I just made these up this morning when doing a quick omelet for breakfast. I'm sure they are just like others out there - but they sure were good!

2 Tbsp butter, salted
1 2/3 c bisquick baking mix
1/2 c finely shredded cheddar cheese
1/2 c milk
1 iron skillet

Steps:

  • 1. Preheat oven to 450°F. Warm a 9- or 10-inch iron skillet and melt the butter. Reserve and set aside half the melted butter. Brush the remaining butter all over the bottom and up the sides of the skillet.
  • 2. Stir the grated cheese into the Bisquick until well distributed. Add the milk and stir with a fork until it forms a ball and leaves the sides of the bowl. Drop by tablespoons into the warmed skillet, making 8 biscuits, sides almost touching. Brush tops with the reserved melted butter.
  • 3. Bake 10-13 minutes, until tops are lightly browned and biscuits are done. Remove from oven and cover with a clean towel until ready to serve. Serve with butter if desired.

My favourite biscuit recipe! Crunchy outside, soft, buttery inside, with the addition of CHEESE! An adaptation I made from one of Edna Lewis' recipes. Note: Feel free to use lard or shortening as opposed to butter - I always prefer lard over shortening though.

1 tablespoon butter
2 1/2 cups unbleached all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/4 cup butter
2/3 cup buttermilk
1 cup shredded cheddar cheese
1 egg, beaten

Steps:

  • Preheat oven to 500 degrees F.
  • Put 1 Tbsp butter in a large cast iron skillet, or heavy baking dish, and place in oven.
  • In a large bowl, combine flour, baking powder, 3/4 cup of the cheese, and salt, mix till combined.
  • Cut butter in using a pastry cutter or two knives (I use my kitchen-aid, more often than not, with a paddle beater), until it is the consistency of small peas.
  • Stir in buttermilk, if too dry or crumbly, add at few splashes more until the dough is workable, but not sticky.
  • Take skillet out of the oven.
  • On a floured surface, turn dough out, knead no more than 8-10 times, and pat down to about 3/4" thickness. Cut out biscuits with a biscuit cutter or a kitchen glass. Don't bother re-rolling the dough, just leave the odds and ends in the pan as they are as a little treat for yourself. Just to ensure the biscuits aren't tough!
  • Prick with the tines of a fork, and brush with beaten egg over the tops.
  • Sprinkle with the remaining 1/4 cup of cheese, place in hot skillet.
  • Bake 10-12 minutes till golden brown and cheese is bubbly and slightly browned.

1 (19 ounce) package ready-to-bake refrigerated buttermilk flaky biscuits
1/3 cup grated cheddar cheese
1 tablespoon fresh chives or 1 tablespoon fresh tarragon
1 egg white

Steps:

  • Preheat oven to 375.
  • With serrated knife halve the biscuits horizontally.
  • Arrange bottom halves in ungreased 10 inch cast iron skillet.
  • Sprinkle each biscuit bottom with 1 tsp cheese and 1/2 tsp herbs.
  • Replace biscuit tops and gently press dough around sides to seal.
  • Brush with egg white and sprinkle biscuits with remaining cheese.
  • Bake 18 minutes or until golden and cooked thru.
  • Sprinkle with remaining herbs.
  • NOTE****Make also be baked on baking pan.
  • Place biscuits 2 inches apart on ungreased baking pan and bake 11-15 minutes.
