From the 2/17/2004 edition of Woman's Day magazine. A quick and easy meal that I adapted to make even easier. It only has three ingredients! You can purchase the already thinly sliced chicken breast which makes this so easy. If you don't you will need to pound the chicken to about 1/4 inch thick or just a bit thinner.

1 1/4 lbs thinly sliced boneless skinless chicken breasts
4 ounces swiss cheese, sliced
1 lb asparagus, woody ends only cut into 2-3 inch pieces

Steps:

  • Heat oven to 350 degrees. Spray a baking dish with cooking spray.
  • Simmer asparagus pieces in hot water until tender, 5-7 minutes. Drain and rinse with cold water.
  • Lay out the thinly sliced pieces of chicken breast and season with salt and pepper.
  • Arrange slices of cheese to within 1/4 inch of the surface of the chicken.
  • Divide asparagus pieces among the chicken slices. Starting at the small end begin rolling up the chicken and securing each with several toothpicks.
  • Place in baking dish seam side up.
  • Bake for 25-30 minutes or until cooked through. Slice if desired.

1 pound thin-sliced, boneless, skinless chicken breasts
1/4 teaspoon salt
1/8 teaspoon pepper
1 small onion, chopped
3 tablespoons butter or margarine
1 clove garlic, minced
1/2 cup Kellogg's® All-Bran® Original cereal
1/4 cup chicken broth
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
1 teaspoon grated lime peel

Steps:

  • 1. Sprinkle chicken pieces with salt and pepper. Set aside.
  • 2. In large skillet cook onion in butter over medium heat about 3 minutes or until softened. Add garlic. Cook and stir for 1 minute more. Stir in Kellogg's® All-Bran® Original cereal, broth, lime juice, cilantro and lime peel.
  • 3. Spread cereal mixture on one side of each chicken piece. Tightly roll up. Place, seam side down, in 13 x 9 x 2-inch baking dish coated with cooking spray. Bake at 350 degrees F about 30 minutes or until chicken is no longer pink. For food safety, internal temperature of the chicken should reach at least 165 degrees F. Diagonally cut into thick slices. Arrange on serving plates.

4 whole chicken breasts, split, skinned, boned and pounded thin
1 pound fresh asparagus, trimmed
2 tablespoons all-purpose flour
1 garlic clove, minced
1 teaspoon salt, divided
1/2 teaspoon dried thyme, divided
1/4 teaspoon paprika
2 cups white onions, cut into 1/4-inch slices
3 large tomatoes, cut into 1/2-inch slices
1/2 cup chicken broth

Steps:

  • Season pounded chicken breasts lightly with salt and freshly ground pepper. Place 2-3 asparagus spears on each chicken breast half. Roll up tightly; secure with toothpicks, if necessary. Set aside. , Combine flour, garlic, 1/2 teaspoon salt, 1/4 teaspoon thyme and paprika. Roll chicken in this mixture. Place onions and tomatoes in a 13x9-in. baking dish, reserving 8 slices of each for top. Place chicken over vegetables; top with reserved onion and tomato slices. Combine broth with remaining salt and thyme; pour around chicken. Cover pan loosely with foil. Bake at 350° for 30 minutes, basting every 10 minutes. Uncover and bake until tender, about 10-15 minutes.

4 to 6 skinless, boneless chicken or capon breast halves, about 1 1/4 pounds
7 large shrimp, about 1 1/2 pounds
25 fresh coriander leaves
Salt to taste, if desired
4 thin slices lean salt pork, about 2 ounces
32 thin, julienne strips carrot, each about 2 inches long
32 thin, julienne strips hot green pepper
32 thin, julienne strips scallions or green onions
Oil for brushing the roulades
1/2 teaspoon coriander seeds
1/2 teaspoon caraway seeds
2 teaspoons finely minced garlic
1 tablespoon corn, peanut or vegetable oil
1/2 cup finely sliced shallots
1/4 cup light soy sauce
1/2 cup rich chicken broth
1/2 teaspoon dark brown sugar

Steps:

  • There are several ways that these roulades may be cooked. They may be broiled, charcoal-grilled or cooked in a skillet with a little oil. Preheat a broiler or charcoal grill or have a skillet ready.
  • Place the breast halves on a flat surface and cut off enough of the end pieces to make five ounces. Put the end pieces into the container of a food processor or electric blender and add the shrimp, coriander leaves and salt. Blend until it has the consistency of hamburger meat.
  • Meanwhile, put the salt pork slices in a small skillet and cook, turning the pieces often, until they are well browned and slightly crisp. Remove the slices from the skillet, and when they are cool enough to handle, cut them lengthwise into 32 thin, julienne strips.
  • Put the chicken breast halves on a flat surface and cut them on the diagonal into approximately 16 thin slices. Pound each slice until it is quite thin and almost transparent. Spoon an equal amount of the ground shrimp-and-chicken mixture into the center of each slice. Smear this filling evenly over each piece. Stack two pieces each of the salt pork, carrot, green pepper and green onion over the center of the filling. Roll each slice over neatly and tightly, like small sausages, to enclose the filling.
  • Arrange four of the filled chicken pieces close together and run two skewers parallel and crosswise through the centers to hold the groupings of four together. Brush each grouping on all sides with a little oil.
  • To prepare the sauce, grind together the coriander seeds, caraway seeds and garlic, preferably in a mortar and pestle or in a small spice mill or grinder.
  • Heat one tablespoon of oil in a small skillet and add the sliced shallots. Cook briefly, stirring, and add the ground spice mixture. Add the soy sauce, chicken broth and brown sugar and bring to the boil. Let simmer about five minutes.
  • Meanwhile, cook the skewered chicken roulades as desired - under the broiler, on a grill or in a skillet. Cook about four or five minutes or less on one side. Turn the roulades and cook about four or five minutes on the second side. Spoon the sauce over the roulades and serve.

4 boneless, skinless chicken breasts (6 to 8 ounces each)
Salt and pepper
2 tablespoons olive oil
1 tablespoon chopped garlic
1 cup grated Asiago or Parmesan cheese
2 beefsteak tomatoes, cut into 1/8-inch-thick slices (8 slices)
8 spears asparagus, trimmed, halved lengthwise, then crosswise

Steps:

  • Preheat oven to 375 degrees. Using a sharp knife, split each chicken breast in half horizontally, then pound between 2 pieces of plastic wrap until about 3/8 inch thick (you should have 8 flattened pieces). Season on both sides with salt and pepper.
  • Heat oil in a large skillet over medium-high heat. Working in batches, saute chicken breasts and garlic until chicken is light brown on one side only, about 2 minutes; discard garlic.
  • Transfer chicken to a baking sheet, browned side down. Sprinkle chicken pieces with half the cheese; layer each with a tomato slice and 4 asparagus pieces. Roll up; secure with a toothpick. Sprinkle remaining cheese over rolls; bake until chicken is cooked through, 15 to 20 minutes. Remove toothpicks. Serve hot.

1 teaspoon balsamic vinegar, or to taste

  • Heat the broth in a large skillet over medium-high heat. Season chicken with salt and pepper, and place in the skillet. Cook 15 minutes, until chicken is almost done.
  • Place asparagus, red peppers and garlic in skillet. Continue cooking 10 minutes, or until chicken juices run clear and asparagus is tender. Place tomatoes in skillet during last 2 minutes of cook time. Sprinkle with vinegar. Top with mozzarella cheese to serve.

1/2 cup flat-leaf parsley leaves, loosely packed
2 teaspoons dried thyme
Zest of 1 lemon
1/4 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground pepper, plus more to taste
3 large cloves garlic, minced
1/2 pound broccoli rabe
1/4 cup plus 3 tablespoons low-fat ricotta cheese
2 whole skinless and boneless chicken breasts
1/4 cup dry white wine
Olive-oil cooking spray

Steps:

  • Heat oven to 400 degrees with rack in center. Place parsley, thyme, lemon zest, salt, and pepper in a food processor. Process until finely chopped. Coat a small saute pan with cooking spray. Heat the pan to medium; saute garlic and broccoli rabe, until garlic is translucent and broccoli rabe has wilted. Season with salt and pepper. Add to food processor, and pulse to combine. Add the ricotta; process until combined. Set aside.
  • Place one of the chicken breasts between two layers of plastic wrap. Using a meat mallet, pound evenly until the breast is a scant 1/4 inch thick. Repeat with the remaining breasts. Spread 3 to 4 tablespoons of filling in an even layer on each breast. Roll up the breasts, and secure rolls with a wooden skewer or toothpick.
  • Coat a large skillet with a heatproof handle with cooking spray, and place over medium-high heat. Place chicken breasts in the skillet and cook, turning occasionally, until golden on all sides, about 3 minutes total. Place skillet in oven, and cook until an instant-read thermometer registers 165 degrees, about 13 minutes. Remove chicken from skillet, and set aside. Place skillet on top of stove over medium-high heat; add wine, and reduce liquid by half, about 1 minute, scraping skillet with a wooden spoon to dislodge any cooked-on bits. Strain liquid into a small pitcher. Cut rolled chicken crosswise into 1/4-inch-thick pieces. Serve warm with reserved sauce.
