- Preheat oven to 375°. In a large skillet, cook chicken and onion over medium-high heat 7-9 minutes or until chicken is no longer pink, breaking up meat into crumbles; drain. Stir in seasonings. Add spinach; cook and stir until liquid is evaporated. Transfer to a large bowl; cool slightly. Stir in beaten eggs and cheese., Layer 10 sheets of phyllo dough in a greased 13x9-in. baking dish, spritzing each with cooking spray. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Spread spinach mixture over phyllo. Top with remaining sheets of phyllo, spritzing each with cooking spray. Cut into 8 rectangles., Bake, uncovered, 35-40 minutes or until golden brown. If necessary, recut rectangles before serving.

CHICKEN SPINACH CASSEROLE WITH MUSHROOMS AND PHYLLO
Steps:
- Preheat the oven to 400 degrees F.
- Melt 1 tablespoon of the butter with the olive oil in a large nonstick skillet over medium-high heat, then add the onions. Cook, stirring, until just soft, about 4 minutes. Add the mushrooms and 1/2 teaspoon salt and continue stirring until softened, about 4 minutes. Gradually add the spinach and stir until completely wilted, about 2 minutes. Transfer to a large bowl and add the chicken; wipe the skillet clean.
- Whisk together the flour, broth, lemon juice and 1/2 teaspoon salt and add to the same skillet over medium-high heat. Whisk until the mixture is boiling and simmer until just thick, about 2 minutes. Add to the chicken mixture with 1/2 tablespoon of the rosemary, then transfer to a 2-quart baking dish.
- Melt the remaining 3 tablespoons butter and brush onto each phyllo sheet, layering one on top of the other. Gently place over the baking dish and crimp the sides to fit. Sprinkle with the remaining 1/2 tablespoon rosemary and bake until golden, 25 to 30 minutes. Let cool slightly before serving.

- Place chicken in a bowl and pour in enough Italian salad dressing to coat. Marinate in the refrigerator, 2 to 3 hours.
- Preheat oven to 375 degrees F (190 degrees C).
- Drain and discard marinade from chicken and season chicken with garlic powder and lemon pepper. Transfer seasoned chicken to a casserole dish. Layer spinach over chicken.
- Mix cream cheese, chives, olive oil, garlic, salt, and pepper together in a bowl. Slowly pour chicken broth into cream cheese mixture, stirring until mixture is smooth; pour over chicken and spinach. Cover casserole dish with aluminum foil.
- Bake in the preheated oven for 20 minutes. Remove foil and top chicken mixture with mozzarella cheese; cook until chicken is no longer pink in the center and cheese is melted, 15 to 20 minutes.

- Preheat oven to 450 degrees. In a medium bowl, combine bread with 1 tablespoon oil; season with salt. Set aside. In a medium pot, heat 1 1/2 teaspoons oil over medium-high. Add spinach; season with salt. Cook, stirring, until wilted, 2 minutes. Transfer to a colander, let cool, then squeeze out water. Coarsely chop.
- Wipe pot clean and heat 1 1/2 teaspoons oil over medium. Add onion, garlic; season with salt and pepper. Cook, stirring occasionally, until onion is soft, about 8 minutes.
- Add wine to pot and cook until almost evaporated, about 5 minutes. Add flour and cook, stirring, 30 seconds. Gradually whisk in half-and-half. Add lemon juice and bring mixture to a boil over high.
- Remove from heat and stir in chopped spinach and chicken; season with salt and pepper. Transfer to a 2-quart baking dish and top with bread pieces. Bake until bread is golden brown and mixture is bubbling, 8 to 10 minutes.

- Preheat oven to 375°. Brush sides and bottom of a 13x9-in. baking dish with some of the melted butter. Place one sheet of phyllo in bottom of dish; lightly brush with butter. Repeat with five more sheets of phyllo. Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out. , In a large bowl, combine the chicken, bacon, broccoli and cheese; spread evenly over phyllo in baking dish. - Preheat oven to 375 degrees. Coat a 3 quart rectangular baking dish with cooking spray.
- In an extra-large skillet, heat butter over high heat until melted. Add ground chicken and onion; cook about 8 minutes or until chicken is browned and onion is tender, breaking up chicken as it cooks. Drain off fat. Stir in spinach, 1 teaspoons freshly ground black pepper, 1/2 teaspoons salt, the nutmeg and crushed red pepper; cook and stir for 5 minutes. Transfer mixture to a bowl. Stir in eggs, cheese, and oregano.
- Unfold phyllo dough. Cut a 1" strip off one of the short ends of the phyllo stack; discard. Place a phyllo sheet in the bottom of the prepared baking dish; lightly coat with cooking spray. As you work, cover the remaining phyllo with plastic wrap to prevent it from drying out. Top with seven more phyllo sheets, coating each sheet with cooking spray. GREEK SPINACH CHICKEN CASSEROLE IN PHYLLO
Even if you don't like Greek food you will adore this melt in your mouth dish. The flavors mingle so well and the phyllo is light, crisp and buttery! It is rich and light at the same time and is sure to be a favorite with your family! Note: Cook time does not include pre-cooking chicken.

- Preheat oven to 375 degrees.
- In large mixing bowl, combine spinach, shredded chicken, garlic, parsley, mayo, and milk.
- Layer this mixture evenly in 9x9" glass dish.
- Sprinkle mozzarella evely over top.
- Tear phyllo into pieces about the size of the palm of your hand and layer over cheese.
- Pour melted butter over phyllo and cover dish with foil and bake 30 minutes covered; try not to let foil rest on phyllo, but create a little "tent".
- After 30 minutes, remove foil and sprinkle with parmesan.
- Broil for 5-10 minutes until phyllo is golden and crisp.
- Serve with green salad and fresh rolls!

- Pre-heat your oven to 375 degrees. Lightly mist a 9x13 baking dish with cooking spray and set aside.
- Mist a large saute pan or walled skillet with cooking spray and bring to medium-high heat. Add the chicken and onions and cook for 7-10 minutes, breaking up the chicken into bite-sized pieces with a wooden spoon or spatula, until the chicken is cooked through and the onions are softened. Drain if liquid is present. Add the pepper, oregano, salt, nutmeg, red pepper flakes and garlic and stir to combine. Cook for another minute until fragrant. Add the spinach and stir until well combined. Cook for a few additional minutes (if the spinach produces liquid allow it to evaporate) and then transfer to a large mixing bowl. Allow to cool a bit for 8- 10 minutes. Add the beaten eggs, feta and mozzarella cheese and stir together until well combined.
- Remove the defrosted phyllo sheets from packaging and place them under a layer of plastic wrap covered by a damp towel to prevent drying. Take out one sheet at a time (a total of 8 sheets) and lay it in the bottom of the prepared baking dish, misting the entire sheet with cooking spray before adding the next sheet until you have a stack of 8 sheets layered in the bottom of the dish. Mist the top phyllo layer and then top with the spinach/chicken mixture. Spread the mixture evenly across the phyllo in the baking dish. Top with another 8 sheets of phyllo dough, misting each layer with cooking spray in between and top with a final mist of cooking spray. Cut the casserole into 8 servings (if you try to do this after baking it will be very messy/flaky).
