3/4 cup semisweet chocolate chips
1/3 cup (from 14-oz can) fat-free sweetened condensed milk (not evaporated milk)
1 cup Gold Medal™ whole wheat flour
1/2 cup quick-cooking oats
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
3/4 cup packed brown sugar
1/4 cup canola or vegetable oil
1 teaspoon vanilla
2 tablespoons quick-cooking oats
2 teaspoons butter or margarine, softened

Steps:

  • Heat oven to 350°F. Spray 8- or 9-inch square pan with cooking spray.
  • In 1-quart heavy saucepan, heat filling ingredients over low heat, stirring frequently, until chocolate is melted and mixture is smooth.
  • In large bowl, stir together flour, 1/2 cup oats, the baking powder, baking soda and salt; set aside. In medium bowl, stir egg, brown sugar, oil and vanilla with fork until smooth; stir into flour mixture until blended. Reserve 1/2 cup dough in small bowl for topping.
  • Pat remaining dough in pan (if dough is sticky, spray fingers with cooking spray or dust with flour). Spread filling over dough. Add 2 tablespoons oats and the butter to reserved dough. Mix with pastry blender or fork until well mixed. Place small pieces of mixture evenly over filling.
  • Bake 20 to 25 minutes or until top is golden and firm. Cool completely, about 1 hour 30 minutes. For bars, cut into 4 rows by 4 rows.

4 teaspoons vanilla extract, divided

1/2 cup white sugar
1/4 teaspoon baking powder

1/8 teaspoon nutmeg
1 cup flour
3/4 cup semi-sweet chocolate chips (I use Ghiradelli)
3/4 cup rolled oats (uncooked oatmeal)

Steps:

  • Preheat oven to 350 degrees with the rack in the middle position.
  • Melt the butter in a large microwave safe bowl.
  • Add the brown and white sugars and let cool a bit.
  • Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
  • Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
  • With a spatula spread dough evenly into a greased 8x8 baking pan.
  • Bake at 350 for 25- 30 minutes.
  • Cut into bars when cool.

These homemade oat bars make the perfect breakfast on the go, or just a sweet pick-me-up snack to enjoy any time in the day! These bars are incredibly chewy and have a stick to your mouth quality (like toffee)!

3 cups old-fashioned rolled oats
1/3 cup natural honey
1/4 cup packed brown sugar, (light or dark both work fine here)
5 tablespoons unsalted butter, (sliced into 5 pieces)
1/4 teaspoon salt
1/3 cup mini chocolate chips, (plus more for sprinkling on top)

Steps:

  • Preheat your oven to 350°F. Line a 9x9 inch square pan with parchment paper, and set aside.
  • Spread your oats into an even layer on a medium sized baking sheet. Bake in the center of your preheated 350°F oven for 8 to 10 minutes, pausing halfway to toss the oats. They won't look significantly different, but they'll have just started to brown along the edges. Transfer the oats to a large bowl, and set aside while you work on the wet ingredients.
  • For the wet ingredients, combine honey, brown sugar, butter, and salt in a medium sized saucepan. Place over medium-high heat, and heat, stirring occasionally, until the mixture boils. Boil for about 1 minute, then set aside for 5 minutes to cool slightly.
  • Add the honey mixture to the oats (they'll both probably still be hot, but that's fine!) Mix together until combined.
  • Add your chocolate chips to the oat mixture, and stir to evenly distribute. Some of the chocolate chips will melt, but that's normal!
  • Pour the oat mixture into your parchment lined square pan. Using a spoon, cup, or your hands, press the mixture into the pan until packed together. Sprinkle more chocolate chips on top, and gently press into the oat mixture.
  • Chill the oat bar mix in the fridge for 1 hour, or until firm enough to slice. Slice and serve!
