CHEESY QUESADILLAS WITH AVOCADO FOR CINCO DE MAYO
Steps:
- Preheat the oven to 400°F.
- Line your baking pan with parchment paper.
- In a medium skillet, heat olive oil over medium high heat. Cook ground beef for 3 to 5 minutes. Make sure to break up the meat with a wooden spoon. When no longer pink, remove excess fat and add the taco seasoning and green chiles. Mix well to combine, turn off heat, and set aside.
- Assemble the tortillas by arranging it on the prepared baking sheet. Top it with refried beans, ground beef, avocado slices, and mozzarella. Place another tortilla on top.
- Cook the assembled tortillas for 8 to 10 minutes or until the cheese has melted.
- Garnish with cilantro and serve with your favorite dip.
CHEESY GUACAMOLE QUESADILLAS
This meal began as a mix-and-match of our favorite quesadilla and guacamole recipes and evolved into a legendary family favorite in no time. Serve with salsa and sour cream, over rice and re-fried beans or whatever else you like.

Steps:
- Pit avocado and mash in a small mixing bowl with the lime juice. Add garlic, green onion, tomato, yellow onion, bell pepper, salt and chili powder. Mix thoroughly. Cover and refrigerate for 30 minutes.
- Heat oil over medium heat in a medium skillet. Place tortilla in skillet and top with 1/3 cup cheese. When cheese has melted and tortilla is slightly browned, spoon on some guacamole and top with another tortilla. Flip, and allow the second tortilla to brown.
- Remove from heat and cut into wedges. Repeat with remaining ingredients.

CHEESY QUESADILLAS WITH AVOCADO
Brooke is a huge Mexican food fan. In fact, when Jack was one week old, Brooke had such a mean craving that we took him out to a Mexican spot near us. So it's no surprise that Jack has become a big fan, too. And since quesadillas are pretty much Mexican grilled cheese, we make them just to give him a little variety, and use them as an opportunity to get a little avocado (which is chock-full of vitamins and has more potassium than a banana) into his diet.
Yield serves 4 kids or 2 adults

Steps:
- Sprinkle each of 4 tortillas with 1/4 cup of the Monterey Jack cheese. Top each with the avocado, then the remaining cheese. Cover with the 4 remaining tortillas.
- Heat a skillet over medium-high heat. Add the quesadillas, 1 at a time, and cook for 2 to 3 minutes per side, or until the tortillas are golden and the cheese is melted. Serve warm.
- If you've got a salsa fan like we do in Jack, you can offer a little mild salsa for dipping.
QUESADILLAS I
A delicious, cheesy pre-dinner treat. I like to make quesadillas without butter, but you could put butter in the frying pan before placing the tortilla in. Serve with sour cream and salsa.

- Heat a large frying pan or griddle over a medium heat. Place one tortilla flat on the frying pan. After 1 minute flip the tortilla over. Sprinkle a little more than 1/4 cup cheese on the tortilla, followed by some olives, avocado, and hot pepper sauce. Place another tortilla on top to make a sandwich. Cover the quesadilla with a lid. After one minute, flip the quesadilla. When the cheese has melted on the inside, remove the quesadilla. Repeat with remaining ingredients.
- Cut the quesadillas into triangles and serve.
