2 cups water
2 cups cubed peeled potatoes
1/2 cup sliced carrots
1/2 cup sliced celery
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter
1/4 cup all-purpose flour
2 cups 2% milk
2 cups shredded sharp cheddar cheese
1 can (15-3/4 ounces) whole kernel corn, drained
1-1/2 cups cubed fully cooked ham

Steps:

  • In a large saucepan, bring the water, potatoes, carrots, celery, onion, salt and pepper to a boil. Reduce heat; cover and simmer for 8-10 minutes or until vegetables are just tender. Remove from the heat; do not drain. , Meanwhile, in another saucepan, melt the butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Add cheese and stir until melted. Stir into the undrained vegetables; return large saucepan to the heat. Add corn and ham; heat through, stirring occasionally.

3 cups cubed peeled potatoes (1 inch)
2 medium carrots, chopped
2 teaspoons salt
3 cups water
6 tablespoons butter
1 medium onion, chopped
2 celery ribs, chopped
6 tablespoons all-purpose flour
1/2 teaspoon pepper
4 cups whole milk
3 cups shredded cheddar cheese
1 cup cubed fully cooked ham (about 8 ounces)

Steps:

  • Place first four ingredients in a large saucepan; bring to a boil. Reduce heat; cook, uncovered, until vegetables are tender, 10-15 minutes. Drain., Meanwhile, in a Dutch oven, heat butter over medium heat; saute onion and celery until tender. Stir in flour and pepper until blended; gradually stir in milk. Bring to a boil, stirring occasionally; cook and stir until thickened, about 2 minutes. Remove from heat; stir in cheese until melted., Stir in ham and potato mixture; heat through over low heat.

1 pound fresh broccoli, chopped
CHEESE SAUCE:

1/2 cup all-purpose flour
2 teaspoons salt or to taste
1/4 teaspoon white pepper
4 cups milk
Hot pepper sauce, optional
1 pound cubed Velveeta or 4 cups shredded cheddar cheese
2 cups cubed fully cooked ham

Steps:

  • In large saucepan, combine the water, carrots, celery and onion. Bring to a boil; reduce heat. Cover and simmer for 5 minutes or until crisp-tender. 5 ounces evaporated milk
2 cups ham, diced
12 ounces frozen chopped broccoli
1/4 cup onion, minced
1 cup swiss cheese, grated
2 cups water
1 cup half-and-half

Steps:

  • In a small bowl mix together well the flour and evaporated milk.
  • To the crockpot, add ham, broccoli, onion, swiss cheese, water and flour/milk mixture.
  • Set crockpot to low and cook for 7 hours.
  • Before serving, stir in half-and-half and heat thru. Serve immediately.

1/2 yellow onion, chopped (about 1 cup)
2 garlic cloves, smashed
1/2 teaspoon celery seed
2 tablespoons all-purpose flour
2 cups low sodium chicken broth
2 cups milk
4 small red potatoes, quartered (about 6 ounces)
1/2 head broccoli, broken into florets, stem peeled and sliced
kosher salt
fresh ground black pepper
1 tablespoon Dijon mustard
1 baguette, sliced into 8 1/4-inch thick pieces
4 ounces cheddar cheese, cut into 8 thin slices

Steps:

  • Cook the bacon in the butter in a medium saucepan over low heat until it renders slightly, about 2 minutes.
  • Add the onion, garlic and celery seed and cook until soft, about 4 minutes.
  • Scatter the flour over the mixture and stir to coat.
  • Gradually add the broth and the milk, whisking until smooth.
  • Add the potatoes and sliced broccoli stem; increase the heat to medium and simmer, covered, until slightly softened, about 5 minutes.
