Do you pass up cereal when you can have coffee cake? Go bananas with a coffee cake that's filled and topped with crunchy cereal.

2 cups Wheat Chex™ or Multi-Bran Chex™ cereal
1 cup orange juice
1/4 cup vegetable oil
2 small bananas, thinly sliced
1 egg
1 1/2 cups Gold Medal™ all-purpose flour
3/4 cup sugar
1/2 cup raisins, if desired
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup Wheat Chex™ or Multi-Bran Chex™ cereal
1/2 cup packed brown sugar
1/2 cup chopped nuts
1/4 cup Gold Medal™ all-purpose flour
2 tablespoons butter or margarine, softened
1/2 teaspoon ground cinnamon

Steps:

Heat oven to 350°F. Spray with cooking spray or grease 8-inch square pan. In large bowl, stir together 2 cups cereal and the orange juice; let stand about 2 minutes or until cereal is soft. Stir in oil, bananas and egg. Stir in flour, sugar, raisins, baking soda, cinnamon and salt. Spread in pan.
Bake about 45 minutes or until top springs back when touched lightly in center. Meanwhile, coarsely crush 1/2 cup cereal. Mix with remaining streusel topping ingredients until crumbly; sprinkle evenly over warm cake.
Set oven control to broil. Broil cake with top about 5 inches from heat about 1 minute or until bubbly. (Watch carefully to avoid burning.) Serve warm.

2 cups Cinnamon Chex™ cereal
2 cups Wheat Chex™ cereal
2 cups Banana Nut Cheerios™ cereal
½ cup walnuts
¼ cup butter or margarine
¼ cup packed brown sugar
2 tablespoons corn syrup
1 teaspoon vanilla
½ teaspoon ground cinnamon
2 ounces freeze-dried bananas with cinnamon

Steps:

In large microwavable bowl, measure cereals and walnuts; set aside.
In 2-cup microwavable measuring cup, microwave butter until melted, about 30 seconds. Stir in brown sugar and corn syrup; microwave 30 seconds longer or until mixture is boiling. Stir in vanilla and cinnamon. Pour over cereals, stirring until evenly coated.
Microwave uncovered on High about 3 minutes, stirring every minute, until mixture is glazed. Stir in dried bananas. Spread on waxed paper to cool. Store in airtight container.

I got this recipe from Chex.com. They suggest topping it with s struesel topping, but I think it is fine without it.

2 cups Wheat Chex or 2 cups multi-bran Chex cereal
1 cup orange juice
1/4 cup vegetable oil
1 egg
2 small bananas, thinly sliced
1 1/2 cups flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup raisins (optional)

Steps:

Grease square pan, 8x8x2 inches.
Stir together cereal and orange juice in large bowl.
let stand about 2 minutes or until cereal is soft.
Stir in oil, egg and bananas.
Stir in flour, sugar, raisins, baking soda, cinnamon and salt and then pour into pan.
Bake about 45 minutes at 350 until top springs back when touched lightly in center.

Ingredients

5 cups Chex cereal (I used Rice Chex, but Corn Chex would work great!)
10 ounces (5 squares) vanilla flavored Almond Bark
1 1/2 cups Funfetti cake mix
1/2 cup powdered sugar
1 teaspoon vegetable shortening

Steps:

Melt Almond Bark according to package directions, adding vegetable shortening to thin it out.
Pour the cereal into a large bowl and drizzle the melted Almond Bark over the cereal.
Mix gently with a large spoon or spatula. Dump the cake mix and powdered sugar onto the cereal and mix gently with large spoon until all the cereal is evenly coated.
Enjoy!
