½ pound provolone cheese, chopped
2 (6.5 ounce) jars marinated artichoke hearts, drained and chopped
1 (6 ounce) can sliced black olives
½ (8 ounce) bottle Italian-style salad dressing, or more to taste
1 (.7 ounce) package dry Italian salad dressing mix (such as Good Seasons®)
ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook tortellini at a boil, stirring occasionally, until the pasta floats to the top and the filling is hot, 6 to 8 minutes; drain. Rinse tortellini with cold water until completely cooled; drain and transfer to a large bowl.
  • Stir pepperoni, provolone cheese, artichoke hearts, black olives, Italian-style salad dressing, dry Italian dressing mix, and black pepper with the tortellini. Add more Italian dressing just before serving, if desired.

1 package (9 ounces) refrigerated or dried cheese-filled spinach tortellini
2 medium carrots, sliced (1 cup)
2 medium green onions, thinly sliced (2 tablespoons)
2 tablespoons chopped fresh basil leaves or parsley
1 tablespoon freshly grated or shredded Parmesan cheese
1/8 teaspoon pepper
1/3 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
2 tablespoons capers

Steps:

  • Cook and drain plain and spinach tortellini as directed on packages. Rinse with cold water; drain.
  • Shake all Basil-Caper Dressing ingredients in tightly covered container. In large glass or plastic bowl, place tortellini and all remaining Tortellini Salad ingredients. Add dressing; toss until evenly coated. Cover and refrigerate at least 2 hours to blend flavors but no longer than 24 hours. Toss before serving.

I've got this recipe of my sister-in-law. I just love the combination of pasta, spinach cheese and tomatoes. Served with crusty bread and a fresh salad (plus a few bottles of red wine), it's perfect if you have a few friends round for dinner and don't want anything too formal!

500 g fresh tortellini (filling of your choice, 1 lb)
4 -5 tomatoes, skinned and chopped
600 g frozen spinach (1 1/3 lb)
2 -3 garlic cloves, finely chopped
100 -150 g feta cheese, cut into chunks (4oz)
200 g grated cheese (7 oz)
500 ml sour cream (2cups)
250 ml single cream (1 cup)
2 -3 teaspoons fresh ground black pepper
2 -3 teaspoons salt

Steps:

  • Cook the tortellini in salted water for about 3-4 minutes, drain and put in a big oven proof dish.
  • Add the tomatoes.
  • Defrost the spinach, squeeze out most of the excess water and add the garlic.
  • Season with salt and pepper to taste.
  • Add to the pasta and tomatoes, mix well.
  • Top with feta cheese.
  • In a bowl mix the soured cream and single cream.
  • Season with salt and pepper to taste (don't hold back).
  • Add the grated cheese and pour over the dish, make sure it mixes with the rest of the ingredients and doesn't just sit on top.
  • Preheat the oven (200°C, 400°F, Gas Mark 6) and bake for 20-30 minutes.

I am not ready for summer to be over so I want to share with you some of my favorite summer recipes using up all those fresh ingredients! This Cheese Tortellini Pasta Salad is easy, delicious, and perfect for summer meal prepping! I love having it straight from the fridge during my lunch break! Give it a go, you won't be disappointed!

1 lb cheese tortellini
2 tbsp avocado oil
1 lb chicken sausage
½ medium onion (diced)
2 cups broccoli florets
8 oz mushrooms (diced)
2 bell peppers (diced)
3 cups spinach
2 tbsp olive oil
½ tbsp red wine vinegar
1 garlic cloved (minced)
1 lemon (juiced)
½ tsp salt
½ tsp black pepper

Steps:

  • Cook cheese tortellini according to package and set aside.
  • In 1.5 tbsp of avocado oil, saute the diced chicken sausage for 5 minutes on medium heat or until a nice golden color is on all sides. Set aside
  • Add remaining 1/2 tbsp of oil and saute onions for 5 minutes on medium heat. Add in all the rest of the veggies except for the spinach and saute for another 8-10 minutes. Add in a pinch of salt and pepper to the veggies.
  • While veggies are cooking, mix all your ingredient together for the salad dressing. Set aside.
  • Once veggies are done, add back in your chicken sausage and spinach and cook for additional 3 minutes or until the spinach has wilted down.
  • Once spinach is wilted down, add in your pasta and dress and mix everything together. Enjoy warm or cold from the fridge!
