An easy and very tasty way to perk up your mid-week menu. Very creamy and a sure win for garlic lovers. Goes great over grilled or baked chicken breasts.

4 skinless, boneless chicken breast halves
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon butter
1 tablespoon vegetable oil
3 cloves garlic, chopped
1 tablespoon all-purpose flour
1 cup heavy whipping cream
½ cup chicken broth
½ cup freshly grated Parmesan cheese
2 ounces cream cheese, softened

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Season chicken breasts with oregano, basil, salt, and black pepper.
  • Cook the chicken breasts on preheated grill until no longer pink in the center and the juices run clear, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Melt butter with vegetable oil in a saucepan over medium heat. Cook and stir garlic in the butter mixture until fragrant, about 2 minutes. Stir flour through the butter mixture; cook and stir until flour is incorporated, about 1 minute more. Pour heavy cream and chicken broth into the saucepan; stir. Continue cooking until the mixture thickens, 3 to 5 minutes. Add Parmesan cheese and cream cheese to the saucepan; cook, stirring occasionally, until the cheese is melted into the sauce, about 5 minutes.
  • Plate the chicken breasts. Spoon sauce over the chicken. Serve extra sauce on the side.

¼ cup all-purpose flour
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
3 skinless, boneless chicken breast halves - cut into 1 inch pieces
2 tablespoons olive oil
1 red bell pepper, seeded and chopped
1 onion, chopped
1 clove garlic, minced
½ jalapeno pepper, seeded and minced
¾ cup chicken broth
2 teaspoons Worcestershire sauce
½ cup milk
1 tablespoon all-purpose flour
½ cup sour cream
1 cup shredded Monterey Jack cheese
1 (12 ounce) package uncooked linguini pasta

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguine pasta and cook for 8 minutes, or until tender. Drain.
  • Meanwhile, in a shallow dish, mix together 1/4 cup flour, black pepper and cayenne pepper. Coat the chicken in the flour mixture, shaking off the excess. Heat the oil in a large skillet over medium heat. Add chicken pieces and cook until browned on the outside and no longer pink inside. Remove to a plate and keep warm.
  • Add the bell pepper, onion, garlic and jalapeno pepper to the skillet; cook and stir over medium heat for about 5 minutes. Stir in the chicken broth, Worcestershire sauce and milk. Bring to a simmer. Stir in 1 tablespoon of flour and simmer over medium-low heat until the sauce starts to thicken.
  • Remove from the heat and stir in sour cream and Monterey Jack cheese until melted. Return chicken to the pan and stir to coat with sauce. Serve chicken and sauce over pasta.

Steps:

  • In a large nonstick skillet, heat oil over medium heat. Season chicken with salt and pepper. Cook chicken until lightly browned on the first side, about 5 minutes.
  • Turn chicken; add Garlic-Pepper Sauce and 2 tablespoons water. Bring to a simmer. Cover, and cook until chicken is opaque throughout, 8 to 10 minutes.
  • Divide chicken among four plates. Season sauce with salt and pepper; spoon over chicken. Serve with rice and salad, if desired.

1 ½ lb chicken breast
6 cups Doritos Nacho Cheese-Flavored Tortilla Chips
1 cup all purpose flour
2 eggs, whisked
1 cup mayonnaise
½ cup sour cream
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper
¼ teaspoon salt
¼ cup blue cheese
½ cup hot sauce
½ cup butter, melted
¼ fresh chive, finely sliced

Steps:

  • Preheat your oven to 400 degrees. Place the doritos in a food processor (or use a large resealable bag and rolling pin to finely crush the chips) and blitz until the chips become a fine crumb. Transfer the pulsed chips to a bowl. Add the flour and eggs to their own respective bowls, then begin breading the chicken. Dip each piece of chicken in the flour, then the egg, then the chip crumbs and toss around to coat evenly. Repeat for each piece of chicken, then transfer to a parchment lined baking tray. Bake for 14 - 16 minutes, or until the internal temperature of the chicken reaches 165 degrees.
  • While the chicken bakes, start to make the 1UP sauce. In a food processor combine the mayo, sour cream, garlic powder, onion powder, pepper, salt, and blue cheese. Pulse well to combine evenly, then transfer to your serving bowl and set aside.
  • In a separate bowl, whisk together the hot sauce and melted butter. When the chicken bites are cooked, remove from the oven and toss in the hot sauce and butter. Top with freshly sliced chives and serve alongside the 1UP sauce.

Chicken breasts stuffed with cheese with a creamy garlic peppercorn sauce to top it off. Great recipe I got from my brothers girlfriend who is a chef.

Number Of Ingredients 11

1 skinless chicken breast, per person
cheese, enough for a small amount for stuffing chicken per breast
1 slice bacon, per person
crushed peppercorn (I use peppercorn grinder)
unsalted butter (usually 1-2 slices, chopped into cubes)
2 garlic cloves (crushed)
mushroom (optional)
1 cup chicken stock
double cream
2 tablespoons cornflour (2tablespoons to 1/2 cup of cold water)
1/2 cup cold water

Steps:

  • Take your chicken breasts, cut using your knife on a slant so that you have butterfly wings/pockets. Do this for each individual chicken breast.
  • Wrap in tinfoil and cook for 30mins in oven.
  • Carefully unwrap chicken breasts and stuff pockets with a little cheese then cook for a further 10mins or until cheese is melted.
  • For the sauce, grind lots of black pepper into a medium sized pot with 6-7cubes of unsalted butter (The more butter the better). Melt butter on a low heat.
  • Add in crushed garlic and mushrooms (optional) Cook for a couple of mins until mushrooms are soft.
  • Making sure your still cooking on a low heat, add 1 cup of chicken stock.
  • Simmer for 5mins then add some of your cornflour mix until at the right consistency (Not too watery but not too thick).
  • Add some of the double cream until you feel its nice and creamy. If your sauce has gone a bit watery, add some more of the cornflour mix to get the right consistency again. This might take a while to get right but you will know yourself.
  • Serve your chicken with a slice of bacon on top then drizzle the sauce on top of the chicken. I usually serve this dish with some potato wedges to make a nice, filling meal.

4 boneless skinless chicken breast halves (about 1 1/4 lbs)
1 medium tomatoes, coarsely chopped (or 1 small can diced tomatoes)
1 (1 ounce) envelope Lipton Recipe Secrets savory herb with garlic soup mix
1/3 cup water
1 tablespoon olive oil or 1 tablespoon vegetable oil
1 cup shredded mozzarella cheese (about 4 ounces)
1 tablespoon grated parmesan cheese

Steps:

  • Preheat oven to 400°F.
  • In 13x9-inch baking dish, arrange chicken; top with tomato.
  • Combine soup mix, water and oil in small bowl with a whisk for complete blending.
  • Pour soup mixture over chicken.
  • Bake uncovered for 20 minutes, or until no pink remains in center of chicken breasts.
  • Top with cheeses and bake 5 minutes or until cheese is melted.
  • Serve, if desired, with crusty Italian or garlic Texas Toast.
