2 lb frozen hash brown, thawed
2 tablespoons all-purpose flour
1 ½ tablespoons salt, or more to taste
1 tablespoon ground black pepper
3 eggs
1 block cheddar cheese, cut into small, rectangular cubes
vegetable oil, for frying

Steps:

Combine thawed hash browns, flour, salt, pepper, and eggs in a bowl.
Take a piece of cheese and wrap a palmful of the mixture around it, shaping it into a tot (you may have to squeeze out some excess moisture to make it nice and tight).
Fill a large, deep skillet halfway with oil and heat over medium. When the oil is hot, drop in some tots, turning them along the way until they're crispy and golden brown. Let cool a bit.

Best potatoes you will ever make, guaranteed! This recipe feeds a lot of people. I took it to a potluck and the pan came home licked clean, literally! People were going back for seconds and thirds and disappointed when it was all gone. This is a totally addictive potato recipe, you just can't stop eating them! It's a cinch to toss together and goes great with chicken, beef or pork, heck it would even make your sneakers taste good. Recipe can easily be halved to feed a family of four.

cooking spray
1 (32 ounce) package frozen hash brown potatoes, thawed
1 (16 ounce) container sour cream
8 slices cooked bacon, crumbled
1 (1 ounce) package ranch dressing mix
2 cups shredded Cheddar cheese, divided, or more to taste

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease a 13X9-inch baking pan with cooking spray or butter.
Combine hash browns, sour cream, bacon, ranch mix, and 1 cup Cheddar cheese in a large bowl; stir until well mixed. Spread into baking pan; cover with aluminum foil.
Bake in the preheated oven for 45 minutes. Remove foil; sprinkle remaining Cheddar cheese evenly across potatoes. Bake until cheese is bubble and lightly browned around the edges, about 15 minutes.

I got this recipe from watching Sandra Lee's television show on food network, Semi-Homemade. I tried it out on a whim and it is fantastic. Its like nachos for tater tots.

Ingredients

1 (32 ounce) package potato tater tots
1 1/2 cups shredded cheddar cheese
5 -6 slices cooked bacon
1 tablespoon of all purpose seasoning
chives (to garnish)
sour cream, for dipping

Steps:

Prepare potatoes according to package instructions and sprinkle generously with all purpose seasoning of your choice.
When potatoes are fully cooked, crumble bacon over the top and top with cheese of your choice. Good ones to try are chipotle cheddar, cheddar jack, or sharp cheddar.
Return to the oven and bake 5-10 minutes until the cheese has melted.
Remove from oven, cool for 2-5 minutes and garnish with chives.
Serve with sour cream or your choice of condiments.
