BROCCOLI CHEDDAR SQUARES
Broccoli cheddar squares are an excellent make-ahead breakfast or appetizer for your next party. Simple ingredients with delicious results.

Steps:
- Preheat the oven to 350 degrees F. In a 9x13 baking dish, pour the melted butter evenly over the bottom of the baking dish. Set aside.
- In a large bowl, beat the eggs before whisking in the milk. Add in the flour, baking powder, salt, and pepper. Whisk well until the mixture is smooth and uniform.
- Place the broccoli ¾ full in a food processor fitted with an S-blade attachment and gently pulse until the broccoli is broken down into small pieces to make broccoli rice (you may need to do this in batches) *(see first note.)
- Add the broccoli rice, onion, and cheese to the flour mixture. Using a spatula, combine the ingredients well together.
- Carefully transfer the mixture to the baking dish, making sure that the mixture is evenly distributed and spread flat on top.
- Bake for 40-45 minutes until set (firm to the touch) in the middle. Let it cool for 15 minutes before slicing into squares. Can be served warm or room temperature.

CHEESY ARTICHOKE SQUARES
This is an old family favourite. I can't remember where I got the recipe, but I have been making these squares for 25 years. These spicy squares are excellent served hot or cold. If you are not a fan of alot of herbs, than please, add the amount you would prefer, this dish is very versatile.

Steps:
- Preheat oven to 350°.
- Drain juice from one jar of artichokes into frying pan.
- Sauté onion and garlic in the artichoke juice, simmer and cool.
- Chop artichokes and mix with the cooled onions and garlic.
- Combine artichoke mixture, breadcrumbs, cheese, eggs, salt, pepper, parsley, oregano, basil, thyme, rosemary and Tabasco sauce together until well blended.
- Pour the artichoke mixture into a greased 8x8-inch or 9x9-inch pan.
- Bake in a 350° oven for 40 minutes.
- Let cool 5 minutes; cut and enjoy.

- Heat oven to 375°F. Generously spray 8-inch square (2-quart) glass baking dish with cooking spray.
- In 12-inch skillet, melt butter over medium-high heat. Cook onion in butter 2 minutes, stirring frequently, until almost tender. Add squash; cook 4 minutes, stirring occasionally, until just tender and lightly browned. Remove from heat; cool 5 minutes.
- In large bowl, beat eggs with whisk until blended. Stir in half-and-half, 3/4 cup of the cheese, the thyme leaves, salt and pepper. Gently stir in squash mixture and bread cubes. Spoon into baking dish.
- Bake uncovered 20 minutes. Top with remaining 1/2 cup cheese; bake 10 minutes longer or until puffed and golden. Let stand 10 minutes before serving. Garnish with thyme sprig.

I love this recipe because it got me an "A" one week in my "Newspaper In Classroom" class back in high school. If we made a recipe we found in the newspaper, and the teacher liked it, he'd grade us well. My teacher's questionable grading practices aside, this is a great recipe!

Steps:
- Preheat oven to 300F; spray 8x8 pan with non-stick pan spray, set aside.
- In food processor, combine brown sugar, nuts, and flour.
- Add melted butter& blend until crumbly (or combine all with a pastry blender).
- Reserve 3/4c for topping; press remainder firmly in prepared pan.
- Bake for approx 10-12 minutes.
- Meanwhile beat cream cheese and sugar in a medium bow; add remaining ngredients and beat until smooth.
- Pour cheese mixture onto crust; top with reserved crumbs and bake another 25-30 minutes.
- Cool; cut into squares.

- Preheat oven to 350°. In a large bowl, whisk flour, salt and baking powder. In a small bowl, whisk eggs and milk until blended. Add to flour mixture; stir until moistened. Fold in cheese and broccoli., Place butter in a 13x9-in. baking dish; place dish in oven 3-5 minutes or until butter is melted. Carefully tilt baking dish to coat bottom and sides with butter.
