"This is a great no-guilt recipe. I sometimes substitute ground turkey," explains Rachel Riccomini of Saint Marys, Kansas. "To make it even lighter, omit the rolls and use the burgers to top a salad!"

1/4 cup finely chopped onion
2 tablespoons shredded Parmesan cheese, divided
1 tablespoon lemon juice
1-1/2 teaspoons dried parsley flakes
1 garlic clove, minced
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 pound ground chicken
2 hamburger buns, split
1/4 cup torn romaine
4 teaspoons fat-free creamy Caesar salad dressing

Steps:

  • In a small bowl, combine the onion, 1 tablespoon cheese, lemon juice, parsley, garlic, Worcestershire sauce, salt and pepper. Crumble chicken over mixture and mix well. Shape into two patties., Grill burgers, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear. Sprinkle with remaining cheese. , Serve on buns with romaine and salad dressing.

This recipe was handed down to me. We love this recipe because its quick and easy to make. It turn a rather dull chicken burger into something zesty and fun.

Number Of Ingredients 13

1 lb ground chicken breast
4 garlic cloves, finely ground
2 cups parmigiana reggiano shredded cheese
2 teaspoons sea salt
1 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 bunch fresh parsley, chopped
5 tablespoons lemon juice
4 tablespoons extra virgin olive oil
4 rolls, cursty rolls, its better to get the kind you bake
2 -3 tablespoons Dijon mustard
1 romaine lettuce (or some sort of salad mix)
2 plum tomatoes

Steps:

  • Preparation of Burgers
  • 1. In a bowl combine:
  • ground chicken
  • 2 cloves of chopped garlic,.
  • 1 cup of Parmigiano-Reggiano shredded cheese.
  • 1 tsp of salt
  • 1 tsp of pepper.
  • 1 tbl Worcestershire sacue.
  • 1 tbl chopped parsley.
  • 1 tbl lemon juice.
  • 2. Mix together and form 3 oval burgers.
  • 3. Heat frying pan and place extra virgin olive oil in pan.
  • 4. Cook chicken patties about 7 minutes each side. Then cover and cook for around 5 minutes to make sure inside of burger is cooked.
  • Preparation of Roll:.
  • 1. cook rolls as per directions on the bag.
  • 2. once rolls cool somewhat slice in half.
  • 3. drizzle olive oil on rolls
  • 4. spread the some minced garlic on each rool.
  • 5. Sprinkle a handful of Parmigiano-Reggiano shredded cheese over the rolls.
  • 6. Broil for a short while to brown the bread
  • Preparation of salad topping:.
  • 1. In a bowl combine: Dijion, lemon juice, and 3Tbl of olive oil. Sprinke with sea salt and pepper.
  • 2. Mix in salad mix.
  • Putting it all all together:.
  • 1. Put chicken burger on roll.
  • 2. Place salad mixture and slice of tomato on top of burger.
  • 3. Sprinkle extra sauce if desired.

4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
4 slices red onion
2 tablespoons butter, softened
4 hamburger buns, split
2 cups torn romaine
1 tablespoon grated Parmesan cheese
1/2 cup creamy Caesar salad dressing, divided

Steps:

  • Sprinkle chicken with salt and pepper. Grill on an indoor grill coated with cooking spray until juices run clear, 4-5 minutes. Grill onion slices until tender, 4-5 minutes., Meanwhile, spread butter over cut sides of buns. Place buttered side up on an ungreased baking sheet. Broil 3-4 in. from the heat until golden brown, about 1 minute. , Toss romaine with cheese and 1/4 cup dressing; spoon onto bun bottoms. Top with onions, chicken and remaining dressing. Replace bun tops.

Natasha is my eldest daughter, and her eyes light up when I announce we're having these for dinner. While my husband and I eat 1 or 2 each, she easily finishes at least 3! The onion can be finely chopped, but with three kids, we prefer grating it so as to hide it. I usually serve these with mashed potatoes and Caesar salad for a very comforting meal! Extra-lean ground chicken can be substituted with ground turkey with great results.

1 pound extra-lean ground chicken
½ cup Italian-seasoned bread crumbs, divided
½ small onion, finely grated
1 egg
2 cloves garlic, minced
salt and ground black pepper to taste
2 teaspoons olive oil

Steps:

  • Mix ground chicken, 1/4 cup bread crumbs, onion, egg, garlic, salt, and black pepper in a bowl. Moisten hands and shape chicken mixture, 2 tablespoons at a time, into flat, oval-shaped patties.
  • Spread remaining 1/4 cup bread crumbs into a shallow dish. Roll patties in bread crumbs to coat.
  • Heat olive oil in a large skillet over medium-high heat.
  • Cook patties in hot oil until deep brown in color on the bottom, 5 to 6 minutes. Turn patties and cook until other side is browned, 3 to 4 minutes more.

  • Meanwhile, make the sauce: In a small bowl combine all the ingredients for the sauce. Stir in ½ teaspoon fresh cracked pepper and a pinch of salt. Cover and refrigerate for at least 1 hour, or overnight for best results.
  • Cook the burgers: Brush both sides of each patty lightly with oil. Heat a large nonstick skillet, grill or grill pan over medium to medium-high heat*. Add patties and cover skillet with a lid, or close grill top. Cook, flipping once halfway through cooking, for 8-10 minutes, or until an internal temperature of 165 degrees F is reached.
  • To serve: Place the patties on the bottom bun and top with desired accoutrements. Slather the top bun with parmesan peppercorn sauce and place burger tops (sauce side down) on burgers. Enjoy!
