like real sourdough. This recipe comes out well using the bread machine to make the dough. And the recipe may be cut in half for a single loaf.

4-5 c all purpose flour
1 c very warm water (130 degrees)
1 c sour cream, room temp
2 Tbsp white vinegar
1 Tbsp sugar
2 tsp salt
4-1/2 tsp fast acting yeast

Steps:

  • 1. Mix together warm water, sour cream, and vinegar in a small bowl. Set aside.
  • 2. In a large mixing bowl combine 1 cup flour, sugar, salt, and yeast. Add sour cream mixture to flour mixture. Blend together on low speed until moistened. Continue to blend on medium speed for 3-4 minutes.
  • 3. By hand stir in 2-3 more cups of flour until dough pulls cleanly away from bowl.
  • 4. On a well-floured surface knead in additional 1-2 cups of flour until dough is smooth and elastic. Place dough ball in a greased bowl, cover with plastic wrap and a clean dish towel. Let rise in a warm (80-85 degree) place until doubled. Approx. 30 minutes.
  • 5. Grease a large sheet pan. Punch down dough and divide in half. Roll each half into a 14x8 rectangle. Roll, starting from a long side. Pinch seam and ends closed. Place seam side down on baking sheet. I have also shaped these loaves into rounds, typical of sourdough bread.
  • 6. With a sharp knife make 4-5 1/4 inch deep diagonal slashes in the top of each loaf. Cover with clean dish towel and let rise in warm place until doubled again. (Approx. 20 min.)
  • 7. Heat oven to 375*. Bake 30-35 minutes until golden and hollow sounding when tapped. Remove loaves immediately to a wire rack to cool.
  • 8. **NOTE: I often make this dough in my bread machine. Add ingredients in the order prescribed by your machine manufacturer and use the dough setting. I usually add 4 cups of flour to start. After the first rise, knead in any additional flour to obtain the standard elastic dough. Rest dough five minutes before rolling out and continue at Step 5.

BASIC SOURDOUGH BREAD

This basic Sourdough Bread Recipe produces an artisan loaf with a crisp crust and chewy crumb. It is best baked in a Dutch oven, but the recipe is very flexible and adaptable.

1 cup (8 oz, 224) active sourdough starter (100% hydration)
1 cup (8 oz, 240ml) warm water
2 1/2 cups (12.5 oz, 336g) unbleached all purpose flour
1 1/2 teaspoons table salt
Rice flour for proofing basket

Steps:

  • Combine the starter, water and 1 1/2 cups of the flour. Mix with the paddle on low speed until it forms a thick batter. Cover the bowl and set aside for 30-60 minutes.
  • If using a stand mixer, change to the dough hook. Add the salt and the rest of the flour and mix until the dough begins to form a ball around the hook. If mixing by hand add the flour using a wooden spoon and/or a plastic bowl scraper. This dough is quite sticky.
  • Place the dough into a lightly oiled bowl, turn once to coat the dough. Cover the bowl and set it aside at room temperature.
  • After 30 minutes uncover the bowl, lift one side of the dough and fold it into the middle of the dough. Repeat with the other three sides of the dough then flip the dough over. You're basically turning the dough inside-out to redistribute the yeast. Cover the bowl and after 30 minutes repeat the procedure. Cover the bowl and after 60 minutes repeat the procedure again.
  • Cover the bowl and after 60 minutes turn the dough one more time. By now the dough should be lively, elastic and airy. If the dough is still sluggish give it another hour or two at room temperature. Cover tightly and refrigerate overnight.
  • Remove the dough from the refrigerator and dump it onto floured surface. Without kneading, use your cupped hands to form the dough into a smooth ball. Cover lightly with a kitchen towel or plastic wrap and let the dough rest for 20-30 minutes. If the ball flattens during the 20 minutes fold it onto itself and form the ball again. This step will help you check if your dough is elastic enough to help it's shape during the final rise and baking.
  • Uncover the dough and knead 1-2 times. Reshape the dough into a smooth ball and place the dough into a well-floured proofing basket (I use a mix of 1/2 rice flour and 1/2 all purpose flour in the basket) or directly onto a sheet of parchment paper.
  • Cover the dough and leave in a warm place until it's almost doubled in size and it springs back slowly when poked, about 1 1/2-2 hours depending on the room temperature and dough temperature. Meanwhile, preheat the oven to 425°F. Place a Dutch oven with a lid into the oven to preheat.
  • If the loaf is in a proofing basket, place a sheet of parchment over the dough and gently flip it over. Use a single edge razor or very sharp knife to cut a 1/4" deep X across the top of the loaf. Remove the preheated pan from the oven and remove the lid. Use the parchment to lift the loaf into the Dutch oven.
  • Replace the lid on the pot and slide it into the oven. Bake for 20 minutes. Remove the lid from the Dutch oven. The loaf should be well risen and pale in color.
  • Continue baking another 20 minutes until the loaf is nicely browned and beginning to crisp. Remove the pan from the oven. Use the parchment to lift the loaf out of the pan. Use the parchment to place the loaf directly onto the rack in the oven. Bake another 5-10 minutes until the loaf is deeply browned and very crisp. Total baking time is about 40-50 minutes.
  • Cool completely on a wire rack before slicing.

Love sourdough bread but don't want to wait 1 -2 weeks for your starter. Try this Easy Sourdough Starter with yeast to get an almost sourdough bread in a lot less time!

¾ cup all purpose flour or bread flour ((97.5 grams))
¼ cup whole wheat flour ((32.5 grams))
½ cup +3 tablespoons water (lukewarm) ((166 grams))
½ teaspoon active dry yeast

Steps:

  • In a medium bowl add the lukewarm water and sprinkle the yeast on top. Let it sit for about 5-10 minutes then stir.
  • Add the flour to the yeast and combine well, make sure there is no flour at the bottom of the bowl.
  • Move the starter to a clean bowl, cover with a towel, plastic wrap or place the lid on the jar without sealing it and let sit for 24 hours in a warm draft free area. Do not stir.
  • After the 24 hours it should have risen and become very bubbly with a slight sour smell. And it is now ready to use for baking.

When your sourdough starter isn't growing like it should, or you want some quick, easy bread with that sourdough flavor to use up your discard. This was inspired by and is an adaptation of Jill Winger's Crusty Dutch Oven Bread recipe.

Yield one 10-inch loaf

Number Of Ingredients 6

1 1/2 cups warm water
1/2 ts dry active yeast
1/2 ts fine sea salt
1/2 cup sourdough starter discard
1/3 cup whole wheat flour
3 cups all purpose flour

Steps:

  • In a large bowl, disolve the yeast and sourdough starter discard in the warm water.
  • Stir in both flours and salt until a sticky, loose dough is formed.
  • Place in a large, oiled bowl and cover to rise for 3 to 5 hours.
  • About 45 minutes prior to baking, place dutch oven in cold oven and preheat to 475F.
  • Gently shape dough into a ball and set on a sheet of parchment paper. Let the dough set at room temperature while your oven and dutch oven gets hot.
  • When ready to bake, lower parchment paper with dough inside the dutch oven and replace the lid. Bake for 30 minutes.
  • Carefully remove the lid and bake uncovered for an additional 15 minutes.
  • Remove from oven when the crust is a deep brown in color. Cool on wire rack for about 30 minutes and serve warm.

  • To the bowl of a stand mixer fitted with the dough hook (or use a large mixing bowl and wooden spoon and your hands), add the flour, Greek yogurt, 1/2 cup sour cream, salt, and yeast.
  • Turn mixer on low speed and allow it to knead dough for about 5 to 7 minutes (about 7 to 10 minutes by hand using a wooden spoon and then switching to your hands). Add sour cream as needed to form a very moist and wet dough. If it’s at all dry or crumbly, add more sour cream (or Greek yogurt) until it comes together. I used one-17.6 ounce tub of Greek yogurt and almost 1 cup lite sour cream. Dough will be seem like it’s almost too wet and it’s very heavy, but this is what you want.   • Remove dough from the mixing bowl, spray a large bowl with cooking spray, pat dough into a round ball, place it in the bowl, and flip it over once so it’s lightly oiled on both top and bottom. It will look like a dimply head of cauliflower.
  • Cover bowl with plasticwrap (spray it with cooking spray in case dough rises high enough to touch it) and place bowl in a warm, draft-free place to rise for about 6 to 8 hours (I did 6 1/2 hours), or doubled in size. If you want to start this before work or before bed and made as an overnight dough and it’ll go 8-10 hours, that’s fine. There’s really no harm in letting it rise for up to 18 hours and the longer you let it go, the more of a classic sourdough/fermented flavor that will develop. If you suspect you’re going to allow it to rise on the longer side (12-18 hours), reduce yeast to about 1/2 teaspoon so dough doesn’t get too puffy and overflow the bowl.

  • Place the rye flour, 180g strong white bread flour, yeast and 220g water in the mixing bowl. Combine 30 Sec. / Speed 4. Pour into a large bowl and cover with cling film. Leave to rise at room temperature for 24 hours. The ‘sourdough starter’ will develop and grow a lot. Keep an eye on it, if you feel that the bowl is not going to be big enough or if it is a particularly warm day, change the bowl or place it in the fridge.
  • The next day, uncover the bowl and tip the mixture into the mixing bowl. It should look very bubbly. Add the remaining 155g water, 320g strong white bread flour and sea salt flakes and knead 2 Min. / Kneading function. Leave the dough to rise for another 2-3 hours until doubled in size.
  • Tip the dough onto a floured surface and fold into a round shape. Do this by gradually folding in one edge at a time towards the centre of the dough. Then turn it upside down and form it into a ball using your hands in a circular movement. Set the dough into a bread proofing basket with the seam side down and dust with more flour. Cover with a tea towel and leave to rise for another 45 minutes.
  • Meanwhile, preheat the oven to 220°C / 200°C Fan / Gas Mark 8. Put an empty tray in the oven to heat up.
