1 tablespoon olive oil
1 1/2 cups diced red pepper, plus 1 cup for garnish
1 1/2 cups diced green pepper
1 cup diced red onion
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
12 ounces roughly chopped fresh cooked lobster meat
3 cups shredded Monterey Jack cheese
4 ounces chopped jalapenos, without seeds, or to taste
Kosher salt
12 (6-inch) flour tortillas
4 ounces clarified butter
1 cup sliced green onion, for garnish
8 tablespoons sour cream, for garnish
6 pineapple tops, for garnish
Tropical Fruit Salsa, recipe follows

Steps:

  • In a large skillet, heat the oil over medium-high heat. Add 1 1/2 cups red peppers, the green peppers, onion, cumin, and cayenne pepper. Cook until the vegetables are tender, but still firm, about 7 to 8 minutes. Remove from the heat and cool.
  • In a medium bowl, mix the lobster meat, cheese, jalapenos, salt, and cooled pepper mixture. Divide the mixture into 6 portions. Sandwich each portion between 2 tortillas, spreading the lobster mixture evenly.
  • Heat a grill or large skillet over medium heat and film the bottom with some of the butter. Place as many quesadillas as will fit without touching, and cook each side until the tortillas are golden brown and the cheese has melted, about 5 minutes. Repeat with remaining butter and quesadillas.
  • Cut quesadillas into wedges. Place the quesadillas on plates and garnish with remaining red pepper, the green onion, sour cream, and a pineapple top. Serve immediately with Tropical Fruit Salsa.

1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
1 jalapeño chili, seeded, chopped
8 5- to 6-inch-diameter corn tortillas
2 cups (packed) grated hot pepper Monterey Jack cheese (about 8 ounces)
3/4 cup crumbled feta cheese (about 3 ounces)
1 cup drained golden hominy (from 15-ounce can)
3 tablespoons (or more) vegetable oil

Steps:

  • Stir first 5 ingredients in medium bowl to blend. Season salsa with salt and pepper.
  • Cook tortillas over gas flame until blackened in spots, about 30 seconds per side. Transfer to work surface. Sprinkle 4 tortillas with both cheeses and hominy, dividing equally; top with remaining 4 tortillas. Heat 1 1/2 tablespoons oil in each of 2 heavy large skillets over medium heat. Place 2 quesadillas in each skillet. Cook until bottoms are crisp and brown, pressing occasionally with spatula, about 2 minutes. Turn quesadillas over. Cook until bottoms are brown and cheeses melt, adding more oil as needed, about 2 minutes longer. Cut quesadillas into quarters. Arrange 4 quarters on each of 4 plates. Serve with salsa.

I made up this ham and pineapple quesadilla recipe when I worked at a cafe and was craving Hawaiian-style pizza. We were serving Mexican food that day so I had to work with the ingredients on hand. I have made this repeatedly since. My favorite quesadilla. I like to mix sour cream and salsa in a small bowl and dip it.

10 flour tortillas
1 ½ pounds sliced ham
3 (8 ounce) packages shredded mozzarella and Cheddar cheese blend
1 (8 ounce) jar salsa
1 (15 ounce) can pineapple chunks, drained
1 (8 ounce) carton sour cream

Steps:

  • Heat a griddle over medium-high heat. Toast one side of a tortilla, 1 to 2 minutes. Lay 2 to 3 slices of ham on the other side of the griddle to heat through. Flip toasted tortilla over, sprinkle with mozzarella and Cheddar cheese blend, layer with hot ham, spread with desired amount of salsa, sprinkle with desired amount of pineapple, and fold tortilla in half.
  • Turn quesadilla over and continue to cook until cheese is melted and tortilla has reached desired crispness, 2 to 4 minutes. Cut into wedges with a pizza cutter. Repeat with remaining ingredients. Serve with sour cream.

1 lb chilled brie cheese, rind trimmed (cut into 1/2-inch thick slices)
24 fresh cilantro stems
1 cup maple candied walnuts
1 cup walnut halves
2 tablespoons pure maple syrup

Steps:

  • SALSA.
  • Toss all ingredients in large bowl.
  • Season with salt and pepper.
  • Cover, chill.
  • QUESADILLAS.
  • Butter tortillas on one side; place buttered side down on large rimmed baking sheet.
  • Top half of each tortilla with cheese, cilantro and nuts.
  • Fold tortillas in half; press lightly.
  • Can be made one day ahead, cover, chill.
  • Preheat oven to 300°.
  • Working in batches, cook tortillas in heavy large skillet over medium heat until golden and cheese melts, about 1 minute per side.

3 tablespoons paprika
½ tablespoon ground cumin
1 tablespoon ancho chile powder
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon dried coriander
1 pinch ground cinnamon
1 pinch ground cloves
1 lb ground pork
1 tablespoon white vinegar
3 cloves garlic, minced
2 tablespoons olive oil
6 corn tortillas, preferably fresh
8 oz shredded cheese, such as mozzarella, queso Oaxaca, or cheddar
pickle, for serving
4 early girl tomatoes, quartered
8 habanada peppers, steam removed
10 cloves garlic
olive oil, for drizzling
kosher salt, to taste
1 lemon, juiced

Steps:

  • If making the chorizo, in the bowl of a stand mixer, combine the paprika, cumin, ancho chile powder, chili powder, oregano, coriander, cinnamon, cloves, ground pork, vinegar, and garlic. Mix until well combined.
  • Heat the olive oil in a large pan over medium-high heat. When the oil is shimmering, add the chorizo and cook until the fat has rendered and the chorizo is crisp. Remove from the pan using a slotted spoon and discard the excess fat.
  • Sprinkle the cheese over the tortillas, then top with the chorizo.
  • Return the tortillas to the pan and cook until the cheese is melted and the tortilla is crisp, 3-4 minutes per side.
  • Meanwhile, make the salsa: Coat the tomatoes, peppers, and garlic with olive oil and salt, then spread on a baking sheet. Roast under the broiler for 5-10 minutes, until charred in spots.
  • Transfer the roasted vegetables to a blender and purée until smooth. Stir in the lemon juice and season with more salt to taste.
  • Serve the taco-quesadillas with salsa and pickles.
