With pasta salad, it's easy to change up ingredients. We like to add grilled chicken and pine nuts, and sometimes we substitute black beans for the garbanzo beans. -Julie Kirkpatrick, Billings, Montana

2 cups uncooked multigrain bow tie pasta
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
6 cups fresh baby spinach (about 6 ounces)
2 cups fresh broccoli florets
2 plum tomatoes, chopped
1 medium sweet red pepper, chopped
1/2 cup cubed part-skim mozzarella cheese
1/2 cup pitted Greek olives, halved
1/4 cup minced fresh basil
1/3 cup reduced-fat sun-dried tomato salad dressing
1/4 teaspoon salt
1/4 cup chopped walnuts, toasted

Steps:

  • Cook pasta according to the package directions. Drain; transfer to a large bowl., Add beans, vegetables, cheese, olives and basil to pasta. Drizzle with dressing and sprinkle with salt; toss to coat. Sprinkle with walnuts.

16 ounces bow tie pasta
1 lb chicken breast, cut into bite-sized pieces
3 tablespoons olive oil
1 small onion, chopped
1 cup chopped red pepper
2 garlic cloves, minced
1 teaspoon salt
pepper, to taste
1 cup chicken broth
1/2 lb spinach, rinsed and chopped
1/4 cup freshly grated parmesan cheese
2 tablespoons chopped parsley

Steps:

  • Boil the pasta until done.
  • Meanwhile, cook the chicken in oil over medium-high heat.
  • Add the onion, red pepper, garlic, salt, and pepper with the chicken.
  • Continue to cook and stir 5-7 minutes until chicken is almost cooked through.
  • Add the broth and spinach then cook until spinach is wilted and chicken is done.
  • Combine chicken mixture with hot drained pasta and toss well.
  • Top with cheese and parsley then serve.

A very attractive and colorful salad, originally presented on the local television news by Marge Tuckett, but changed up just a bit by me. This tasty salad requires two hours marinating time.

12 ounces bow tie pasta (farfelle)
2 cups cubed cooked chicken
1 bunch Baby Spinach
6 ounces honey roasted peanuts
1 bunch scallion, thinly sliced
3 (11 ounce) cans mandarin oranges, drained
6 ounces craisins
1/4 cup sesame seeds, lightly toasted
1 cup grated parmesan cheese
1 cup green grape, cut in half
2/3 cup rice vinegar
1/4 cup sugar
2/3 cup teriyaki sauce
1 cup canola oil

Steps:

  • Cook pasta according to package directions; drain.
  • Combine dressing ingredients; blend or shake well to emulsify, then stir half of the prepared dressing into the cooked bow tie pasta; marinate in the refrigerator for at least two hours.
  • When ready to serve, add remaining ingredients and as much of the second half of the salad dressing (we used 2/3s of the remaining dressing) as you like; salt and pepper to taste. Toss and enjoy!

A zippy dressing lightly coats the tossed mixture of pasta, chicken, tomato and onion.

8 ounces uncooked bow tie pasta
1 can (4 ounces) chopped green chilies, drained
3 tablespoons lime juice
3 tablespoons canola oil
2 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon sugar
1/2 teaspoon hot pepper sauce
2 cups cubed cooked chicken breast
2 large tomatoes, chopped
1/3 cup chopped red onion
3 tablespoons minced fresh cilantro

Steps:

  • Cook pasta according to package directions; rinse with cold water and drain. Cool completely. For dressing, combine the chilies, lime juice, oil, garlic, cumin, sugar and hot pepper sauce in a small bowl; stir well. , In a large bowl, combine the pasta, chicken, tomatoes, onion and cilantro. Add dressing and toss gently to coat. Cover and refrigerate overnight.

1 (16 ounce) package Farfalle pasta
2 cups broccoli florets
3 boneless skinless chicken breasts (cooked and cubed)
1 cup cherry tomatoes (halved)
1 green bell pepper (diced)
4 ounces Colby Jack cheese (cubed)
1 (2.25 ounce) can sliced olives (drained)
1 (16 ounce) bottle Italian dressing
1 cup grated Parmesan cheese

Steps:

  • Cook pasta as directed on package, adding broccoli to the cooking water for the last 2 minutes; drain.
  • Toss chicken pieces, tomatoes, pepper, cheese, olives and dressing together in a large bowl.
  • Add pasta and broccoli, toss lightly.
  • Sprinkle with Parmesan cheese and serve.

This is my rendition of a yummy salad I tried at the local supermarket deli....I don't usually measure stuff unless I HAVE to...That's the way I cook. lol , hope you like it

4 large skinless/boneless chicken breats
1 package(s) bowtie pasta
1 bunch(es) fresh spinach
- salt and pepper to taste
1 tablespoon(s) paprika* optional
1 1/2 cup(s) shredded parmasean cheese
1 1/2 quart(s) water
3 dash(es) olive oil
1 bottle(s) creamy ceaser dressing (whatever brand you like)

Steps:

  • Rinse & Cut chicken breasts into small peices and season with salt, pepper and paprika...(you don't have to follow my measurements, use your best judgement...)
  • add olive oil to skillet , heat on medium
  • cook chicken thoroughly ...cover so it cooks faster and stays juicy, then uncover last 10 min, let cool, pat excess oil off, set aside
  • rinse and chop spinach, set aside
  • bring water to boil in a 2 quart pot, add package of pasta, *usually the pasta package has directions on how to cook it...
  • add few pinches of salt , and a few dashes of olive oil
  • boil for 7 min uncovered or until tender. (al dente)
  • strain the pasta and add the bottle of creamy ceaser dressing.....
  • mix in spinach and chicken, add the Parmasean Cheese then toss salad and serve... (I like to chill it and have a nice cold pasta salad)
