CHEESE 'N BACON SPOON BREAD
Sharp cheddar cheese, corn, turkey bacon, pimientos and parsley add color and flavor to this classic puddinglike side-dish casserole.

Steps:
- Add boiling water to cereal in large bowl; stir. Let stand 5 minutes. Gradually add milk, stirring until well blended. Add 2 of the egg yolks and pepper; mix well. (Save remaining 2 egg yolks for another use.) Stir in baking powder. Add corn, cheese, turkey bacon, pimientos and parsley; mix well.
- Beat egg whites with electric mixer on high speed until stiff peaks form. Add to cereal mixture; stir gently until well blended. Pour into greased 2-quart casserole.
- Bake at 375°F for 50 to 60 minutes or until knife inserted in center comes out clean.

- Preheat oven to 350°. In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. Remove pan from heat. Remove bacon with a slotted spoon; drain on paper towels., Add water, stock, garlic powder and pepper to bacon drippings; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5-7 minutes or until thickened, stirring occasionally. Remove from heat., Add Velveeta and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Transfer to a greased 13x9-in. baking dish. Sprinkle with bacon and shredded cheese. Bake, uncovered, 40-45 minutes or until edges are golden brown and cheese is melted. Let stand 10 minutes before serving. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove casserole from refrigerator 30 minutes before baking. Bake grits as directed, increasing time to 50-60 minutes or until heated through and a thermometer inserted in center reads 165°.

- Scald 1-1/2 cups milk (heat to 180°). Mix cornmeal with remaining 1/2 cup cold milk and add to hot milk. Cook, stirring constantly, over low heat until thickened, approximately 5 minutes. Add cheese, butter, sugar and salt; stir until melted. Remove from heat until thickened, approximately 5 minutes. Add cheese, butter, sugar and salt; stir until melted. - Select loaf size and add the ingredients according to manufacturer's directions.
- Select dough cycle.
- When dough is complete, remove to floured surface.
- Cover with plastic wrap: let rest 5 minutes.
- Shape the dough into a loaf of four balls.
- Place in a greased 23 cm by 12 cm loaf pan.
- Cover with a tea towel and let rise in the warm place until doubled (50 to 60 minutes depending).
- Bake at 190 degrees Celsius, 375 degrees Fahrenheit for 25 to 35 minutes, or until golden.
- Use old cheddar for best flavor, or replace basil with dill weed for more great taste.

Steps:
- Preheat oven to 375°F.
- Combine milk, sugar, and red pepper flakes, if using, in a medium saucepan over medium-high heat.
- When mixture begins to simmer, gradually add cornmeal in a slow steady stream, stirring well with a whisk.
- Cool 3 minutes or until thickened and smooth, stirring constantly.
- Transfer cornmeal mixture to a large bowl.
- Add yolks; stirring with a whisk.
- Let mixture stand 10 minutes.
- Heat a large nonstick skillet over medium-high heat.
- Coat pan with cooking spray.
- Add onion and saute 6-10 minutes or until tender.
- Add onion and bacon to cornmeal mixture.
- Stir cheeses into cornmeal mixture.
- Add salt and pepper now.
- Beat egg whites with a mixer at high speed until stiff peaks form (do not overbeat).
- Gradually stir one-third of egg white mixture into cornmeal mixture; gently fold in remaining egg white mixture.
- Using a rubber spatula, scrape cornmeal mixture into 1-1/2 quart souffle or deep baking dish coated with cooking spray.
- Bake for 50 minutes or until golden brown, and just set in center.
- DO NOT KEEP OPENING OVEN.
- Serve immediately.
- *Garnish with sour cream topped with chives or green onions chopped fine, to keep it savory.
- **I know many eat spoon bread with sugar or syrup or sour cream with sugar - whatever one chooses I am sure - it will be delightful.
