1-1/2 teaspoons dried minced onion
1 to 2 teaspoons chili powder
1/2 teaspoon salt
10 flour tortillas (8 inches), warmed
1/4 cup chopped onion
1-1/2 cups shredded cheddar cheese, divided
1 can (10 ounces) enchilada sauce, warmed
1 can (2-1/2 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 5-7 minutes, breaking it into crumbles; drain. Stir in the beans, dried minced onion, chili powder and salt; heat through., Place about 1/3 cup down the center of each tortilla. Sprinkle each with onion and cheese. Fold bottom and sides over filling. Pour sauce over top; garnish with olives.

1-1/4 cups TACO BELL® Thick & Chunky Salsa, divided
1 cup rinsed canned black beans
12 flour tortillas (6 inch)
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/4 cup chopped fresh cilantro

Steps:

  • Heat oven to 350ºF.
  • Brown meat in large skillet; drain. Stir in half the VELVEETA and 1/2 cup salsa; cook 5 min. or until VELVEETA is completely melted and mixture is well blended, stirring frequently. Stir in beans.
  • Spoon 1/4 cup meat mixture down center of each tortilla; roll up. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
  • Bake 10 min.; top with remaining VELVEETA and salsa. Bake 20 min. or until enchiladas are heated through and VELVEETA is melted. Top with sour cream and cilantro.

2 (16 ounce) cans refried beans
2 cups shredded Mexican cheese blend, divided
½ cup chopped onion
12 small corn tortillas
2 (10 ounce) cans red enchilada sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Mix refried beans, 1 1/2 cup Mexican cheese blend, and onion in a microwave-safe bowl; heat in microwave until cheese is melted, about 1 minute.
  • Stack tortillas, 3 at a time, on a microwave-safe plate; heat in microwave until warmed, about 30 seconds. Repeat with remaining tortillas.
  • Pour enough enchilada sauce onto a small plate to cover. Quickly dip both sides of each tortilla in enchilada sauce. Spoon bean filling down the middle of each dipped tortilla and wrap tortilla around filling. Arrange filled tortillas in the prepared baking dish. 1 onion, chopped fine
4 garlic cloves, minced
3 tablespoons vegetable oil
1 (16 ounce) can black beans, drained and rinsed
1 (16 ounce) can pinto beans, drained and rinsed
1 (15 ounce) can enchilada sauce
1/2 cup salsa, plus more served with meal, if desired
3 teaspoons cumin
1/4 teaspoon salt
1 -2 dash black pepper
10 flour tortillas
2 tablespoons water
2 cups shredded monterey jack cheese

Steps:

  • Heat oven to 350. Saute onion and garlic in oil until onions are softened.
  • Add 1/2 of each type of beans and mash with a potato masher, then add the remaining half of beans.
  • Add 1/2 of enchilada sauce, 1/2 cup salsa, cumin, and salt and pepper; simmer and mix on low heat for about 3 minutes or until heated through.
  • Fill each tortilla with about 3 tablespoons of bean mixture and a sprinkle of cheese and roll up leaving ends open, arranging seam side down in a greased 9 x 13 inch baking dish.
  • Mix the 2 tablespoons of water with the remaining enchilada sauce and pour evenly over tortillas.
  • Sprinkle with remaining cheese and bake, covered, for about 15-20 minutes.
  • Serve with extra salsa if desired.

1 (10 1/2 ounce) can cream of chicken soup
1/2 cup sour cream
1 cup picante sauce or 1 cup salsa
2 teaspoons chili powder
1 lb ground beef, cooked and drained
3/4 cup shredded cheese, divided
1 (15 ounce) can black beans, rinsed and drained
6 (6 inch) flour tortillas
1/2 cup tomatoes, chopped (optional)
1 green onion, sliced (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Stir the soup, sour cream, picante/salsa and chili powder in a medium bowl, set aside.
  • Stir 1 cup of soup mixture, beef, beans and 1/2 cup cheese in a large bowl.

1 cup chicken broth
1 (15-oz) can enchilada sauce
1 tsp ground coriander
½ tsp black pepper
1 lb 93% lean ground beef
½ tsp kosher salt
½ tsp black pepper
1 tsp onion powder
1 (15-oz) can green chile sauce
1 (7-oz) can diced green chiles
1 (15-oz) can pinto beans, drained and rinsed
16 (6-inch) corn tortillas
8 oz shredded Colby Jack cheese
1 (4-oz) can diced black olives
Fresh cilantro, chopped (for garnish)

Steps:

  • Preheat oven to 300°F. In a medium sauce pan over medium heat melt butter. Add flour and whisk for 2 minutes, to cook out the 'floury' taste. Meanwhile add green chile sauce, green chiles, and beans. Stir to combine and cook until hot. About 5 minutes. Remove tortillas from oven. Turn oven to 400°F. Open foil. Ladle green chile sauce (about 1 cup) from filling mixture to cover the bottom of a 9x13 baking dish (or 2 smaller dishes). Ladle red sauce (about 1 cup) on top of the green chile sauce. Lay a tortilla on a clean work surface. Spoon about ¼ cup of the beef filling into the center of the tortilla. Roll tortilla up, enclosing the filling and lay in the baking dish seam side down. Repeat until all tortillas are in the baking dish. Ladle remaining red sauce over the top of the enchiladas, covering them completely. Sprinkle cheese over top. Scatter black olives on top. Bake for 7-10 minutes until cheese is completely melted. Garnish with sour cream and chopped cilantro. Serve and enjoy!
